Eggplant Parmesan Sliders / Mussel Conchiglie / How to Cook Perfect Welsh Rarebit

Blog Post & Recipe: Eggplant Parmesan Sliders

Top off the patties with homemade tomato sauce and a slice of fresh, melted mozzarella

Blog Post & Recipe: Mussel Conchiglie

Despite the cream, it tastes light and fresh but luxurious too. The shells are very good at scooping up the sauce and hiding mussels within them. Of course I had to put my own spin on it and add some lemon zest for some citrus flavour that I find essential with seafood.

Blog Post & Recipe: How to cook perfect welsh rarebit

Most rarebit recipes, with the exception of Nigel Slater's quick version, loosen the cheese with a liquid: milk or ale, in Jane Grigson's version; cider for Cheese Society; port for Mrs Beeton; or stout, which comes with the weighty recommendations of both Mark Hix and the Bareham / Hopkinson team.

Bleu de Gex / Indian Omelette / Homemade Chashu Miso Ramen

Blog Post: Bleu de Gex

I said to her; “What is the one cheese you would tell someone from the United States that they absolutely should try while in France, which is not available in America?”

Not missing a beat, she said; “Bleu de Gex.”

Blog Post & Recipe: Indian Omelet

Anyone who has experienced a train trip in India, would easily remember the little stalls flipping innumerable omelets in one huge skillet, quickly and efficiently. These are then sold wrapped in foils at the train windows.

Blog Post & Recipe: Homemade Chashu Miso Ramen

Cooking ramen requires fast pace, especially after noodles are cooked. Overcooked noodle completely ruins the right ramen experience so make sure EVERYTHING, including your table setting, is ready before you start cooking noodles. It’s a serious matter.

Saag Paneer Pasta / Leftover Rice Cake / Tomato Chili Lime Marmalade

Blog Post & Recipe: Saag Paneer Pasta

The spinach yogurt curry sauce went perfectly with the pasta. The chunks of fried cheese were a nice crunchy texture balance with the soft noodles.

Blog Post & Recipe: Leftover rice cake

It’s like a massive vege burger in a way, with grilled cheese on top, crispy crumby cheese edges, and a nice moist middle. The bonus is that you don’t need to get your hands dirty shaping any patties, and you don’t need to dip the patties into breadcrumbs. I’m considering making all my vege burger recipes like this from now on – you can still cut them into wedges and put them in a sandwich or bun.

Blog Post & Recipe: Tomato Chili Lime Marmalade

I wasn’t sure whether to call this a marmalade or a relish, I think really it would be a relish because of the tomatoes but the tang of the lime rind really gives it that marmalade edge. So what do you use such a marmalade relish for? Well we have eaten it on toast, with cheese and I have even dipped my fish & chips into it! You could use it to spice up grilled fish or chicken, adding it to the dish before serving or you could just offer it as an extra condiment at the table.

Steve Jobs Cheese Head / Potato Pizza & Pizza Flour / Nine Burger Recipes

Blog Post & Recipe: Steve Jobs Cheese Head [via Boing Boing]

So what better way to show appreciation for my much-loved Apple products than to create a tasty sculputure in the form of Apple's venerable leader?

Blog Post & Recipe: Potato Pizza and the Correct Flour to Use for Pizza Dough

I get asked all the time about what is the right flour to use when making pizzas, but that's really the wrong question. The question you should ask yourself is what kind of pizza do you like? Do you like thick, chewy pizza or do you like thin, crispy crust? The flour you choose makes a big difference in the crust.

Coconut Barley Pilaf With Corn, Chicken and Cashews. Tomato Confit. Baked Ziti

Recipe: Coconut Barley Pilaf With Corn, Chicken and Cashews, which comes with and introductory article about the cook, her cat, and her shrivelling ears of summer corn.

While the pilaf simmered, I contemplated the large hunk of poultry in front of me.

Article & Recipes: Caramelized Tomato Confit

This isn’t really, truly a confit.

It’s almost a confit. It has both sugar syrup and olive oil in it, both of which can be used to cover and preserve the item in question, which in this case is caramelized tomatoes.

Technically, since I am not meaning for the sugar and the oil to preserve the caramelized tomatoes , I guess we should call this a relish ...

Blog Post & Recipe: Dinner Tonight: Baked Ziti

But baked ziti is all about the abundant combination of sauce, pasta, and cheese. It's heavy, filling, and meant to be an indulgence [...] The great thing about this recipe is that, as the cookbook advertises, everything happens in one pot. So the pasta literally cooks in the sauce, sucking up as much of the tomato flavor as it can possibly manage. Relatively light on the cheese, this substitutes a bit of heavy cream, which oddly makes the whole dish feel light.

Old Cheese. Pea Risotto. Mexican sauces.

Soy beans. Rice. Cheese wrapped in leaves.

Blog Post & Recipe: How to Make Perfect Asian Rice

Check the rice before you buy it. It should be lovely pure white, like the rice on the right. If it's chipped, dinged up, and has dark spots like the one on the left, take a pass. And believe it or not, most rice has an expiration date on the package.

Article & Recipe: Soy beans means simple

Most Japanese restaurants have soy bean still in their pods served as a snack. This is similar to the recipe I am giving you today. However, it's the soy beans, shelled and frozen just like frozen peas, I think we should all be serving ...

Soy ginger soy beans in the shell

Article: Cabbage leaf a nice cheese-wrapping resource

Cheesemakers have wrapped fresh cheeses in leaves for protection probably since cheese-making began. Grape leaves, chestnut leaves, fig leaves - whatever was handy and free would be pressed into service. The leaf wrap kept the flies away, slowed moisture loss and often imparted a desirable aroma.

Modern cheeesemakers working in pristine facilities don't need to worry about keeping flies out of their aging rooms, but they may enclose a cheese with leaves for aesthetic value ...

Melted, grilled or baked cheese is a terrific dish in its own right, justly celebrated in many cuisines, where crispy discs of melted Parmigiano-Reggiano or Monterey Jack or caramelized slabs of haloumi (a Cypriot sheep's milk cheese) are served, gasp, right out in the open, even given center stage.

Macaroni cheese. Trout.

Recipe: Macaroni cheese with asparagus.

Article/Recipe: Benefit of the Trout.
Includes recipes for salad of trout, and trout with almonds and cherry tomatoes.

When I came to prepare the fish they were still stiff (a sign of a truly fresh fish). A classic dish of pan-fried trout with a squeeze of lemon and some buttery browned almonds seemed ideal. My copper pan outperformed the usual non-stick pans; it was faster and the fish was crisper.
