Some Bread Sites

Blog: Wild Yeast

I am currently a student in the professional bread and pastry program at SFBI.

Blog: A Year in Bread

What could be more satisfying than the simple yet magical process of baking your own bread?

Website: The Fresh Loaf

Welcome to The Fresh Loaf, a community for amateur artisan bakers and bread enthusiasts. This site contains featured recipes, lessons, book reviews, a community forum and recipe exchange, and baker blogs.

Blog: Toxo Bread

Some of my favourite things about baking bread are being able to decide exactly what to put in it, and how I want it to turn out (or attempt to control the latter, anyway). These also happen to be my labmates’ favourite things about my baking too

Blog: The Knead for Bread

It’s amazing what you can put into a bread. If you think about it, what ever you put in a sandwich you can put into a loaf of bread. Well … Ok, maybe not meatloaf. That would not make a good bread.

Blog: King Arthur Flour: Baker's Banter

Bread is a wonderful thing to share. The following recipe came to me via a surgical nurse at our local hospital. As we chatted prior to my shoulder surgery, we discovered our mutual devotion to bread.

Blog: Ye Olde Bread Blogge

It has been common practice in German bakerys to soak the bread from the preceding day and mix it with the new bread dough. Not only a moneysaving decision: the soaked bread makes the crumb moister, and extends the loaf’s shelf life.

Blog: The Yumarama Bread Blog

Recently upgraded from a plain web page to a blog just so that some people who’ve wanted to follow along and/or make sourdough themselves could see what was up and also get to post comments and ask questions so that it’s not such a one-direction “class”.

Blog: Bao/Bread

The texture of the bread is tighter than using whole wheat. Also the taste of rye was not strong enough. Maybe I should use rye sourdough instead of white one if I have it? Or ferment the dough for longer time without the commercial yeast? Anyway the original version with whole wheat flour does taste very good, especially the roasted hazelnut and prune

I've added these to the bottom of the sidebar.

Blog Post & Recipe: Hearts of palm (Recipe: hearts of palm, shrimp and cheese pizza)

Heart of palm is the crunchy, creamy, ivory-colored inner core of the terminal leaf bud of any of up to twenty species of palm trees. It is an ancient food, eaten for centuries by indigenous populations of the tropics.

I have attempted to compile a list of pizza toppings [...] Pizza toppings are normally placed upon a pizza in a specific order, not because it is tidy but because the pizza sauce keeps the pizza dough moist, the cheese then provides a bed for the toppings to rest on and they do not dry out or fall off as the pizza slice is held ...

Parsnip Purée.

Recipe: Parsnip Puree

This recipe was created by chef Traci Des Jardins of San Francisco's Jardinière.

Recipe: Parsnip Puree

Boil the parsnips until soft.

Drain the water and pulverize with a hand-masher or for an extra smooth puree, run them through a ricer.

Recipe: Sweet Potato-Parsnip Puree

For variety, use yams instead of sweet potatoes; or rutabagas instead of parsnips. If you don't have tahini, use sesame oil.

Recipe: Puréed Roasted Parsnips

The easiest way to prepare parsnips is to slice them, steam them, and dress with butter and salt. However, to get the fullest, richest flavor from the parsnips, they should be roasted. The browning caramelizes the natural sugars in the parsnips.

Cinco de Mayo

Recipe: Cinco de Mayo Recipe: Mango Michelada

A michelada is a beer cocktail with hot sauce, lime, and salt — a beer margarita, if you will. Without the liquor, so this is the perfect midweek drink.

Blog Post & Recipe: Pineapple, tequila are perfect companions for Cinco de Mayo

And since I'm eating healthier these days, this tequila-baked pineapple makes the perfect side dish for some grilled salmon or chicken and is sensational when served over pound cake or vanilla ice cream ...

Tequila and Lime Baked Pineapple

Blog Post & Recipe: Chipotle Chicken Fajitas (Grilled Indoors!) with Creamy Black Bean Spread

We should have posted this recipe a few weeks ago in honor of Cinco de Mayo, but better late than never...

Fajitas really taste best when the meat and veggies come off of a grill, but we're willing to compromise with a grill pan rather than give them up entirely.

Recipes: Cinco de Mayo, a.k.a. National Margarita Day

'National' here meaning 'in the USA.'

Cinco de Mayo isn’t celebrated very widely in Mexico (it’s often erroneously thought of as Mexican Independence Day, which is September 16), but it’s become so popular in the States that many people consider it the kickoff of summer ... Here’s an assortment of Mexican-influenced, but by no means traditional, cocktails that use beer, tequila, and rum.

Puff Pastry

Recipe: Quick puff pastry

Recipe: Puff pastry

What makes puff pastry so light and crispy? Well, the secret is in the folding. Puff pastry is made by placing chilled butter (or sometimes lard) between sheets of dough, then folding and rolling it many times to create hundreds of layers. As it cooks, steam lifts and separates the layers, resulting in a crisp, flaky pastry suitable for the tops of pies or the classic French dessert, mille-feuille (translates a "a thousand leaves").

Website: The youtube search results for 'puff pastry'

“puff pastry” results 1 - 20 of about 236

Recipe: Classical puff pastry

Go to the bottom of the recipe for instructions on how to do a few basic things with puff pastry:

For thinly rolled dough ... Bouchee ... Criss-cross Tartlet ... Puff Strip ... Vol-au-Vent

Recipe: Katherine's Puff Pastry

If dough is too sticky or dry, you may need to use extra flour or water. It is very important for good puff pastry that everything is kept very cold. Puff pastry is better made with bread flour because of the higher gluten content.

I wanted to include more vegetable in my soup, hence the addition of broccoli. While the original recipe contained risoni pasta, I had some leftover rice and used that instead.

Blog Post & Recipe: Dijon-Cilantro Tuna Salad on Whole Grain Bread

Everyone has his or her recipe for "true" tuna salad. Our go-to includes chopped celery and red onion, mustard, sweet dill pickle relish and just enough mayo to hold it together. One final, maybe unexpected twist: a hefty dash of curry.

But we're always eager to try a new spin, so we were happy to try this Dijon-cilantro version.

Blog Post & Recipe: How to make a cemita

It’s a sandwich found in the Mexican state of Puebla. At first glance, you may think it looks like a hamburger as it’s housed on a round, sesame-seed bun ... The bun, which is also called a cemita, is where the sandwich gets its name. It’s an egg-rich bread topped with sesame seeds that is sort of a cross between challah and brioche. (And it’s not to be confused with the cemita or semita found in Northern Mexico, which is a Mexican sweet bread spiced with star anise).

The other distinguishing characteristic of a cemita is the liberal use of the minty herb papalo.

If you somehow combined a coconut macaroon with a bit of carrot cake, you might end up with a cookie like this one.

Blog Post & Recipe: Carrot Soup Recipe

I typically seek out "early" carrots with the bushy green tops still on. The leaves should be fresh and not wilted, and the carrots should have vibrant color. If they feel rubbery, pass on them. I pass on bagged carrots or the big, woody ones - the early carrots often have a much sweeter flavor.

Recipe: Carrot halwa

100g ghee plus 1 tbsp extra
200g sugar
7 cardamom pods, crushed and seeds reserved
10 natural almonds, slivered, plus extra to garnish

4 tbsp milk powder
1 tbsp ghee
2 tbsp cream

My favourite ways of cooking carrots all serve 4 people – for each recipe you will need 500g/1lb 2oz of carrots, either left whole if they are baby ones, or sliced into small erratic pieces – nothing too perfect.

Recipe: Olive Oil Crackers Recipe

What kind of cracker? The cracker recipe I'm featuring today makes thin, snappy, rustic crackers. Though they are sturdy enough to stand up to a hearty dip. The technique is simple and straightforward (utilizing just a few ingredients) and the dough is a welcoming canvas to all manner of seeds, salts, cheeses, spices, or flavored oils that you might want to use as accents.

Recipe: To make the perfect cracker, add cheese

If you think of crackers as little bits of pie crust, or fast-cooking bread, you quickly comprehend why they're so easy to make. Which only makes it more befuddling that no one does, since packaged crackers are universally overpriced and often contain ingredients with which you'd never cook.

Crackers can be made with just flour and water, but like almost everything else, they're better with richer ingredients. These, typically, are butter, oil and milk or cheese, or both, along with seeds, herbs and spices.

Blue Moon Pancakes ... Pancake tips

•Pancakes are ready to be turned when they are dry around the edges, the top is covered with bubbles and the underside is golden brown. Make a sacrificial first pancake to make sure your griddle is not too hot.

•After flipping the pancake, resist the temptation to press down on the pancake as if it were a hamburger on a grill.

•Pancakes are best eaten right off the griddle. But if you must keep them warm, arrange them in a single layer on a cookie sheet, uncovered, in a 200-degree oven. Never stack or cover them. The steam will make them soggy ...

Blood

Recipe: Black Pudding

Ingredients

1 litre blood of wild boar
oxtails
300g fat wild boar, cubed
1.5 large onions, diced
300g oatmeal, soaked
1 tbsp paprika
1 tbsp butter

Recipes: Sangue di Maiale

Two regional Italian recipes for pork-blood pudding.

TIPS FOR WORKING WITH PORK BLOOD
1. Gather the blood as it drains from the slashed throat of the pig.
2. Stir continually while the blood drains. This is to avoid clots. Clots affect the texture of the finished product which you want as smooth as a dense pudding.
3. It is preferred to use the traditional method of pig slaughter to gather blood. If you can't and have obtained blood from a slaughter house then be sure to strain it, before cooking.

Boudin noir — blood sausage — is one of France’s oldest charcuterie preparations. It’s part of a sausage making tradition in France that has lasted well over 2000 years. “There is evidence of the activities of the lardarius, the Gaulish charcutier, in a number of bas-reliefs and inscriptions found at Narbone, Bordeaux and Cologne, and at Rheims, where a bas-relief shows two of these specialists at work…. All the items of charcuterie shown in the relief are easily identifiable: [blood sausages], strings of sausage, joints of pork, pig’s heads.” Although the raising and subsequent slaughter of the family pig was common in the French provinces up to the Second World War, today few families in the countryside raise their own pigs …

Pad Thai

Recipe: Vegetarian Pad Thai

Recipe: Best Pad Thai

Recipe: Pad Thai (Thai Style Noodle Stir-Fry)

Pad Thai is a classic Thai Food dish and one that we eat a lot - a couple times per month. Tourists, when they come to Thailand know “Pad Thai” from the Thai food restaurants in their home country. They always seem to know to order this dish!

Recipe & Video: Thai-style Fried Noodles, "Pad Thai"

Pad Thai is often called the signature dish of Thai cuisine. There are several regional variations, indeed it has been said that Thailand has not only a different curry for every day of the year, but also a different pad Thai for every cook in Thailand! This is our variation, and please see our street vendor photos & video (below) for others.

Recipe: Pad Thai Recipe

This Pad Thai recipe is how you actually find it in Bangkok and comes from testing hundreds of different variations from food carts all over the city. Pad Thai is the ultimate street food. While "street food" may sound bad, food cart cooks are in such a competitive situation, with such limited space, ingredients and tools they need to specialize in a dish or two just to stay in business. The best of these cooks have cooked the same dish day-after-day, year-after-year, constantly perfecting it.

Great Pad Thai is dry and light bodied, with a fresh, complex, balanced flavor.

But nowadays, the name of Bosintang is widely used instead of Youngyangtang. Pumpkin

Article / Recipes: Thanksgiving: 20 things to do with a pumpkin.

The traditional side dishes that accompany the roasted bird may vary according to region but usually include sweet potatoes baked with either marshmallows or maple syrup; stuffing, known as “dressing”, and made with herbs, cornbread, wild rice, chillies, chestnuts or sausage depending on the state; New England cranberry relish as a tart foil to all the sweetness on the plate, and, for pudding, the acquired taste that is pumpkin pie.

Both pumpkin and butternut squash are versatile types of winter squash that can be sautéed, mashed or used in soups and curries.
