Sweet Potato Hash with Sausage & Eggs / Eggless Pear Pancake / Finnish Pancakes

Blog Post & recipe: Brunch Recipe: Sweet Potato Hash with Sausage & Eggs

Savory, garlicky sweet potato hash, roasted with sausage and rosemary, and baked the next day with eggs on top.

Blog Post & Recipe: Eggless Pear Pancake

Mix together the dry ingredients. Add in about 3/4 Cup milk and gently stir. Add the grated pear and mix well.

Blog Post & Recipe: Finnish Pancakes

I can either poach 12 eggs and make a Hollandaise sauce with home fries or I can just make this quick Finnish-style pancake, bake it for 25 minutes and serve it all at once. These pancakes are so delicious. They are thin and the texture is like a baked custard.

Eggnog / Poached Pears with Warm Chocolate Sauce / Brussels Sprouts & Grapes

Blog Post & Recipe: Homemade Eggnog

Every season I try to find an excuse to make a version of my grandmother’s simple eggnog recipe. This weekend, we had a small gathering to let kids run amuck and I treated myself and the other parents to the following variation

Blog Post & Recipe: To poach a pear

As poached pear recipes go, this one could be called plain: just pears, water, brown sugar (or golden caster sugar, if you have it), a vanilla bean, and lemon juice. But what I like about it is that you wind up with a poached pear that tastes intensely of pear. The end.

Blog Post & Recipe: Brussels Sprouts and Grapes: A Counterintuitive Holiday Recipe

Brussels sprouts and grapes? the host repeated, incredulous.

Yes, I said. It’s sweet and savory; the grapes release their delicious sugars as they cook, which in turn caramelize the sprouts. You can eat it hot, cold, or at room temperature. You can add anything to it, within reason: toasted walnuts, pine nuts, spicy pepitas, lardons, whole garlic cloves, fresh thyme or rosemary, sea salt. Or nothing at all, which is generally how I like it.

Jugged Hare / Fennel & Pear Soup / Black Pudding Profiteroles

Blog Post & Recipe: Jugged Hare

The recipe kicks off asking for a mixture of flour, mace, cloves and allspice to roll the chunks of rabbit in before frying.

Blog Post & Recipe: Good warm, even better cold - Fennel and Pear Soup

I was standing with a fennel bulb in my hand when I saw a very ripe pear on the table and somehow my mind connected with the two and there was one - the vision of a fennel and pear soup.

Blog Post & Recipe: Black Pudding Profiteroles

Remember the Chorizo Choux Puffs? When I published the recipe on my Estonian site, then one of the readers, Ilse, suggested using our Christmas favourite, finely chopped black pudding instead of chorizo. I liked the sound of that, so nicked the idea, adding a spoonful of roasted onion flakes for an extra depth of flavour.

Blog Post & Recipe: Fresh Veggie Summer Rolls with Shiso and Thai Basil

In order to make summer rolls, though, you must have at least two essential ingredients: rice wrappers, and mung bean starch noodles ... You basically make like a burrito.

Blog Post & Recipe: Buckwheat filled mushrooms

I love the crunchy buckwheat and I rather under-cook it just a little than let it go all mushy and porridge-like. Pared with rosemary (a little garlic and lemon zest too , if you wish) and tiny bit of cheese they are such a simple thing to enjoy.

Roasted Pears with Goat Cheese & Pine Nuts / Raw Overnight Oats / Store Porridge in Jars /

Blog Post & Recipe: Roasted pears with goat cheese & pine nuts

I loved this dish, because I love pears and I am fond of goat cheese!

Blog Post & Recipe: (Raw!) Overnight Oats

Raw oats are equally fabulous as the cooked kind. They’re a different creature to be sure, but if you like your oatmeal on the chewy side you are in gold territory here.

Blog Post & Recipe: Oatmeal in Jars: Make a Week of Breakfast in 5 Minutes

With a little forethought and a few Mason jars, you can make enough steel-cut oats for a whole week in just 5 minutes. The result? Monday through Friday, you have a jar of wholesome oatmeal all ready to go. Pop it in the microwave at work and breakfast is served!

Concept: jar porridge.

Missi Roti / Rogan Josh / 10 Quesadillas

Blog Post & Recipe: Garam Masala Tuesdays: Missi Roti [via]

Naan takes the cake among foreigners but try this unleavened Indian flat bread made on a hot iron plate (tawa) from whole grain wheat and legume (chickpea) and you might change your likes. Plus, for the health nuts, its more nutritious than traditional Naan as gram flour is high in protein and iron.

Blog Post & Recipe: Rogan josh, or, Kashmiri lamb curry — a sinfully delicious blend of very fragrant spices and flavors

Traditionally the dish is prepared in ghee, Indian clarified butter, with the spices fried in fat to awaken flavors and infuse the fat with the essence before adding other ingredients. Yogurt, the foundation of the sauce, gives a lovely tang together with the tomato. Almond adds texture, flavor and also thickens the sauce.

100 Cooking Tips / 3 Recipes with Bread Crumbs / 3 Pear Recipes

Article: 100 Greatest Cooking Tips (of all time!) [via]

Food Network Magazine asked top chefs across the country for their best advice.

Article & Recipes: The California Cook: Mighty, mighty bread crumbs

But what I'd never really realized was the true potential of bread crumbs, how instead of being bland character actors toiling in the background, they can actually become the stars of a dish, or at least a very impressive second lead.

Grilled romaine with radishes, hard-boiled eggs and toasted bread crumbs ... Spaghetti with arugula and garlic bread crumbs ... Swiss chard with golden raisins and lemon bread crumbs

Article & Recipes: Perfect pears

To test to see if a pear is ripe, all you need to do is press the neck of the pear and if it gives a little it is ripe. If it is hard as a rock it needs a bit of time. Pears are rich in fibre and vitamin C – most of this is in the skin, so make sure you are eating some pears in the raw and in their skins to get the maximum nutritional value from them.

PEAR CHUTNEY ... PEAR AND PECORINO SALAD ... POACHED PEARS

Concept: bread crumbs

Fig & Pear Semi-Freddo / Stuffed Chard with Bulgur & Cheese / Rhubarb & Quinoa Breakfast Bowl

Blog Post & Recipe: homemade fig and pear semi-freddo

Semi-freddo is a lovely way to get the idea of ice-cream without all the bother, fluster and equipment needed to produce it.

Blog Post & Recipe: Stuffed Chard with Bulgur and Cheese / Lorlu Pazı Sarma

The recipe is from Sahrap Soysal, a popular Turkish chef, food connoisseur and writer, whose book Bir Yemek Masalı won several Gourmand Awards in 2004 in Spain, including "Best Local Cookery Book in the World."

Blog Post & Recipe: Easy rhubarb and quinoa breakfast bowl

Give the rhubarb a quick wash and cut off any leaves, plus an inch or so of stem from either end. Chop the rhubarb into inch long segments and place in a ceramic bowl. Add a splash of water or a squeeze of orange juice and a scant tablespoon of honey ...

Miso / How to Press Tofu / Pear Kimchi & Pear Kimchi & Blue Cheese Salad

Blog Post & Recipe: miso (the same blogger has posts for "miso-cured hen eggs," "miso-cured quail eggs," "miso-cured oyster," "miso-cured kombu," "tekka miso," and "miso adaptations")

Miso is surprisingly easy to make. The hardest parts are: waiting six months to over a year for the fermentation process to complete, and procuring the koji.

Blog Post: How to Press Tofu

Pressing tofu takes out the water in it and makes it firm. Pressed tofu becomes wonderfully dense and pleasantly chewy when cooked ... So how exactly do you press tofu?

Blog Post & Recipe: Pear Kimchi (followed by Pear Kimchi and Blue Cheese Salad)

Where the cabbage kimchi recipe calls for letting the kimchi sit out a room temperature for a few days to kick start the fermentation process I only let this pear kimchi sit for a half a day let the flavours come out and then I chilled it before serving it.

Sourdough Croissants / Cook Rice in a Frying Pan / Vegemite Beef & Ale Pie, Cider Roasted Pork with Stuffing, Chocolate Amaretto Pear Frangipane Tart

Blog Post & Recipe: Sourdough Croissant Recipe from Floriole, Chicago

In addition to proper technique, the use of premium European butter with higher fat content is key.

Blog Post & Recipe: How to cook perfect rice - in a frying pan

Note that the recipe/method here is for Japanese-style white rice. It should work with other white rice types too, but you may need to adjust the water amounts.

Blog Post & Recipes: Rustic Vegemite Beef & Aussie Ale Pie, Cider Roasted Pork Tenderloin with Apple, Prune & Pine Nut Stuffing, Chocolate Amaretto Pear Frangipane Tart

I combined the beef in a pie with a beautiful, recently sampled Aussie Ale - from Port Stephen's Winery, Swiss brown mushrooms and a teaspoon of Vegemite to add the salty element.

Three Slow Cooking Recipes / Grilled Cheese & Apple Sandwich / Vegetarian Phở

Article & Recipes: Yotam Ottolenghi's slow cooking recipes

Ingredients that can withstand an age in the oven transform into the most moist, aromatic food imaginable.

Pear tatin ... Oxtail with everything ... Pork shoulder with citrus, maple and pomegranate sauce

Blog Post & Recipe: grilled cheese + apple sandwich

There’s nothing to it, simply slice some good, sharp cheddar cheese, a nice juicy, apple (I like Fuji), butter some tasty wheat bread and you’re on your way to old-fashioned goodness.

Blog Post & Recipe: Vegetarian Phở (Vietnamese Noodle Soup)

In the interest of making vegetarian phở at home, I consulted my mother, who recalled her experience living in a Vietnamese Buddhist community that made meat-free phở broth with a medley of spices, ginger, and lots of carrots. This recipe is my interpretation.

Roasted Fennel and Shallot Salad / Pizza Provençal / Melting Pears

Moist enough not to need a dressing but a mustardy one would be good if you felt the need.

Recipe: PIZZA PROVENÇAL

Cooking the ingredients separately before adding them to the pizza allows for a unique layering of flavors

Recipe: Melting Pears

Cut the top part of each pear (like lids) and carefully remove hard part with seeds. Fill the holes with Gorgonzola.

Nigel Slater rounds off his series of veg-inspired videos with a tribute to tomatoes [because he's got a new cookbook coming out. Here are ten recipes from the book.]

Blog Post & Recipe: Pandora’s Chai-Poached Pears

The pears are filled with an intoxicating combination of Neufchâtel cheese (you could substitute mascarpone or cream cheese), vanilla, crystallized ginger and a few spoonfuls of the chai-infused poaching liquid.

Freezing things & melting cheese

Article & recipes: Melted cheese: Alone or in a dish, it's delish

Melted, grilled or baked cheese is a terrific dish in its own right, justly celebrated in many cuisines, where crispy discs of melted Parmigiano-Reggiano or Monterey Jack or caramelized slabs of haloumi (a Cypriot sheep's milk cheese) are served, gasp, right out in the open, even given center stage.

Frico with fennel-apple slaw ... Fried haloumi with pears and spiced dates

Article: The basics of freezing

Nothing ever rots. That's the good and bad of the freezer.

Good because its preservative powers let you stock up on bargain meat, save perishable ingredients, revisit your summer garden in February. Bad because, without the motivation of stink, it can become a bleak tundra of mysterious packages, their contents iced and freezer-burned beyond redemption.

To bring your freezer back from the dark side, some tips and inspiration ...

British Christmas recipes

Article & Recipes: Deep and crisp and even

Three sweet Christmas recipe from Nigel Slater: brandy snaps with cinnamon cream; mulled perry with pears and spices; brown sugar spice biscuits.

Perry is now sold as 'pear cider'. A wonderfully refreshing drink, even when warmed with sugar and spice. The smell as it fizzes on the stove is pure Christmas.
