Chicken, White Bean, and Poblano Stew / Peppermint Ice Blended Mocha / Vinegar-Glazed Chicken

Blog Post & Recipe: Chicken, White Bean, and Poblano Stew

There’s nothing fancy to this stew but it’s pretty easy to throw together, is really filling, and a big hit in our family.

Blog Post & Recipe: Peppermint Ice Blended Mocha

I think I had about half a gallon of hot chocolate leftover, so for an extremely nutritious (and diabetic friendly) breakfast, I infused it with some candy canes and then blended it with ice cream, coffee powder and garnished it with an unhealthy dollop of whipped cream.

Blog Post & Recipe: Vinegar-Glazed Chicken

Unlike white rice vinegar, Chinese black vinegar from northern China is an aged vinegar made from black glutinous rice, wheat, millet, or sorghum.. (The Gold Plum version from the city of Zhenjiang in Jiangsu province, made with glutinous rice, is considered the premier brand.) The flavor resembles that of balsamic vinegar. It’s slightly sweet with a barely detectable smokiness [...] I frequently recommend in my recipes a good-quality balsamic vinegar as a substitute if you can’t find Chinese black vinegar. But the same could be said opposite, that if you run out of balsamic vinegar you can use Chinese black vinegar.

Triple Celery Soup / Thai Chicken Stew / Rosemary Squash Bisque

Article & Recipe: A celery-soup celebration

It’s a soup based on both the familiar green stalk celery (high on the list of underappreciated vegetables, in my view) and the knobbly white celeriac, or celery root.

Blog Post & Recipe: Thai Chicken Stew

Combine the carrots, onions, chiles, ginger, and vegetable oil in a medium bowl and microwave for approximately 10 minutes until the vegetables soften. Transfer the vegetable mixture to your slow cooker.

Blog Post & Recipe: The World is Not Ready for Bacon Squash Caviar

Now, I do precisely one thing with winter squash. Well, technically two things. I cube it, salt it, oil it, roast it. At this point, I either turn it into a soup, or I don’t. If I chose the former, it becomes Rosemary Squash Bisque, with a supporting cast of pork products, vegetable broth, rosemary, cream, and the tender ministrations of my Cuisinart.

Hokkaido Milk Bread / Chicken Stew with Butternut Squash & Quinoa Recipe / Crusted Butternut Pumpkin

Blog Post & Recipe: Hokkaido Milk Loaf (Hokkaido Milk Bread) - My First Bread Loaf....

The recipe featured here is denser and richer. The incorporation of Hokkaido milk (I do happen to have Hokkaido milk which I had bought from Hong Kong, but normal full cream milk will do just as well) and fresh cream yields a fine crumbed, moist texture.

Blog Post & Recipe: Hearty Chicken Stew with Butternut Squash & Quinoa Recipe

I cubed and steamed the squash, mashing half of it to help thicken the stew. In went the quinoa, one of my favorite grains, for an extra punch of protein and fiber. The topper was a kick of briny flavor from some kalamata olives and a burst of freshness from a handful of chopped parsley.

Blog Post & Recipe: CRUSTED BUTTERNUT SQUASH

It’s a why-haven’t-I-done-this-before? kind of recipe – written with a short list of familiar ingredients, likely things you have on hand and out comes a tender squash with just the right crunch of breadcrumbs and parmesan. I typically make more than we can eat to have leftovers, but this is the kind of side you’d want to have fresh as the breadcrumbs get a bit soggy.

Spinach Feta Pie / Little Quinoa Patties / Easy Chicken Stock

Blog Post & Recipe: Spinach Feta Pie

The original recipe was basically white rice, spinach, feta and eggs, topped with cheddar cheese but for this post I wanted to mix it up a bit.

Blog Post & Recipe: Heidi, well done

One dish that I think serves as great example to Heidi's style is her Little Quinoa Patties. A seemingly humble collection of ingredients, quinoa, eggs, and breadcrumbs, are punctuated by fresh onion, chives, garlic and a grating of cheese. Pan-fried until crusted and golden the cakes get unexpectedly gutsy

Little Quinoa Patties

Blog Post: Stock Convictions

People are unnecessarily afraid of bacteria. Once your stock is cooked, it’s safe to eat. If there was bad bacteria in it, you’d have killed it. Let it cool uncovered (the faster the better; don’t fear bacteria but don’t give them the upper hand). Leave the pot out on the stove top (covered or uncovered once it’s cooled, doesn’t really matter). Bring it up to heat the next day and any bacteria that landed there and began to mulitply (and they multiply with astonishing speed at 90 to 110 degrees F.) will be dispatched well before the stock hits a simmer.

Cod & White Bean Stew

Blog Post & Recipe: homemade chicken stock

Sometimes I do it with odds and ends from a chicken: wings, neck, gizzards, other random bits. But most often, and by far my favorite way to make stock – is to use 2 carcasses of roasted chickens

Article & Recipes & Video: Duck Charcuterie 5 Ways (and Recipes).

The tender "center cuts" (breast, tenderloin, etc.) are not the only parts worth eating; in fact they are often not even the best. In the case of duck, it's a great gateway cooking experience to full on nose-to-tail: all of the parts are delicious and easy to prepare, it just takes a little time. Watch this video to see ducks turned into sausage, pate, rillette, stock, prosciutto, and confit and check out the Ruhlman/Henderson/Keller influenced recipes.

The chart on the following page provides ideas for cooking 1½ pounds of white fillet, whether whole or cut into individual portions. None of these recipes take more than half an hour from start to finish; thicker pieces of fish will cook in 15 minutes or less, thinner pieces in under 10. You can tell that any fillet is done when it’s opaque and a thin-bladed knife meets little resistance when you use it to poke the thickest part of the fish.

When I published the recipe on my Estonian site, then one of the readers mentioned that she replaced the chorizo with finely chopped black pudding and liked the result. I liked the sound of that, so nicked the idea, adding a spoonful of roasted onion flakes for an extra depth of flavour.

Chicken Sizzling Rice Soup. Asparagus pasta. Composting

Chicken Stew. Pasta with Tomatoes and Sausage.

Blog Post & Recipe: Chicken Stew with Onions, Tomatoes, and Dijon

"Stews are your best ally for stress-free dinner parties," says Clotilde Dusoulier, of her Mustard Chicken Stew in her Chocolate & Zucchini cookbook, and I couldn't agree more. They cook happily away while you enjoy the company of your guests, and avoid the stress of food that has to be perfectly timed.

Recipe: Pasta with Caramelized Tomatoes and Sausage

What to buy: Sweet Italian sausage, sometimes called mild Italian sausage, is flavored with fennel and garlic and can be found in most supermarkets. We call for the cooked variety, but if you can’t find it feel free to substitute fresh and simply cook it before using. If you want more heat, replace the mild Italian sausage with hot Italian sausage.

Game plan: If tomatoes are not in their prime and you’re dying to make this pasta, toss the chopped tomatoes with a pinch of salt and set them in a fine mesh strainer over a bowl for at least 10 minutes to boost their flavor.

Recipe: Whip it up - sweet potato.

Recipes for roast sweet potato, green bean and couscous salad; sweet potato mash with grilled lamb cutlets; and sweet potato salad with pecans, ricotta and baby spinach.

Blog post/Recipe: Mexican red chili sauce.

I did this for the first time and made two mistakes which I will NOT repeat. First, I chose not to use gloves when picking the seeds out and handling the peppers. PAIN. Next, I did not let the chili mixture cool completely when I put the slop in the blender. The heat and steam forced the top off and my curtains are still splattered with red. I got very lucky that the stuff didn't fly towards me. Shudder. It's a very labor intensive dish, but even with all of that, it was still densely flavored and luscious. I chose to serve it in some Chile Colorado.
