Apple Pork Ribs Soup / Mulled Cider / Nabeyaki Udon + Three Mushroom Vegetarian Nabeyaki Udon

Blog Post & Recipe: Apple Pork Ribs Soup 苹果猪骨汤

The flavour of this soup really depends on what type or how big the apples are. The original recipe calls for 4 apples but I used 3 instead as the apples I used were quite large and I was afraid that the soup would be too sweet. So remember to adjust accordingly to your taste.

Blog Post & Recipe: How to make mulled cider

The basic idea of making any mulled drink is to warm the liquor gently with spices. Which spices to use is up to you – nutmeg, star anise and vanilla can be used, though we're going to stick with tradition and use just cloves and cinnamon. Sugar or honey can be added to taste but because of the unusual addition of the very sweet sloe gin in this recipe, you probably won't need it.

Blog Post & Recipe: Nabeyaki Udon and Three Mushroom Vegetarian Nabeyaki Udon

So find some loved ones and get yourself into the kitchen to make some nabeyaki udon. This udon has the thick chewy udon noodles and vegetables of the regular nabeyaki udon, but is made with a mushroom stock base. Plus it sports three varieties of mushrooms—shiitake, king trumpet, and enoki mushrooms and cubes of sauteed tofu. If you can’t find some of the mushrooms, substitute your favorites!

Iced Coffee Pops / Apple Tarragon Granita / Smoothie Bag

Blog Post & Recipe: Iced Coffee Pops

Mix the coffee with the sweetened condensed milk. Add tablespoon of cocoa powder and adjust to taste

Blog Post & Recipe: Apple Tarragon Granita

In an 8 inch square dish, combine all ingredients until sugar is dissolved. Freeze 1-2 hours and stir with a fork. Freeze 2-3 hours longer, stirring with a fork occasionally. (Once it is mostly frozen it's more like fluffing with a fork than stirring.) Stir with a fork before serving.

Blog Post: {The Basics} Smoothie Bag

Then when it comes to buying fresh fruit...there are plenty of times when it doesn't get eaten fast enough and it's a waste not to use it. That's where the smoothie bag came into play. Any fruit that reaches the still good, but too bruised or soft stage, it gets cut up to freeze. I lay the frozen pieces out on a plastic wrap lined sheet pan and freeze them until hard.

Multiple Porridges / Brown Butter Apple Skillet / Goat Meat with Okra

Blog Post & Recipe: Banjo / pottery / knot / apple

There's something naughty about an apple pie without a crust. It feels like cheating.

Brown Butter Apple Skillet

Blog Post & Recipe: Korma Curry Recipe: Goat Meat with Okra

To certain people, goat meat can have a strong taste, but I find that the meat at my local Indian market tastes wonderful and is very tender. Okra has a bad reputation as well due to its texture once boiled. I personally love this dish and could eat it by the pound, dipping rotis (Indian flat bread) in the spicy gravy sauce.

Sweet Potato, Apple & Lentil Soup / Spanish Lentil & Butternut Pumpkin Stew with Roast Garlic / Sautéed Fermented Soybean Waste with Black Nightshade

Blog Post & Recipe: Sweet Potato, Apple and Lentil Soup

The combination of sweet potatoes and apples is a natural, and using tart apples helps to ensure that the soup isn’t cloyingly sweet. Lentils add a a subtle yet mysterious heartiness.

Blog Post & Recipe: Spanish Lentil and Squash Stew with Roasted Garlic

This is a lovely, hearty stew that is both savoury but still slightly sweet. Lentils fill the stew as its base, and the butternut squash and red peppers add colour and sweetness. A head of roasted garlic brings a mellow sweetness as well. The peppers are both boiled and pan-fried for a contrast in flavour and texture (but I feel like this step could be skipped if you are pressed for time).

Blog Post & Recipe: WHB #278: Tumis Oncom dan Leunca (Sautéed Fermented Soybean Waste with Black Nightshade)

Most Indonesian cooking books written in English referred oncom as fermented soybean waste.

Indeed it considered to be closely related to tempeh (fermented soybean). But instead of soybean, oncom is actually made from natural by-products of other foods. For example, soy bean tailings from bean curd making, peanut presscake from peanut oil making, cassava tailings from the starch extraction or coconut presscake remnants after the milk squeezed out. These wastes are then fermented using molds.

Hot Cross Buns / Apple & Fennel Salad / 4 Recipes from the New York Times

Blog Post & Recipe: How to cook perfect hot cross buns

Hot cross buns are a festive food, rather than a common or garden breadstuff, and they deserve to be treated as such. A rich, golden dough, heavy with spice and sweet with dried fruits and sugar

The fennel is so crunchy and refreshing (I can’t believe I ever gagged eating this stuff – I was crazy, I tell you!) and the slightly tart apples shaved paper thin feel like they’ve meat to be paired with the fennel slices. Also the dill: I know being Russian, I’m a little dill-crazy, but I really think dill and fennel were meant to be together

Do you know what a dutch baby is? Sometimes they’re called German pancakes, or Bismarks, but basically they’re a giant puffy, slightly less sweet pancake that’s baked in the oven rather than fried.

Article & Recipes: Gateway vegetable dishes for the meat lover

For his resolution to have a real shot, we'd need a couple of gateway dishes - meatless ones that masqueraded as meaty ones. They'd also have to be fast and easy to make. We settled on two: Mushroom bourguignon, a riff on the traditional beef dish made with pearl onions, carrots, wine and beef stock; and barley risotto ... We'd also use vegetable purees - onion to thicken the bourguignon sauce, and carrot to bind together the risotto.

Water for Dough & Peasant Bread / Baked Apples / Chard & White Bean Stew

Article & Recipe: 52 Loaves

It’s true; I’d just read that bread must be made with spring water, for chlorine and other impurities found in municipal water inhibit yeast activity.

You could also add chopped pieces of your favourite dried fruits to the stuffing, from apricots to prunes, making this the tastiest way to use up all the bits and bobs at the back of the kitchen cupboard.

Blog Post & Recipe: chard and white bean stew

I know that unless you are a tomato and white bean junkie, as I am, the prospect of a bowl of sloshy stew built on their foundation doesn’t sound very appealing. But what transforms it, I’d argue, is the presentation. I like to place a thick slice of well-toasted, garlic-rubbed bread underneath, ladle the stew over it and finish it with a softly poached egg.

Stuffed Sheep's Hearts / Apfelschmalz / Fennel & Anchovy Tart

Recipe: Stuffed sheep's hearts - Fyllt hjörtu

Chop up the prunes and stuff the hearts with them. Sew closed.

Blog Post & Recipe: Apfelschmalz - a typical German bread spread

Apfelschmalz (if you like to translate it: apple lard) is one of those typical and rustic bread spreads you will have for what is called 'Brotzeit', which is a snack with a rustic bread and often beer.

Recipe: Dan Lepard's fennel and anchovy tart recipe

The Italian 00 flour gives a more tender crust than regular bread flour. Strong white flour can be used instead, but you'll need a dash more water and you won't have that same mellow texture when you bite into it.

Vanilla Bean German Pancakes with Walnut Baked Apples / Roast Chicken Provençal / Perut Ikan

Recipe: Vanilla Bean German Pancakes with Walnut Baked Apples

Maybe the effort put forth in this recipe is all for nothing -typical results could come from 1 tsp. of vanilla extract? I don't know.

Blog Post & Recipe: roast chicken provençal

Our first try is perhaps not quite Perfect, but certainly tasted excellent, on top of being simple to make, and filling the cool Sunday evening air with the resinous perfume of roasting rosemary, thyme, marjoram, fennel, and lavender. Chicken, lemon, garlic and herbs. How easy is that?

Blog Post & Recipe: Perut Ikan (Nyonya Stewed Fish Stomach with Vegetables)

It’s a very tedious dish to make but the taste structure is so deep and complex.

Turkey Stuffing & Gravy Tips / Baste or Not? / Apfelstrudel

Blog Post & Video: Video: Turkey, Stuffing, and Gravy Tips from Anthony Bourdain

The key to moist turkey, according to Bourdain, is removing its legs ("dismembering a turkey is much like dismembering a human, actually...") and cooking them in a separate roasting pan from the breast.

Blog Post: The Perfect Turkey: Do You Need to Baste?

Dribbling hot pan juices over a roasting bird has always been one of the quintessential images of Thanksgiving. But in recent years, we've noticed some recipes for roast turkey are leaving this step out. That makes us wonder how necessary basting really is.

Article & Recipes: Nigel Slater's easy-to-make apfelstrudel

n Germany and Austria I have been offered cream, custard and ice cream with my hot strudel. It's a hard decision to have to make. I generally take it without any accompaniment then regret it
