Norwegian Red Fruit Pudding / Labneh Balls / Sausage, Kale, & Bean Soup

Blog Post & Recipe: Rødgrøt med Fløte, Norwegian Red Fruit Pudding

A pudding made of stewed red fruit, thickened with a little cornstarch and crowned with billowy whipped cream.

Blog Post & Recipe: Labneh balls

Besides being used fresh, labneh is also dried then formed into balls, sometimes covered with herbs or spices and stored in olive oil glass jars. The cheese can then be kept for over a year.

Blog Post & Recipe: Sausage, Kale, and Bean Soup (Crock Pot)

Soup like this is the best because you can use whatever you want. Canned beans, leftover rice, frozen peas, wilty vegetables, whatever. It’s up to you. No meat? More meat? It’s all cool with me.

Super-eggy Scrambled Eggs / Banana Bread / Christmas Dinner with Roast Goose

Blog Post & Recipe: Super-eggy Scrambled Eggs

I came across it while paging through the new Serious Eats book - the idea is to use whole eggs plus egg yolks to make your eggs extra rich, creamy, and flavorful.

Blog Post & Recipe: Sunday Brunch: Banana Bread

This recipe for banana bread is about as simple as it gets, but one of the beauties of banana bread is how well it incorporates odds and ends from the cupboard and fridge. A handful of chocolate chips, some dried cranberries, or even a grated apple can happily be folded into this batter

Article & Recipes: Give goose a gander

Turkey is traditional, but goose makes a fine centrepiece for a Christmas feast [...] If in doubt, buy a meat thermometer, and in general, don’t stuff birds – cook stuffing separately as it can really slow down the whole cooking process.

3 Juniper Recipes / Ultra-Crispy Roast Potatoes / Pan-Fried Mackerel + Smoked Mackerel Cakes & Tomato Salad

Blog Post & Recipe: Hugh Fearnley-Whittingstall's juniper recipes

Crush a juniper berry between your fingers and its clean, resinous smell perks up a dull brain as effectively as a two-shot espresso. And, of course, its piny sweetness has the clean, bright aroma of gin

Chicken with rosemary and juniper ... Potato and celeriac gratin with juniper ... Rabbit and bacon with juniper and chestnuts

Blog Post & Recipe: The Food Lab Thanksgiving Special: Ultra-Crispy Roast Potatoes

The problem is that with simple roasting, they'll crisp up all right, but the layer of crispness will be very very thin. Within moments, steam from the interior of the spud will cause the crisp bits to soften. So what is it that makes a potato crisp?

Blog Post & Recipe: Pan-Fried Mackerel; Smoked Mackerel Cakes and Tomato Salad

Mackerel is delicious and versatile and can be served hot or cold, smoked, raw or cooked. Due to the rich oily flesh mackerel works best with strong acid flavours such as saffron, lemons, limes, tomatoes, orange, fennel, chilli, ginger and wasabi. The skin of mackerel is thin and therefore crisps up easily and tastes equally delicious. My philosophy about mackerel is to keep it simple; it’s a humble fish

Sweet Potato Parcels / Yoghurt Brulee / Blueberry & Basil Habanero Salsa + 2 Recipes Using It

Blog Post & Recipe: Sweet Potato Parcels

Cut the sweet potatoes in to 1.5cm chunks. Toss with olive oil, salt and pepper.

Blog Post & Recipe: Nigel’s Yogurt Brulee

Tangy and thick Greek yogurt is given the brulee treatment with a light dusting of sugar.

This summer I have had a lot of success in experimenting with fruit and berry salsas like the chipotle cherry salsa and there was one more that I wanted to try, a blueberry salsa with habanero peppers.

Carrot-Beetroot Salad / Garlic Scape Pesto / 13 Sauces (Pesto, Dressing, Salsa, Etc)

Blog Post & Recipe: carrot-beet salad

One of my favourite ways to change up boredom from green salads is to make a salad of grated vegetables. Coleslaw is all fine and good, but why leave it at that?

Blog Post & Recipe: The great garlic (e)scape

When I said "garlic scape", a friend thought I meant a painting depicting a crop of the infamously stinking rose. I would have assumed the same thing had I not been formally introduced to this tasty garlic flower stem (scape) that, according to Wikipedia, comes from the hardneck and elephant types of garlic.

Dark Chocolate Drizzled Salted Fried Eggplant / Blackberry Ketchup / Dinuguan (Pork Blood Stew)

Blog Post & Recipe: Dark Chocolate Drizzled Salted Fried Eggplant

Eggplant gets fried in shallow oil, no salting ahead of time for these, and then they get sprinkled with a bit of salt once they come out of the hot oil and drizzled with melted dark chocolate.

Blog Post & Recipe: Blackberry Ketchup, Really?

This condiment is much more ketchup than sauce. And it's certainly not jam because it has a big vinegary bite. There is also enough complex spice in it to make it much more compatible with grilled meat than vanilla ice cream.

Blog Post & Recipe: D is for Dinuguan (Pork Blood Stew)

The pig’s stomach, intestines, heart, snout, cheeks, and ears are cut into pieces and are all thrown into the mix together with the pig’s meatier butt and belly. The meat and offal are slowly simmered in vinegar seasoned with salt, garlic, onions, tomatoes, and hot chilies. The pig’s blood is then added to the simmering stew while it is stirred steadily to keep the blood from curdling.

Blueberry Balsamic Black Pepper Jam / Braised Daikon / Butter Chicken (Murgh Makhani)

Recipe: Blueberry Balsamic Black Pepper Jam

It is a beautiful inky blue-purple and the balsamic and pepper cuts the sweetness just enough.

Blog Post & Recipe: Braised Daikon

Braised daikon is ridiculously simple to make. There are only 3 ingredients. It takes awhile to cook but it is worth the wait. Raw daikon is crunchy and starchy. After being cooked for 40 minutes it becomes tender, soft and delicious. The texture of braised daikon is reminiscent of sea scallops.

Blog Post & Recipe: Butter Chicken (Murgh Makhani) (the same blogger uses this recipe to make Butter Chicken Burritos)

Butter chicken or murgh makhani, is an Indian dish where chicken that is marinated in a yogurt based marinade filled with aromatic spices is served in a buttery and creamy tomato based sauce. The chicken is normally cooked in a tandoor but you can just as easily grill it or cook it up any way you like.

Sour Meatballs / Boozy Mint Lemonade Slush / Whipped Cranberry Porridge

Recipe: Sour Meatballs

800 g ground veal
2 medium sized zucchinis
1 egg
1 bundle of mint
...

Blog Post & Recipe: happy hour: boozy mint lemonade slush

The thing is, I don’t have anise seeds, so I went with a classic summer pairing, lemon and mint, which I thought sounded super refreshing, especially for a slush. And since it’s happy hour, a little bourbon doesn’t hurt either.

Blog Post & Recipe: Whipped Cranberry Porridge

Along with rye bread, quark, wild berries and squeaky cheese, whipped lingonberry porridge is definitely on the top 5 of my favourite Finnish foods. Now, there is an obvious lack of frozen lingonberries here in Sydney - so far I haven't found any. The second best option for those wanting to make any lingonberry dishes is, in my opinion, to use frozen cranberries

Homemade Violet Crumble / The Eskimo Cook Book / How to Peel Ginger

Blog Post & Recipe: Let's Do the Hokey Pokey!

So if you are asking why bother with scratchmade honeycomb if you can get Crunchie or Violet Crumble, I would say, because you can use better chocolate, that's why.

Blog Post & Recipes: The Eskimo Cook Book

The Eskimo Cook Book is a collection of recipes brought together by children at the Shismaref Day School in 1952 and published as a booklet by the 'Alaska Crippled Children's Association'.

Cranberries ... Blueberries ... Lincod Eskimo Ice Cream ... Ahzeeach and Ahlowe'-kuk ... Buegwakuk ... Tomcod Liver and berries ... Ah-pick ... Willow Meats ... Eskimo Ice Cream ... Sue'wok (dried salmon eggs) and berries ... Eggs (duck or sea-gull) ... Conch ... [etc]

Blog Post & Video: How to Peel Ginger

All those little nooks and nubs make peeling ginger with a paring knife a veritable nightmare. Think of the waste! Intolerable. So Amanda dreamt up a trick that requires nothing more than a small spoon and Merrill has a hand at demonstration: you use the spoon's edge to quickly scrape away the root's surprisingly thin skin. It's so safe you could even enlist the wee folk for this task!

Pickled Red Onions & Pickled Small White Onions / Black Raspberry Shrub / Barbecue Ribs

Blog Post & Recipe: Torshi Piaz - Pickled Red Onions and Pickled Small White Onions

Torshi is mostly made with vinegar and the taste is rather "torsh" (sour), hence the name.

Blog Post & Recipe: Drink Week, Day Four: Black Raspberry Shrub

Today’s topic is the fruit shrub. These are a concentrated fruit syrup, spiked with vinegar, to give it an appealing sweet/tart flavor profile. They definitely need dilution, so top them with a bit of sparkling water

Blog Post & Recipe: How to cook perfect barbecue ribs

Ribs are one of the great pleasures of carnivorousness, and simplicity itself to prepare, as long as you cook them slow enough to melt the hard-working meat that makes them so tasty, and don't try to get too fancy with the marinade: this is a cut that really doesn't need it.

Strawberry Focaccia with Basil & Onions / Chicken Pie / Tender Jackfruit in Rice with Garlic & Black Pepper

Recipe: Strawberry Focaccia with Basil & Onions (also: strawberry and goat cheese focacia)

Lightly press strawberry slices into the top of the dough, then scatter onions and basil evenly across the top. Drizzle remaining 1 tablespoon of olive oil over the top and sprinkle with sea salt to taste. Bake until the focaccia is golden

Blog Post & Recipe: The Fabulous Chicken Pie (inspired by Maggie Beer)

I’ll be upfront – this dish takes a lot of effort, the pie crust, roasting the chicken, making the filling, baking… but I have never ever tasted a better pie ... Toasted walnuts, fresh herbs folded through a creamy chicken and mushroom filling lifted by hints of orange is unforgettable!

Blog Post & Recipe: Tender Jackfruit in Rice with Garlic & Black Pepper

One of my favorite is small tender jackfruit! It tastes very different from the ripe fruit. The texture is very similar to meat, especially pork. It tastes sweet, fibrous and soft. Peel the skin, cut it into chunks and boil it and it’s ready for cooking. If you don’t have access to fresh jackfruit you can also use canned.

Roasted Ruby Fruits / Savoy Cabbage Rolls with Golden Chanterelle & Brown Rice Filling & Cranberry Sauce / Meat-Free Barbecue Ideas

Blog Post & Recipe: Roasted Ruby Fruits (this blog has a weirdly huge header. Scroll down)

Like a lot of our [Australian] native fruits the Rosella is under utilised despite it's deliciousness ...

A bunch of lovely red rhubarb- I know there are green varieties, but I think the red is prettier
A punnet or two of strawberries
A handful of raspberries
A cup of Rosella petals

Blog Post & Recipe: Savoy cabbage rolls with golden chanterelle and brown rice filling and cranberry sauce

Together with brown rice I've used dried golden chanterelles, those beautiful mushrooms you would see at every market stall in Finland around August ... I've flavoured the filling with some of those beautiful herbs I got from the garden - thyme, rosemary and oregano, but you could use any dry or fresh herbs you have available.

Blog Post & Recipes: Meat-free barbecues

A meat-free barbecue will seem a gloomy prospect to many. After all, it is hard to muster much enthusiasm for the average veggie burger – so grey and miserable that it resembles nothing more than a slice of Wednesday ... The essential point is not to try to replicate meaty barbecue favourites such as burgers and sausages ... and instead attempt a different way of cooking altogether.

Strawberry Rhubarb Crumble / Horchata / Bosnian Pot

Blog Post & Recipe: Strawberry Rhubarb Crumble Recipe

In this version I combined rhubarb, strawberry, and a splash of port wine with a buttery black pepper, pine nut and oat crumble.

Blog Post & Recipe: Horchata, a Refreshing Rice and Almost Beverage

It’s what’s known as an aqua fresca, which is a Mexican beverage that is a blend of sweetened water with fruits, seeds, nuts or grains.

Recipe: Bosnian Pot

It is impossible to define Bosnian pot. Basically, it is pot filled with layered meat and vegetables, mostly very hot, but apart from that, due to the flexibility of it's preparations, whatever vegetables are available they'll go inside.

Candied Violets / Raw Food with Icelandic Musicians / Vinaigrette

Cauliflower with Tomatoes / Raspberry Lenten Buns / Nigel Slater Roasts Chicken

Blog Post & Recipe: Gobi Tamatar/Cauliflower with Tomatoes

As ill famed as this flower might be, I don’t think it stinks; I think it is one fantastic thing that absorbs a lot of flavors.

Blog Post & Recipe: Decadent Lenten Buns

It's Shrove Tuesday here in Estonia today, which means that people eat copious amounts of vastlakuklid aka Lenten buns aka semlor today ... this year I decided to be a bit more adventurous, so I flirted with chocolate Lenten buns and marzipan-raspberry buns.

Article & Recipe: Nigel Slater's roast chicken recipes

Sometimes I roast a chicken without the usual anointment of butter or olive oil. Just a generous scattering of sea salt and black pepper over its skin and a handful of aromatics up its bum. [he gives instructions]

Watercress Pesto / Washing Mushrooms / Another Blogger's Favourite Posts of 2009

Blog Post & Recipe: Watercress Pesto

Watercress is a perennial herb and part of the Nasturtium family and is known for its peppery flavours. As it ages though these flavours can turn bitter so it's best to use younger specimens.

Blog Post: Should you wash mushrooms?

(One of the responses comes from a poster who works in a mushroom farm -- scroll down to 'MatMatMat.')

In the red corner, we have the traditionalists – Delia, Gordon, Larousse Gastronomique – warning me to keep my precious cargo away from the sink at all costs.

Beckoning me from the blue are the hip young guns for whom rules are as old hat as Gordon himself – among them, the scientifically-minded food writer Harold McGee and his disciple Heston Blumenthal, who dismiss this ancient prohibition as 'nonsense'. Go on, they urge, give them a good old rinse.

Fennel-Pastrami Gratin / Roasted Marrow Bones with Parsley Salad / One Blogger's Most Popular Posts of 2009

Blog Post & Recipe: Fennel-Pastrami Gratin (this recipe is an entry in a mass fennel-recipe gathering).

Give a fennel some pastrami and they let go of their guards. So imagine what a fennel, fronds and toasted seeds included, would become if cooked in cream with layers of pastrami and yukon gold potatoes.
