Hot Buttered Rum / Chai Concentrate / Suki Dry Noodles (สุกี้ยากี้แห้ง) /

Blog Post & Recipe: The Wednesday Tipple – Hot Buttered Rum

Mix the butter, sugar and cinnamon together and drop into the bottom of a mug. Add the rum, then top up with hot water

Blog Post & Recipe: Chai Concentrate

I’ve always boiled the spices directly in my milk, however I decided to try making a concentrated version with water. A concentrate is much more flexible, as you can mix it with milk or soy/nut milk.

Blog Post & Recipe: Suki Dry Noodles | สุกี้ยากี้แห้ง

Suki dry is composed of the same ingredients as Thai-style sukiyaki. You have bean thread noodles, which are now the base of the dish instead of being a supplement to the broth. You have thinly-sliced beef, pork, or whatever other protein you wish. You have an egg or two. And you have tons of vegetables.

Trimming Globe Artichokes / Fennel Gratin / Pad Thai

Blog Post: Turning (Trimming) Globe Artichokes

Judy Rogers said it before me: choose artichokes as you would flowers- make sure they look freshly picked and young, still about to blossom rather than spent and loosely formed. Hold the petal head in your hand and squeeze. It should sound crunchy. And feel heavy for its size.

Blog Post & Recipe: Fennel Gratin

Fennel is the most wonderfully versatile vegetable. You can slice raw fennel thin and serve it with a little shaved Parmesan for a crisp salad. Or you can plop it in the oven with a little balsamic and roast it until it gets sweetly caramelized. Fennel has a special affinity for Parmesan, and in this simple gratin fennel wedges are tossed with breadcrumbs, Mozzarella and Parm, and baked until golden brown.

Blog Posts & Recipe: Pad Thai Recipe (ผัดไทย) - Part Five: Making Pad Thai (This is the final part of the series. The other four parts are linked in the post.)

The immediate goal of this series is to facilitate you in creating the version of Pad Thai which I like, using the ingredients and method commonly employed by street vendors in Bangkok, my hometown. But that's just to get you started; it's not the ultimate goal. Eventually, you will want to get to a place where you can move the noodles around in the pan with the spatulas and know just how much longer it will take for them to cook, how often to stir them, whether the heat is too low or the evaporation rate is too high, how to season it, etc.

In other words, the ultimate goal is for you to know how to make Pad Thai which is different from how to follow a Pad Thai recipe.

Pumpkin Rice Noodles / Roasted Figs with Sage in Red Wine / Irish Ale Battered Fish & Chickpea Chips

Blog Post & Recipe: Pumpkin Rice Noodles

This pumpkin noodles with minced pork is one of my favorite noodle recipes. I love to order this at my favorite Taiwanese noodle house.

Blog Post & Recipe: Roasted Figs with Sage in Red Wine

To add to the earthy bite of roasted figs we snipped some fresh sage to the recipe. Wonderful, fragrant sage rounded off the roasted figs beautifully and the addition of some red wine really finished off the recipe perfectly.

Blog Post & Recipe: Irish Ale Battered Fish + Chickpea Chips

These chips are somewhat time-consuming upfront, but well worth the trouble. Totally delicious and marginally more healthy than potatoes because chickpeas are protein packed. In fact, you could make a meal out of the chickpea chips alone.

Peppers, Chillies & Calf’s Liver / Sour Noodles / Baba Ghanoush Soup

Recipe: Peppers, Chillies and Calf’s Liver

An easy stir fry of calf’s liver, red bell pepper, leeks, shallots and chillies.

Blog Post & Recipe: Sour Noodles

I set out to make a sour noodle after having a crazy sour broth at a Thai place last week. I dressed these noodles with a bunch of lime and a little sriracha and they came out sour and delicious.

Blog Post & Recipe: baba ghanoush soup + abundance

I love super garlicky baba ghanoush. It’s so flavourful and easy to make at home. This soup is no different. You kind of just roast everything off, combine the veg with some liquid and let it rip in the blender/food processor.

Roasted Garlic & Broad Bean Soup / An Interview with Nigel Slater + Summer Squash With Lemon & Mint / Stir-fried Starch Jelly Noodles

Blog Post & Recipe: Roasted Garlic & Broad Bean Soup & a Facelift

This is a simple soup made of broad beans, stock, milk, lemon zest and roasted garlic, nothing more apart from the garnish of paprika and olive oil. If you don’t have broad beans you can also use haricot beans.

Article & Recipe: Nigel Slater, the 'Tender' Cook [ via ]

My most surprising recent meal was at Trullo, a little restaurant that opened just down the road, where they had a strange thing on the menu I'd never had before: grilled ox heart. They cut it finely, grilled it quickly and served it with olive oil and some grated fresh horseradish

Summer Squash With Lemon and Mint

Blog Post & Recipe: Stir-fried Starch Jelly Noodles

Mung bean starch is a strange beast. I found it, at a whopping £3.99 at the Korean supermarket below Centrepoint, after reading Sunflower's post on making Sichuan liang fen (starch jelly) noodles. I had to have it; in her post, she says if you like rice noodles, you'll like these - I LOVE rice noodles.

Fried Lotus Root with Pork / Tasso Ham Gravy Over Chipotle Sweet Potato Biscuits & Collard Greens / 3 Recipes Using Wheatless Noodles

Blog Post & Recipe: Fried Lotus Root with Pork

4. On a slice of lotus root, place a teaspoon of the filling and spread. Put another slice of lotus root on top and press down to make a sandwich.

Blog Post & Recipe: Tasso Ham Gravy Over Chipotle Sweet Potato Biscuits and Collard Greens [via]

Slice open those beautiful biscuits. Scramble up some eggs, and lay a few slices of the tasso ham right on top. Drown in gravy and serve with a big helping of collards.

Article & Recipes: 'No Wheat' Doesn't Mean 'No Noodles'

But if you take a drive (a short one, I hope) to the nearest Asian grocery, there you will find enough wheat-free noodles to feed a gluten-intolerant army. There are mung bean noodles. There are rice noodles. There are sweet potato starch noodles.

Wash the fresh Liver with water and drain. Add white vinegar to it, mix well. This step is done to get rid of any unpleasant odor.

Article & Recipes: Sweet And Spicy Flavors Of Northern Thailand

Working my way through each recipe, I found myself adding similar ingredients each time: oyster sauce, fish sauce, chili, coconut sugar and lime.

Blog Post & Recipe: How to cook perfect quiche lorraine

The Good Food recipe also commits the dreadful sin of including cheese in its filling – to be fair, this is a foodie shibboleth with some legs, if Elizabeth David was able to observe back in 1960, that, although Parisian and English cooks often add Gruyère, "Lorrainers will tell you that this is not the true quiche lorraine, whose history goes back at least as far as the sixteenth century."

4 Spanish Recipes / Sunshine Barbecue Chicken / Eggplant Manicotti & 2 Other Recipes

Blog Post & Recipes: My Recipes published at DELICOOKS, and 4 delicious recipes for you to celebrate 3 Years of Blogging!

My Personal Spanish Menu (desserts not included)

Snail and mint Tapa ... Zucchini puree with Iberian Acorn ham ... Potatoes stuffed with Butifarra and grated with Allioli ... Toasted noodles with Palamós fresh shrimps

Blog Post & Recipe: Sunshine Barbecue Chicken

[This bbq sauce is] pretty undutch but at the same time it’s also a lot like our Dutch piccalilli, only in a sweeter jacket and with different vegetables. Very unlike anything I’ve ever tasted in combination with bbq chicken.

Blog Post & Recipes: Deliciously Upsided Down Dinners

I have an awesome new cookbook that I'll be raving about very soon and this Eggplant Manicotti caught my eye. The funny thing is... there is no real manicotti. The "pasta" is actually slices of eggplant with a very tasty filling.

Eggplant Manicotti ... Seared Lamb Chops with Sage, Anchovies & Capers ... Herb & Garlic Orzo

nb. M., I'm introducing your 'concept' tag.
Concept: eggplant in place of manicotti, or canneloni, pasta.

Fried Egg with Burnt Sage Butter, Chilli & Garlicky Yoghurt / Scones / Teriyaki Tofu Noodle Bowl

Blog Post & Recipe: Skye Gyngell’s fried egg with burnt sage butter, chilli and garlicky yoghurt

Gyngell gives this rather useless (and weirdly pornographic) advice about how to tell whether your eggs are fresh: ‘Very fresh eggs have bright, shiny yolks that sit proudly on top of bouncy, thick whites as you crack them into the pan.'

Article & Recipe: How to bake the perfect scone

For some tips on how to turn leaden rocks into luscious scones I turned to the organisation responsible for producing tens of thousands of them each year at the Sydney and Melbourne agricultural shows, The Country Women’s Association

Blog Post & Recipe: Teriyaki Tofu Noodle Bowl

Teriyaki sauce is really easy to make at home. Just whisk together sugar, mirin and sake (or vinegar), and let it boil to thicken. You can use this sauce as a marinade on vegetables, brush it over anything you are grilling, or toss it in some rice or noodles.

Sopa de Carne / Roasted Mango & Habanero Salsa / 7 Chinese & Filipino Recipes

Blog Post & Recipe: Sopa de Carne

While the beef and olives impart rich and bold flavors, the soup is broth-y and unexpectedly light. It doesn’t look or feel greasy.

Blog Post & Recipe: Roasted Mango and Habanero Salsa

Of course, there was a little thinking required about what to actually do with this salsa. (As if eating this intensely sweet concoction balanced with just the right amount of fire with a spoon out of the food processor wasn’t good enough.)

Calibrate a Meat Thermometer / Roasted Red Pepper & Squash Soup / Ginger Scallion Noodles

Blog Post & Recipe: How to Calibrate a Meat Thermometer

The goal is to get your thermometer to verify a temperature you can already recognize without even using it—namely, freezing point (32°F) or boiling point (212°F).

Blog Post & Recipe: Roasted Red Pepper and Squash Soup

This is a very simple soup, with only 4 ingredients, but the results are beyond simple. Freshly roasted peppers are combines with sweet squash (butternut, buttercup, etc) with a flavourful stock and an onion, and you have a powerful soup.

Blog Post & Recipe: Cooking for Others: My Noodle Obsession

The noodles themselves are silky and deeply tasty, though the individual flavors of scallion and of ginger sort of melt away into a greater whole. They take well to practically any vegetable, protein, or seasoning sprinkled on top ...

Ginger Scallion Noodles ... Grilled Eggplant ... Picked Radishes, Carrots, or Cucumbers ... Bok Choy ... Fried Egg

No-Rice Risotto with Chard / Filipino Fried Noodles / Five Halloumi Recipes

Blog Post & Recipe: No-Rice Risotto with Chard

We used canned cannellini beans! It turned out to be the quickest risotto we had ever made. And it tasted really good too. You could do a lot more with this recipe: not using canned beans, adding white wine and maybe some more greens ...

Recipe: Recipe of the Day: Filipino Fried Noodles (Pancit)

In the Filipino vernacular, pancit simply refers to noodles. This version (pancit bam-i) uses both rice vermicelli (bihon) and Chinese wheat noodles (pancit canton), but you can make the dish with either type of noodle, or flat egg noodles (pancit miki) and cellophane noodles (sotanghon).

Deep Fried Anchovies / Wine-Stewed Prunes / Vietnamese Lamb & Noodles

Blog Post & Recipe: Vietnamese Lamb and Noodles

The noodles were treated to the marinade the lamb had been sitting in [...] The marinade had created very succulent chops thanks to the lime, with the slight sweetness to it melding seemlessly, and beautifully, with the chilli and soy flavors bringing up the rear.

This is a very simple recipe for yummy sesame noodles. You can eat them by themselves. You can pair them with delicious roasted beef tenderloin. You can load them with red bell pepper, fresh cilantro, or cooked, chopped shrimp. I love them just the way they are.

Blog Post: Homemade Take-Out: How to Make a Thick Stir Fry Sauce

In his book How to Cook Everything Vegetarian, Mark Bittman recommends mixing 1-2 tablespoons of cornstarch with the same amount of water, and tossing this into the stir fry just when it's almost done. It thickens in seconds, picking up the flavors of everything already in the dish and coating evenly.

Stir Fried Glass Noodles. How to Salt. Vegetable Risotto.

Recipe: stir fried glass noodles ...or Pad Woon Sen in Thai...

Grew up in the combination of cultures, I've adopted many Chinese dishes into my own taste. I added some chilies to this one so that it tasted a bit spicy.

Article & Recipe: Vegetable risotto with bacon

Cook's tips:

* You can substitute leeks for the celery.
* For single serves, spoon the mixture into large ramekins before topping with cheese.
* Sliced mushrooms can be used in the topping before adding the cheese.
* I keep dried mushrooms on hand; they can be quickly reconstituted and are an excellent standby.

Blog Post & Recipe: Is It Better to Salt Intermittently While Cooking or Just Once?

So instead of giving us one rule, the experts we consulted advised us to consider what we’re cooking and what outcome we’re looking for.

For example, if you’re sweating vegetables, you should add salt intermittently to help leech out the moisture, says Lauren Martey, a research and development chef for Diamond Crystal Salt. But if you’re caramelizing onions or browning mushrooms you don’t want to draw out moisture, for a better caramelization of the sugars, so you should wait until the end to salt ...

Sour Cherry Slab Pie. Sambal Belacan. Pad Thai.

Blog Post & Recipe: sour cherry slab pie

... not two minutes after I discovered the existence of slab pie, I was fixing to make it. Why? Because it looks like a giant Pop Tart, and surely you don’t think a woman in her third trimester needs a single other reason to bake something.

Blog Post & Recipe: Sambal Belacan

I thought I would show you how to make sambal belacan from scratch–a must-have Malaysian condiment and the basic building block for many delicious Malaysian recipes.

Sambal belacan consists of chilies, belacan (Malaysian shrimp paste), kalamansi lime (limau kasturi), and salt and sugar (to taste or optional). In the US, kalamansi lime is scarce so lime can be used as a substitute.

Penang cubic noodles, known as char kuih kark (with many variations of spelling depending on Chinese dialect group), act as a poor man's version of the daikon rice cakes served in dim sum restaurants: hawkers stalls make the noodles without daikon.
