Cook Perfect Beef Wellington / Albóndigas Soup / 8 Braises

Blog Post & Recipe: How to cook perfect beef wellington

Simon and Lindsey observe in the preface to their beef wellington recipe that "the whole point of cooking meat in pastry is to keep in the juices ... but if the pastry is good and thin, buttery and rich, nothing is nicer than a meat-soaked crust".

Blog Post & Recipe: i just flipped that

Loaded with vegetables and a good amount of spice, I couldn’t wait for it to finish cooking. The meatballs are made with beef and pork, but the book says there are some variations depending on region. You could use chicken instead of beef, and some meatballs are wrapped around a pitted green olive.

With weather this cold decided to make split pea soup with vegetables from farmers market.

Blog Post & Recipes: The Best Reason to Roast Hot Hot Hot

A while back I watched a Jamie Oliver Meals in Minutes show and he was making a roasted chicken dinner in under 30 minutes. Impossible you say... not when you cut out the spine, flatten it and blast it at 500°F/260°C...

Roasted Herb & Garlic Spatchcock Chicken ... roasted butternut ... Roasted Chicken & Butternut Squash Fusilli

Article & Recipe: Discovering a new squash: The Rugosa butternut

There are many good things about Rugosa, but I especially like that the seed cavity is quite small and the squash is quite large, which means you have a great deal of solid flesh at your disposal for gratins or other dishes with large intact pieces. Another plus is that the flesh is smooth and creamy, like a butternut, but not quite as sweet — rich, but with more chestnut in its bite.

Caribbean Bean Puree / Chicken in Beer / Smoky Eggplant & Lamb Pide

Blog Post & Recipe: Caribbean Bean Puree

The ingredient list for this recipe may seem a little strange. Black beans and bananas? You are just going to have to trust me on this one.

Recipe: Chicken in beer

Takes about 2 hours to prepare, but well worth it. The flavors are deep and substantial. I added more carrots than the original recipe called for, but I like eating them – they were saturated and drenched in the cooking juices.

Blog Post & Recipe: Smoky Aubergine and Lamb Pide

Pide are rather similar to lamacun* and are apparently sold on every street corner in their homeland. I topped mine with aubergine (which I blackened on the gas hob before scooping out the smoky flesh); lamb, minced; spices like coriander, cumin and cinnamon; onion, garlic and a little tomato.

How to Tell if Chicken is Done / Spaghetti Squash with Roasted Tomatoes / Braised Pork Sirloin

Blog Post: Chicken Still Pink After Cooking? Don't Panic

The USDA says that as long as all parts of the chicken have reached a minimum internal temperature of 165°, it is safe to eat. Color does not indicate doneness.

Recipes: Complete meatless meal: Spaghetti Squash with Roasted Tomatoes

Roast in the oven for 30 minutes. Stir in beans and parsley and continue roasting until beans are hot and tomatoes are shrivelled, about 10 minutes. Mound squash on platter and spoon tomato mixture on top.

Blog Post & Recipe: Choosing a Cut That's High on the Hog- Braised Pork Sirloin

Well, the loin is where we get the leanest and most tender pork cuts (all those baby back ribs I just mentioned also come from the loin, so don't get confused). But in general loin cuts are lean. They are what we call "high on the hog". But these cuts tend to dry out if overcooked, so braising is a good way to prevent that.

Tonkatsu (Japanese Pork Cutlet) / Spice Rubbed Roast Chicken / Tomato & Cucumber Salad with Cornbread

Blog Post & Recipe: seeing red

A traditional accompaniment is sliced cabbage and since you soak it in water for about an hour, it’s advised that you start with that step first. Once you get the cabbage soaking, break out the pork loin! Well, I used pork loin chops. You just need pork loin chops, salt, pepper, an egg, flour, and panko (flaky Japanese bread crumbs – flaky as in texture, not in terms of reliability). And oil for frying.

Blog Post & Recipe: Look no further roast chicken

Until I came upon Thomas Keller technique for perfect and comforting roast chicken; his philosophy is pretty simple, straightforward and 100% foolproof: the drier the meat, the crispier the skin, the better the roast chicken. All he does is pat dry the chicken with paper towel, season it inside and out with salt and pepper and roast it in a heavy skillet for almost an hour without basting or disturbing until crispy and irresistible.

Blog Post & Recipe: Tomato and cucumber salad with cornbread croutons

But the final piece of the dish—the cornbread croutons—ended up being a bit trickier. On my first attempt, I added them when the salad was marinating, but they soon turned to mush. After some experimenting, I learned the best way for them to stay solid was to add them right before serving. The cornbread croutons will still soak up some of the dressing, but they take on the bright fire of the jalapeños, which is always a welcome thing.

Lemon Ricotta Pancakes / Autumn Udon with Vegetables / Poulet Antiboise

Blog Post & Recipe: Lemon Ricotta Pancakes

This combination of lemons, raspberries, and blueberries with some ricotta cheese for tang will have you making this batter again and again. You could even make the batter the night before, and that beats a pancake mix any day.

Blog Post & Recipe: Recipe: Autumn Udon with Vegetables

Tara shared with us a recipe from the book that's perfect for fall: a simple udon noodle served with shredded carrots, spinach and shiitake mushrooms. Like much of Japanese cooking, the beauty and taste lies in the simplicity of the recipe.

Blog Post & Recipe: Poulet Antiboise

I was reading The Financial Times and came across this Elizabeth David’s recipe recited by Rowley Leigh, the in-house cook ... Despite the short list of ingredients, this dish was nothing like I’d tasted before. The onion cooked down to something sweet. The olives were salty shrapnels which went very well with the rather neutral chicken.

Butterbean & Almond Hummus / Bangus (Milkfish) Sisig / Recipes for Beginner Cooks

Blog Post & Recipe: A New Favourite: Butterbean and Almond Hummus

I’m hardly a hummus connoisseur, but I preferred it, hands-down, to any chickpea version I’ve ever had. Served with some toasted pine nuts and a sprinkling of sumac, it was a perfect complement to whatever else what on my plate.

Blog Post & Recipe: Bangus Sisig

When prepared correctly, nothing quite captures the varied flavors and textures of Filipino cuisine like a sizzling-hot platter of chopped pig's face ... But sisig made from Bangus (or milkfish), is perhaps my favorite non-pork face option for the classic street food.

Sopa de Carne / Roasted Mango & Habanero Salsa / 7 Chinese & Filipino Recipes

Blog Post & Recipe: Sopa de Carne

While the beef and olives impart rich and bold flavors, the soup is broth-y and unexpectedly light. It doesn’t look or feel greasy.

Blog Post & Recipe: Roasted Mango and Habanero Salsa

Of course, there was a little thinking required about what to actually do with this salsa. (As if eating this intensely sweet concoction balanced with just the right amount of fire with a spoon out of the food processor wasn’t good enough.)

Baked Lemon Tofu Double Citrus Salad / Chicken in a Pie Shell / Deep Fried Pickles

Blog Post & Recipe: Baked lemon tofu double citrus salad

The baked tofu is surprisingly savoury because of the garlic and shallots, a good contrast to the sweet orange segments.

Blog Post & Recipe: Baked chicken in a pie shell

A variation on the chicken-in-a-bread-crust recipe previously linked on this post.

In effect, it’s baking a whole chicken and biscuits to go with it at the same time. Because, yes, after baking, the pie crust dough turns into a biscuit with one side having absorbed the flavors and moistness of the bird. Just cut and tear the crust wrapper as you dig into the chicken.

Blog Post & Recipes: Deep Fried

Pickles? Crumbed and fried? Yes please. A buttermilk dressing was made to accompany it, though I added my own tweaks. Combined, the crunch of the coating giving way to crunchy, tangy dill pickle slices was brilliant. The garlicky buttermilk dressing, with a heavy hand in coriander, made an ideal dipping sauce.

Corned Beef, Cabbage & Kimchi Burrito / Chicken in a Bread Crust / 3 Braising Recipes

Blog Post & Recipe: Corned Beef, Cabbage and Kimchi Burrito

In addition to the corned beef, this burrito includes cabbage sauteed with bacon, kimchi, which is a spicy fermented cabbage, onion and cilantro relish, melted cheese and some avocado salsa verde (because it's green and it's St. Patrick's Day).

Blog Post & Recipe: Chicken in a Bread Crust

I was going to cook a bread-crusted chicken of my own, using a sourdough crust ... The skin of the chicken was less golden than with the salt crust, which I suspect is more porous, but plenty of juices had collected inside, and the chicken was just as moist and flavorful.

Article & Recipes: Slowly does it: delicious braise recipes

So what are the key things to watch? For most braises the meat is browned before the liquid is added. The caramelisation and 'toasting' produced by frying in fat are essential to the end flavour. But meat won't brown if it is wet or if you crowd the pan, so dry your meat then cook it in batches. Don't use too much fat or you'll end up with an oily dish. If anything burns – garlic or onion or the fat itself – throw it out before adding liquid.

Blog Post & Recipe: Savoy cabbage, nutmeg and chestnut saute

Savoy cabbage, sweet chestnuts and the subtle lemony warmth of nutmeg are decidedly comfort food territory. The chickpeas (garbanzo) might not be the obvious pairing with chestnuts and cabbage but add substance, nutrients and texture to your meal without competing overpowering the other flavours. We like this saute topped with a poached or fried egg to turn it into a more substantial meal

The falafels themselves are very low in fat, so the sauce, or any sauce of choice is necessary.

The pimento cheese recipe we got from B. is simple and delicious. It actually relies on roasted red peppers instead of pimientos.

Blog Post & Recipe: Beer Can chicken

Yes the chicken looks rather ridiculous on its beer can perch, covered with an herb rub and half-ready to salute you. But hear me out. While the chicken is dry roasting on the outside, the inside is being bathed with steamy beer, keeping the chicken meat wonderfully moist.

Vanilla Bean German Pancakes with Walnut Baked Apples / Roast Chicken Provençal / Perut Ikan

Recipe: Vanilla Bean German Pancakes with Walnut Baked Apples

Maybe the effort put forth in this recipe is all for nothing -typical results could come from 1 tsp. of vanilla extract? I don't know.

Blog Post & Recipe: roast chicken provençal

Our first try is perhaps not quite Perfect, but certainly tasted excellent, on top of being simple to make, and filling the cool Sunday evening air with the resinous perfume of roasting rosemary, thyme, marjoram, fennel, and lavender. Chicken, lemon, garlic and herbs. How easy is that?

Blog Post & Recipe: Perut Ikan (Nyonya Stewed Fish Stomach with Vegetables)

All my family members love a great serving of perut ikan, or Nyonya stewed fish stomach (previously salted and preserved) with various vegetables and exotic herbs, including daun kadok (betel leaf) and bunga kantan (ginger flower). It’s a very tedious dish to make but the taste structure is so deep and complex.

Blog Post & Recipe: The perfect roast chicken

Roast chicken might sound like an easy option, but actually it's a surprisingly difficult thing to get right, which is why it's often used by chefs as a test for potential new recruits. The issue is not so much one of flavour – you get what you pay for in that department – but texture.
