Blog Post & Recipe: The Nasty Bits: Fried Fish Bones

Fried fish bones taste like what you imagine of thin and delicate bones: crunchy at the thick parts and crispy at the thin parts, with a slightly fishy flavor. The trick is to leave some of the fish flesh on when you fillet the whole fish, so that the meat clinging to the bone becomes crispy and brown

The otherwise sweet beets have quite a piquant flavour when pickled, and that works well with the saltiness of the blue cheese.

In a non-stick pan, spread out a layer of 2-3 tblsp grated parmesan and heat it up very gently; when the cheese is light brown, carefully remove the 'lace' and wrinkle it a little before it cools down.

Article & Recipes: The California Cook: Seasonal vegetable stew is easy, delicious

The basic rules for vegetable stews are few, but they are simple: You want some onions; you want whole cloves of garlic, preferably unpeeled; you want some lettuces or greens for moisture; and you want butter … lots of butter.

Blog Post & Recipe: Dinner Tonight: Pasta e Broccoli

What really works with the famous pasta e broccoli is that if you cook it long enough, the parboiled broccoli breaks up into the pasta and almost melts into a pasta-clinging sauce when combined with the cooking water. Increasing the ratio of broccoli-to-pasta not only makes the dish a bit healthier, but better too.

Blog Post & Recipes: Beyond Bread: The Many Uses of Sourdough [via The Paupered Chef]

A wonderful all-purpose leavening agent for quick breads and muffins, sourdough starter also adds moisture to batters and shines—more traditionally—in pancakes and waffles, less traditionally (at least in the West) in flatbreads and cakes, and, as I recently found out, even holds up remarkably well in microwave chocolate cake.

I had leftover fresh corn which had been cut into kernels and microwaved. So I added some into the risotto to great result. The risotto was sweet from the vegetable, rich from the stock and parmesan, and textured from the corn kernels.

But the one vegetable that I have not seen in dips is broccoli ... I recommend your [sic] try broccomole for something quick and different but it not a comestible to linger in your fridge too long. Article: Pancetta vs. bacon: Each brings its unique character to a recipe

Dear Lynne: Could you tell me if I can substitute bacon for pancetta in a recipe? Isn't pancetta just the Italian name for bacon?

Lindsey

In a pinch, you can substitute bacon for pancetta as long as you understand what that change is going to do to your dish. Both pancetta and bacon are cured pork made from the same cut -- the pork belly ... That said, they taste different ...

Blog Post: Good Question: How Do I Cook With Curry Powder?

Dear Kitchn, Do you have any suggestions on cooking with curry? I bought three different kinds of curry powered from Penzey's. I'm really into the warm spice flavors and would like to incorporate them into some easy weeknight meals.

I tried this Curried-Squash and Red-Lentil Soup recipe yesterday. I was expecting layers of flavors: rich squash, earthy beans and curry warmth. Instead, the soup just had this one flat spice note. Not very appealing. Can you give me more advice on cooking with curry?
