Pot-Roast Chicken with Sherry / 5 Roast Fish Recipes / Khurdi - Bohra White Stock Soup

Recipe: Recipe: Pot-roast chicken with sherry

Chicken parts are a boon for the hurried cook. This recipe calls for pan-browning the chicken, then baking it for a half-hour until crisp.

Blog Post & Recipe: Khurdi - Bohra White Stock Soup

Khurdi or white soup is made with rich mutton stock and then flavored with whole spices. Milk is added to the soup to give it some body and creaminess. Milk also gives it the characteristically white color, which isn't really all that white. The deep and intense flavors are rounded off with lots of fresh mint to add freshness.

Salmon Dill Crepes / Steaming Large Clams with Dashi & Sake / Chickpea Casserole with Lemon, Herbs & Shallots

Blog Post & Recipe: Salmon Dill Crepe Recipe Paired with Oyster Bay Sauvignon Blanc, New Zealand

You can make the crepes ahead of time and store them layered between wax paper in the refrigerator for up to 2 days (or freeze). As well, you can make the salmon mixture ahead of time and just heat before assembling the crepes.

Blog Post & Recipe: Steaming Large Clams with Dashi & Sake

Then Nobuko, my M-I-L, prepared 2 cups of kombu dashi, adding a pinch of salt to the liquid, and setting aside. She arranged the clams in a dry cast iron skillet, covered the skillet and placed it over high heat. After about 7 or so minutes, the clams opened up.

Blog Post & Recipe: Chickpea Casserole with Lemon, Herbs & Shallots

This is a meatless vegetarian dish, bright with lemon zest and herbs. It gets finished off with a crunchy, olive oil-drizzled crust of Parmesan and breadcrumbs. It's creamy inside, crisp on top. But it leaves out old-fashioned canned soups and all those heaps of cheese and cream. Instead I use some low-fat yogurt (so tasty and tangy!) and some cottage cheese to bind the casserole together.

Blog Post & Recipe: Zucchini and Spinach Gratin

To take a break from our usual (almost daily in the summer) way to cook up the zucchini (see mom's summer squash), we prepared a classic French gratin, with grated zucchini, spinach, onions sautéed with bacon, a persillade of parsley and garlic, all bound together with a few eggs, tossed with Parmesan, and baked until golden brown.

How to Pan-Fry Tofu / Finnish Salmon Soup / Spicy Kimchi Stew (Kimchi Jjigae)

Blog Post & Recipe: How to Pan-Fry Tofu with Crust is Simple

With one table spoon of oil, we will be able to fry these tofu and yield crisp golden crusts. I did not coat it with egg, batter or any flour. It is just naked firm tofu (bean curd). A non-stick pan is neither necessary.

Blog Post & Recipe: From riches to rags - Salmon Soup [via]

If you don't like to cook whole salmon piece, you could use the cubed version, you could add them add it after cream comes to boil, take care to cook since it is already diced, the layers might get dissolved in soup when it is over cooked.

Blog Post & Recipe: Spicy Kimchi Stew (Kimchi Jjigae)

The secret to kimchi jjigae is using very old kimchi(see kimchi bokkumbap). If you can't get a hold of the old kimchi that is sold, you can just let your kimchi age in your fridge until the cabbage loses its whiteness and turns dark and a bit transparent like the picture below. Taste the kimchi and if its really sour then it's perfect for jjigae.

Sure enough, when the recipe arrived, we saw right away what makes it different: The cauliflower is cooked in cream and then pureed. McNee often adds a pinch of sugar, which brings out the natural essence of the vegetable. Then he bakes it at a low temperature so it gently rises and doesn't fall when it cooks.

"Tea can do many things for you," Gold added. "The tannins in tea can be used to balance sweetness or richness in other ingredients. Tea can add depth of flavor to a dish, complexity or brightness. It can be used to tease flavors out, to bridge between different disparate ingredients or highlight certain aspects of a dish."

Spicy Lamb Pie / 5 Recipes for St. David's Day / No-Knead Bread: a Convert's Story

Blog Post & Recipe: Spicy Lamb Pie.

I reckon this pie, if fennel substituted for carrots and fish for lamb, would work wonderfully as a dish to serve to my pescetarian friends. I’d have to cook the sauce first and then add the fish just before baking – what do you think?

Blog Post & Recipes: St David's Day: recipes for a feast.

Blog Post & Recipe: No-Knead Bread: A Convert’s Story

I’ve revised it a little and put the flour into weights rather than volume. Steingarten uses spelt flour on the cutting board in the proofing basket, which I recommend for flavor and appearance; Lahey uses bran and no proofing basket. This is up to you.

Salmon & Pea Risotto / Fried Oysters with a Chipotle-Lime Dipping Sauce / 4 Fennel Recipes

Blog Post & Recipe: Salmon & Pea Risotto

I used fresh this time but flaked smoked salmon (the kind that looks like a whole chunk of fish, not lox) works equally well.

Blog Post & Recipe: Fried oysters with a chipotle-lime dipping sauce

There are many ways to make fried oysters. I keep mine relatively simple, though I do like to coat them in a combination of both crushed saltines and cornmeal, which I think gives them an excellent texture and flavor.

Fennel bulbs are incredibly versatile. You can eat them raw, boiled, roasted or braised. They taste good undercooked, or overcooked, with vegetables, meat or fish – or just on their own.

Blog Post & Recipe: Another Day, Another Salmon

And I’m acutely aware that many people reading this are terrified of cooking fish, to which I can only say: start with this recipe first. It is very difficult to screw up. The idea is that you cook the salmon in a very low oven for a twice as long as you’d normally cook it, and the result is fish that is buttery soft and moist.

Butternut Squash Baked Risotto / 5 Hash Recipes / 6 Polenta Recipes

Blog Post & Recipe: Dinner Tonight: Butternut Squash Baked Risotto

I was tempted enough by this recipe's technique to try it: rather than trying to slowly coax out the starch from the rice, the liquid is added all at once, then the pot is covered and slipped into a hot oven.

Article & Recipes: What makes a good hash

The gist is this: Simple, hash should be, sloppy, it should not. You can let your leftovers be your prompt

Article & Recipes: Simon Hopkinson's recipes using fresh herbs

THYME, ONION AND GRUYèRE TART ... BUTTER BEANS WITH SAGE, OLIVE OIL AND DRIED CHILLI ... PARSLEY, RADISH AND CELERY SALAD WITH CAPERS

Blog Post & Recipe: Maple Salmon

Adapted from Closet Cooking ... this is a very easy salmon dish that is similar to salmon teriyaki but doesn’t require as many Japanese ingredients. It is sweet and salty and the marinade bakes on top of the fish, coating it so it remains light and moist.

Blog Post & recipe: Tomato and Feta Baked Eggs

The tomato and feta baked eggs came out with the whites set and the yolks still mostly runny and they made for a really nice weekend breakfast treat! The tomato and feta sauce was nice and tasty and the fresh herbs added that something special that just hinted at spring.

Miso-Glazed Salmon / Make-Ahead Mashed Potatoes / Cooking Frozen Okra

Blog Post & Recipe: Miso paste makes a quick, savory seasoning for salmon

SHORTCUT COOKING: With the addition of a little mirin, this richly flavored Japanese paste turns into a great glaze

Blog Post & Recipe: Make-Ahead Mashed Potatoes

This recipe is fantastic because it calls for the potatoes to be made the night before and refrigerated. This isn't a gimmick because the potatoes themselves turn out creamy, fluffy and luxurious.

Blog Post & Recipe: Mix and Match Subzi

With hints re. cooking frozen okra.

A lot of people won't cook with frozen okra. For me, it is very rare to find good fresh okra so I can either embrace frozen okra or put up with an okra-free existence. I chose the former and have learnt to cook frozen okra in a way that it doesn't get slimy.

World Bread Day / Mexican Baked Eggs / Gravadlax

Blog Post: World Bread Day

Bake or buy a bread, take pictures (if possible) and blog about it on Friday, 16th October 2009. Just one entry per blog, please.

Blog Post & Recipe: Recipe for Mexican Baked Eggs with Black Beans, Tomatoes, Green Chiles, and Cilantro

For sure it was the Tuscan Baked Eggs I made last summer that got me thinking of eggs baked in tomato sauce but I have no idea what inspired me to try simmering the tomatoes with black beans and spicy green chiles.

Blog Post & Recipe: Gravadlax and how to make it

'Gravad lax' is Swedish for 'cured salmon' and harks back to the time when fishermen would save part of their catch by burying it in the beach. Presumably the salt in the sand had a preservative effect and a degree of fermentation held off decomposition for a while. Today, things are a little better organised. Nobody's suggesting you should bury your salmon in the garden, but you can entomb it in a salty rub, some cling film and a fridge for a couple of days and produce something magical.

Pan Tumaca. Salmon Burgers. Korean Style Tacos.

Blog Post & Recipe: Korean Style Tacos with Kogi BBQ Sauce

This is a great way to use your leftover pulled pork or roasted chicken. [...] You can add use kimchi (spicy pickled Korean cabbage) to top the tacos, or make a quick cucumber pickle like I have.

Blog Post & Recipe: Pan Tumaca

Translated from Catalan, pan tumaca, literally means bread with tomato. [...] It’s a traditional recipe from the Catalan region of Spain, and is pretty much a staple with almost ever meal served over there. People like to eat it for breakfast or as a snack with cured ham (jamon Serrano) or as an accompaniment to dinner ...

Blog Post & Recipe: Dinner Tonight: Salmon Burgers

Saddled with a craving recently, I set out to find a recipe. I ended up with this Mark Bittman recipe on Bitten, which solves the problem of holding the meat together by totally pureeing 1/4 of the meat into a paste which holds the larger chunks of salmon together. While some recipes call for mayonnaise or an egg to keep the patties intact, I liked this purer salmon-only approach.

Grilled Salmon. Sweet Potato Falafel. Milk.

Recipe: Balsamic vinegar: not just for salads

GRILLED SALMON WITH BALSAMIC ONION GLAZE

Blog Post & Recipe: Baked Sweet Potato Falafel

These falafel are made with a mashed sweet potato and chickpea flour base, accented with a generous punch of spices, a nice amount of garlic and plenty of chopped cilantro. If you're looking for that crunchy, fried, falafel experience, this isn't it. But these are delicious in their own way.

Article: The right white stuff

Richard Cornish investigates why we have lost the taste for real milk.

The cream from the milk sat on the coffee in delicious yellow blobs. The person I made it for took a sip, paused and spat it on the ground. Retching, he said "That milk's off! It's disgusting!" "No," I replied, "it's unhomogenised."

Like most people brought up on processed milk, he was only accustomed to the texture of milk that had been homogenised. To him, milk was pure white, smooth, slightly creamy and, somewhere in the hazy background, a cow was involved.
