Now assemble the sandwich: first you put the tomato slices on the bread, if there are any juices, drizzle these on the bread before putting the tomato on it. Salt it. Then you put the egg on that and finish with adding a little salt and drizzling the herb oil over it all.

Blog Post & Recipe: Ricotta Millet Pudding

This deliciously creamy dessert references familiar dishes like rice pudding and coeur a la creme but manages to also maintain a unique identity. It is fresh, creamy, lemony, and perfect for spring. The warm raspberry sauce poured over the cold pudding is absolutely delightful.

Recipe: Yotam Ottolenghi's mushrooms, garlic and shallots with lemon ricotta recipe

You don't need much more, though a chunk of sourdough would not go amiss. To help with the peeling, soak the shallots and garlic in water for half an hour.

Blog Post & Recipe: Souvlaki Chicken Salad Sandwich with Roasted Red Peppers and Feta

I skimmed the fat from the top, warmed them up and added them to the chicken salad. From there I added some things that I often add to my chicken souvlaki gyros, namely some roasted red pepper, red onion, tzatziki and feta.

Ricotta tart / Homemade Ketchup / Dashi-Simmered Eel.

Blog Post & Recipe: The new vegetarian: Ricotta tart

Think of this as a savoury baked cheesecake, only not as rich. It is brilliantly light, in fact, and would make a wholesome lunch with a leafy salad.

Blog Post & Recipe: Homemade Ketchup and French Fries

I settled on a recipe by Hugh Fearnley-Whittingstall. He's the mastermind behind Britain's River Cottage, a series of TV shows and books. His enthusiasm for ketchup is infectious.

Blog Post & Recipe: The Nasty Bits: Dashi-Simmered Eel

In Shanghai, eel and pork are common combinations in a red-braised dish. I prefer to use dashi in place of water and sake in place of Chinese rice wine. Perhaps it's all the umami from the kelp in the stock, but a Chinese red braise never quite tastes as savory to me as that made with dashi.

Here's a little secret: olive oil-packed canned tuna, chili pepper flakes, and pasta is a master combination [...] Regarding tuna packed in water, I've tried it and believe me, it doesn't work (dry, tastes bad). You need to use tuna packed in olive oil.

Mushroom Pizzettas. Homemade Ricotta. Homemade Paneer. Homemade Queso Blanco.

Blog Post & Recipe: Portobello Mushroom Pizzettas

I saw some beautiful portobello mushrooms at Trader Joe's and instantly thought they would make tasty pizzas or pizzettas. My kids were very excited to make their own creations. It was extremely easy to make and loads of fun for my kids. We all chose our own toppings ...

A similar recipe:
Blog Post & Recipe Portabella Pizza

I piled it high with diced zucchini, onions, and a heirloom tomato. I tossed some Italian turkey sausage in, just about 1/3 cup, then I added some Penzeys Pizza seasoning and salt, tossed it again. The secret to loading the caps is to use your hands…that way you can press it firmly into the caps and really pile it on high.

Blog Post & Recipe: Homemade Ricotta Cheese

But for those of us that occasionally make recipes calling for a large amount of ricotta, there aren't any 2-pound tubs available, just tiny plastic containers in the supermarket. [...] Making ricotta really is easy and for the price of a quart or two of milk, you can have a lovely mound of freshly-made, still-warm ricotta with very little effort.

Blog Post & Recipe: Paneer

You just bring some whole milk to a boil, mix in an acid such as lemon juice and let the milk curdle. After it has curdled you drain the liquid, form the curds into a block in some cheese cloth or muslin and let it sit with a heavy weight on it for a few hours. At this point you have a brick of fresh paneer cheese ...

One poster afterwards adds:

I believe the only difference between paneer and ricotta is that the paneer has been pressed and more water has been removed.

A few days later I added this because it seemed sensible to have all these cheeses together:

Blog Post & Recipe: Making Queso Blanco with goat milk

Today I am going to show you how to make an acid precipitated cheese called Queso Blanco. This is similar to paneer (Indian Cuisine) and is quite popular in latino cooking. We also have Queso Fresco which is different.

And later, this:

Blog Post & Recipe: I am a Queso Cabeza...Fromage la Tete...Cheese Head

Queso Blanco is a fresh cheese, made from direct acidification (adding acid to the milk). It is then drained &/or pressed into shape. This makes it a great crumbling cheese...but it doesn't melt! So, you can fry it up in a pan ...

Pasta with Ricotta. Sauteed Carrots with Honey. Pasta with Turkish-Style Beef, Eggplant, Yogurt.

Blog Post & Recipe: loving cousin rosa

If you’re in the mood to experiment [cookbook author] Rosa [Mitchell] recommends trying it with pesto and parmesan or diced ripe tomatoes and basil, or with bacon peas and parmesan. But she’s right that the ricotta alone is mighty fine ...

our cousin rosa’s pasta with ricotta

Blog Post & Recipe: sauteed carrots with honey & rosemary

For this recipe, I simply peeled the carrots and quartered them length wise. I then just tossed them in a pan with olive oil [...] and let them get a little brown and crispy on the outside. Meanwhile, I picked a sprig of fresh rosemary from my fire escape garden (yay!) and chopped it up nice and fine. When the carrots were golden on all sides, I added a little butter, some honey and the chopped rosemary ...

Blog Post & Recipe: Melissa Clark's Pasta with Turkish-Style Beef, Eggplant and Yogurt Sauce

What you do is roast eggplant at very high heat - a nice little trick in and of itself, since you end up with meltingly soft on the inside, super-crisp on the outside, addictive little eggplant cubes - and then combine that with sauteed ground beef flavored with shallots, minced garlic and a generous amount of Aleppo pepper. [...] You serve that mixture over boiled pasta (orecchiette would be best) and top it off with browned butter and garlicky yogurt.

Article & Recipes: The Kitchen Thinker: making your own ricotta

I say it is one of the easiest things in the world, far easier than boiling an egg accurately ...

True ricotta – which means twice-cooked in Italian – is made from the rich whey left over from cheese-making (the ricotta-making process in turn creates more curds – the ricotta – and more whey, which is now exceedingly watery). Those of us without access to large volumes of rich whey can make a good approximation from whole milk cooked together with some kind of souring agent – vinegar, yogurt, buttermilk or lemon.
