Soy & Star Anise Oxtail / Horchata / Beetroot Salad with Crispy Leeks & Bacon

Blog Post & Recipe: Soy & Star Anise Oxtail

The oxtail needs cooking slow and low to ensure the is meat that can be sucked off the bone perfect with the spicy sticky sauce but definitely have some napkins handy .

Blog Post & Recipe: Bringing Mexico Home: Horchata

Variations include almonds, lime zest, or even pecans and popcorn. Momofuku Milk Bar serves a Horchata Soft Serve Ice Cream with Cinnamon. And adding a dash of Tequila can improve its already soothing qualities.

Blog Post & Recipe: Beet Salad with Crispy Leeks and Bacon

I decided to take a different route when recreating this dish at home. Instead of chicken skin, I used bacon, and instead of frying it stovetop, I used it to help make the leeks extra crispy in the oven. After a few minutes roasting together, the leeks begin to caramelize in the bacon fat, and the result is a rather rich smoky dressing for your beets.

Yorkshire Pudding / Leek and Herb Quiche / 3 Turkey Sandwiches

Blog Post & Recipe: Yorkshire Pudding

One of the tricks to get the Yorkshire pudding to rise well and to not fall is to bake it in a very hot oven and you can preheat the pan in addition to the oven to take it one step further ...

dm said... What's also nice is making it so it is shaped like a large bowl which you can then fill with a stew, meat or veggie.

Blog Post & Recipe: Leek and Herb tart

There’s a few things that really make the difference between a soggy sponge-like thing and a crisp, buttery comfort food. The pastry - it's got to be short, really short, like, leprechaun short.

Article & Recipes: The turkey sandwich reinvented

On the construction of a sandwich, he says: "When you bite into it you should taste the bread, but by the time the top of your mouth meets the bottom you get meat and cheese with every bite. Every bite of sandwich should be the same bite."

Braised Brisket / 4 Confits / Prawn & Lemon Zest Soup

Recipe: Braised Brisket

You can also do this in a slow cooker.

Blog Post & Recipes: Vegetable Confit

This process can be applied to many other foods. Just keep these two guidelines in mind:

- Fully cover the food with fat (duck fat, olive oil, grapeseed oil, bacon fat…)
- Cook at low heat for a long time (no higher than 250ºF, 2-10 hours)

Cherry Tomato Confit ... Garlic Confit ... Bonus recipes: pearl onion confit and leek confit

Blog Post & Recipe: Shrimp & lemon zest soup

This was way, WAY more than the sum of its parts, and it’s all due to the the lemon zest. While the parsley garnish was good, chopped tarragon or chervil would be even better. I’d also consider making a dedicated tomato and shrimp shell broth with a tiny pinch of saffron.

Barbounofassoula (Stewed Borlotti Beans) / Roasted Jerusalem Artichokes with Lemon, Parmesan Cheese & Parsley / Lemony Leeks with Chickpeas & Feta

Blog Post & Recipe: Fassolia Ηantres Giahni or Barbounofassoula (Stewed Borlotti Beans)

This is one of the dishes I enjoy as they are delicious, with a meatier texture than common beans and a good source of protein and fibre

Blog Post & Recipe: Roasted Jerusalem artichokes (sunchokes) with lemon, Parmesan cheese and parsley

Scrub your vegetables really well. Do not peel, but cut in halves or quarters depending on their size. Par-boil or steam for about 10 minutes, until crispy tender ...

Blog Post & Recipe: Meatless Mondays with Martha Stewart - Lemony Leeks with Chickpeas and Feta

Guess what happens when you put a bunch of leeks in a pan with some veggie broth? Surprisingly, a totally mind-blowing flavour fest. Then guess what happens when you add lemon zest, dill, garlic, olive oil, goat feta, chickpeas, and lots of cracked black pepper?

Chicken, Leek & Fennel Pie with Cream Cheese Pastry / Roast Beetroot & Chickpea Salad / Pandan Lamingtons

Blog Post & Recipe: Chicken, Leek and Fennel Pie with Cream Cheese Pastry

Recipe adapted from Maggi Beer’s Chicken, Grape and Champagne Pie (from the cookbook Maggi’s Kitchen and online).

Blog Post & Recipe: Roasted Beet & Chickpea Salad

This is an easy salad and was delicious at room temperature or cold from the fridge. The fresh mint goes really nicely with the earthy flavor of the sweet beets.

Blog Post & Recipe: Pandan Lamingtons

I adapted a recipe for plain lamingtons by adding some pandan essence paste to the sponge cake. It was quite convenient that the recipe used a chocolate ganache rather than a cocoa icing for the coating, as I was able to switch it to white chocolate ganache which was a much better match for that lovely soft & fluffy green pandan cake.

Cabbage Rolls / Eggs Benedict with BBQ Hollandaise / Leek Toasts with Blue Cheese

Blog Post & Recipe: Cabbage rolls [via]

Delicious cabbage rolls using leftover rice and that cabbage that has been in the fridge for a while.

Blog Post & Recipe: Eggs Benedict with BBQ Hollandaise [via]

For those of you skilled with making hollandaise, go ahead with your traditional method on the stovetop and just add in the BBQ flavorings listed

Blog Post & Recipe: leek toasts with blue cheese

I was all set to slow-caramelize the leeks as I would onions when I came upon Molly Wizenberg’s recipe for Leek Confit in Bon Appetit and decided it sounded much more straightforward. I’ve tweaked it a bit — less butter, some swapped for oil, as I didn’t need the full richness of a confit, I leave the leeks wet rather than adding water, etc. — but the basic cooking technique is the same, and it’s a cinch. This would also make a wonderful filling for a crepe or omelet, or with a poached egg on top

Braised Leeks with Goat's Curd / Chinese Braised Soy Sauce Eggs / Foccaccia / 13 US Bread Puddings

Recipe: Yotam Ottolenghi's braised leeks with goat's curd recipe

Leeks are normally given the job of flavouring other things, such as stocks and soups, but I find their creaminess and sweet, oniony flavour very satisfying.

Blog Post & Recipe: Chinese Braised Soy Sauce Eggs

I promised you my Chinese braised soy sauce eggs recipe (滷蛋) in the Taiwanese scallion oil noodles (葱油拌面) post, so here you go. This is a super easy recipe, and the best thing is that you can save the braising soy sauce stock (滷水汁) in the fridge and re-use it again to make the eggs or even tofu

Article & Recipes & Photo Gallery: California Cook: Focaccia as it was meant to be

I had a blob of already-made dough sitting in the freezer. After defrosting, I just stretched it into a well-oiled jellyroll pan (a generous hand with the olive oil gives a crisper crust), then scattered a half pound of crumbled Gorgonzola on top and baked it. That was all there was to it.

Braised Leeks / Quince Paste / Turkey Tamales with Guajillo-Cranberry Mole

Blog Post & Recipe: Braised Leeks

Try to buy leeks with as long and as white a shank as possible. If you can only find ones with short shanks that are mostly green, don't buy them

Blog Post & Recipe: Quincey Jones

But cook it like a jam and the fruit is transformed into a delicious paste/jelly that is simply sensational with good cheese, cold meats or a baste for a leg of lamb or even a fruity addition to a stock or gravy.

Quince Cheese (Membrillo)

Blog Post & Recipe: Turkey tamales with guajillo-cranberry mole

Turkey tamales are usually made with one of two salsas, either a tangy tomatillo or a rich mole ... I find that smoked turkey goes especially well with a zesty salsa verde, but nothing beats roasted turkey paired with the earthy bittersweet flavor of mole—it’s a classic combination.

Care for Your Knives / Roasted Radishes / Greek Mushroom Pie with Leeks

Blog Post: How to Take Care of Your Knives

Yes, it's nice to have an impressive arsenal of knives at your disposal, but for most home cooks, there are three that are truly important: a chef's knife, a paring knife, and a serrated bread knife.

Article & Recipe: Roasted Radishes: So Who Knew?

Look under 'Related' for the link to the recipe.

I gave it a try, roasting a bunch of halved radishes in a hot oven with plenty of butter and lemon juice. One mouthful, and I immediately got the appeal. Instead of spicy, crisp and crunchy, these radishes were sweet, succulent and mellow, vaguely like turnips but with a softer bite.

Blog Post & Recipe: Manitaropita me Prassa (Homemade Greek Mushroom Pie with Leeks)

I sauteed the leeks first, together with garlic and spring onions and cooked them with balsamic vinegar until they were soft. I used two kinds of mushrooms: white portobello and white agaricus (button mushrooms). I added fresh rosemary which matches well with mushrooms and as the mushrooms released a lot of fluids, I added some flour to absorb the juices.

Peas and Onions / Leek Bread Pudding / Miso Vegetables & Tofu

Blog Post & Recipe: Simple Peas and Onions

And if I have a spare minute I'll snip a leaf or two of mint from the yard, slice it thin and add to the peas.

Blog Post & Recipe: leek bread pudding

For this savory take on bread pudding, the leeks are sliced in pretty, pretty coins then cooked slowly in butter until soft and caramelized enough to bring tears to your eyes ... From there, you build a fairly standard savory bread pudding: toasted bread cubes, shredded cheese, herbs and a mix of milk or cream and eggs.

Blog Post & Recipe: Miso Vegetables & Tofu Recipe

Eight ingredients and a few simple steps come together into something special ... Harumi makes a seductively colorful side dish by dressing lightly blanched green beans, broccoli, and cauliflower in a salty-sweet miso dressing. I wanted to make a one-dish meal based on this general idea.

Mole Sauce. Dijon et Poireaux Vinaigrette. Lemon Confit.

Blog Post & Recipe: Serious Heat: Silky, Spicy Mole Sauce

The sauce should have a subtle but definite heat and enough salt to bring out the diverse flavors. If the sauce needs to be spicier, add some of the reserved chile seeds or add a low-acid hot sauce

Blog Post & Recipe: Dijon et Poireaux Vinaigrette

Poireaux vinaigrette is another Burgundian classic, combining leeks (usually poached or boiled) with a dressing made from local Dijon mustard. Tangy and full-flavoured, it would provide an excellent lead-in to a rich, winey stew.

Blog Post & Recipe: Lemon Confit

If you don't know, "confit" simply means to preserve or enhance the flavor of a food by packing it a substance. Typically, that substance is fat, sugar or salt. Duck confit, for instance, is duck that has been cooked in duck fat, which enhances its flavor.

Fruits and vegetables can be confited by packing them in sugar or salt. Such is the case with this preparation of Lemon Confit.

Burgers. Ferhoodled Sausage. Butter Beans and Leeks.

Recipe: Creamy Butter Beans and Leeks

Butter beans have a sweet, buttery taste and are wonderfully tender. Not to be confused with lima beans, as lima beans are green and not as aromatic and tender as butter beans.

Recipe: Deliciously ferhoodled

Ferhoodled is a wonderful Pennsylvanian Dutch word meaning "all mixed up". In this recipe, sausage patties are mixed with rice and vegetables in a one-pan dinner. You prepare the next ingredient while the previous one cooks ...

Blog Post & Recipe: Poireaux aux moutarde et crème fraiche (Leeks with mustard and crème fraiche)

Though grown year-round, leeks are traditionally used in hearty winter soups and stews, from pot au feu to potage bonne femme. Steamed and served at room temperature with a sharp, mustardy vinaigrette, they could almost pass as a warm-weather starter.

Blog Post & Recipe: Slashed Chicken with Herb Butter. When Jeff makes this, that man owns me.

With a slashed chicken, you slice into the chicken in key places so that the flavors don’t just sit on top of the skin, they get into the meat. You massage the herb butter into those cuts, and then you stuff them with bay leaves and sliced garlic. By the time you close the oven door, the chicken inside is literally bursting ...

Sardines and Spaghetti. Leek and Zucchini Soup. Noodle Soup.

Blog Post & Recipe: Dinner Tonight: Venetian Spaghetti with Sardines

Not that there are any clams to be found—just the ultrahealthy and ultracheap sardine, onions, and a little milk which almost melt to combine as a gently flavored and slightly thick sauce. It coats the pasta beautifully.

Blog Post & Recipe: cream of leek & zucchini soup

... the flavor was perfect, the creaminess lent it a satisfying richness, and the zucchini made me feel like I was eating something reasonably healthy. A small cup was the perfect amount for a light lunch.

What it is: a tasty, fast, cheap, infinitely variable broth-and-noodle combination. Its preparation is slowed down only by waiting for the water to boil.

A key ingredient is ketchup; if you can’t bear that thought, you can use tomato paste instead. There’s also sriracha, the Southeast Asian hot sauce; and soy sauce; vinegar; and sesame oil, all of which add character. The noodles I use are fresh egg pasta, but just about any kind of noodle can be used ...
