Chicken, White Bean, and Poblano Stew / Peppermint Ice Blended Mocha / Vinegar-Glazed Chicken

Blog Post & Recipe: Chicken, White Bean, and Poblano Stew

There’s nothing fancy to this stew but it’s pretty easy to throw together, is really filling, and a big hit in our family.

Blog Post & Recipe: Peppermint Ice Blended Mocha

I think I had about half a gallon of hot chocolate leftover, so for an extremely nutritious (and diabetic friendly) breakfast, I infused it with some candy canes and then blended it with ice cream, coffee powder and garnished it with an unhealthy dollop of whipped cream.

Blog Post & Recipe: Vinegar-Glazed Chicken

Unlike white rice vinegar, Chinese black vinegar from northern China is an aged vinegar made from black glutinous rice, wheat, millet, or sorghum.. (The Gold Plum version from the city of Zhenjiang in Jiangsu province, made with glutinous rice, is considered the premier brand.) The flavor resembles that of balsamic vinegar. It’s slightly sweet with a barely detectable smokiness [...] I frequently recommend in my recipes a good-quality balsamic vinegar as a substitute if you can’t find Chinese black vinegar. But the same could be said opposite, that if you run out of balsamic vinegar you can use Chinese black vinegar.

Fasoulia Nashfe: Lamb & White Bean Stew / Cool Rhubarb Glögg / Duck in Port

Blog Post & Recipe: Fasoulia Nashfe: Lamb and White Bean Stew

This fasoulia nashfe is one of my favorite family recipes, and one that has traveled with me to four continents: tender lamb, soft cannellini beans and a rich tomato sauce seasoned in the signature Arab way, with plenty of cinnamon, garlic and baharat.

Blog Post & Recipe: Finnish Christmas with a Twist: Cool rhubarb glögg

I adore rhubarb, I'm sure you've realised that by now, and this drink is for all you die-hard rhubarb lovers out there. It's completely sugar-free, so prepare yourself for some real rhubarb flavour pared with warming spices and a drizzle of lemon juice to freshen it all up.

Blog Post & Recipe: Duck in Port

I also recommend using all the parts that come with. The liver can be chopped up and sautéd with shallots, coriander and cumin. Seasoned with lime and cilantro and you have a perfect appetizer. The neck (head and feet) and rest of the giblets make a great base for a stock (see below).

Baigan Bharta (Punjabi Eggplant Curry) / White Bean & Red Curry Soup in Coconut Milk / Roasted Lemon Chutney

Blog Post & Recipe: Baigan Bharta (Punjabi Eggplant Curry): Virtue Out of Necessity

The recipe below – baigan bhartha – makes use of eggplant’s previously unappreciated attribute of being able to bind a sauce. Like its nightshade cousin the tomato, eggplant seems as comfortable in this role as any other we’ve tried with it. The smoky flavor gained through roasting is quite startling

Blog Post & Recipe: White Bean and Red Curry Soup in Coconut Milk - An MLLA Guest Post from Courtney of Coco Cooks

To achieve the creaminess I adore in chowders and bisques, I knew there would be coconut milk as a base. I then got to thinking of my beloved Thai soups and decided red curry would add the heat. The richness and fullness would come from white cannellini beans pureed to give structure. And the finish, influenced by the Thai culture again, would be squirt of lime and cilantro finished with drops of red chili oil.

Blog Post & Recipe: Roasted Lemon Chutney Recipe

I slathered the chutney on thick slabs of toasted bread with a good amount of whipped goat cheese - that's what you see in the photos. But really, there are so many other things you can do with it. A couple ideas: a dollop stirred into brown rice, chopped sauteed spinach, topped with a fried/poached egg and a touch of soy sauce. Or incorporated into a hot pasta bowl. Or, inside a savory crepe. Or, tossed with hot roasted potatoes, or baked potatoes. You get the idea.

Fava Bean Puree / Greek-Style Lamb Burgers / Chorizo & White Bean Soup with Queso Fresco

Blog Post & Recipe: Fava Bean Puree, Pat and "The Chew"

No, this isn't hummus. It's what you might call the Italian equivalent though - fava bean puree, made with dried fava beans.

Blog Post & Recipe: Greek-Style Lamb Burgers

If you like Greek food, you'll love these warm toasted pitas stuffed with flavorful ground lamb patties, tzatziki, feta and fresh vegetables

Blog Post & Recipe: Chorizo & White Bean Soup with Queso Fresco

The chorizo flavored the broth with its spicy smoky flavor and made me really happy. I made a big pot and froze it in serving-size containers, so each time I made it I experimented with toppings. I tried grated mozzarella with a sprinkle of minced Italian parsley, which was good. But the dollops of salty, crumbly Queso Fresco cheese with minced cilantro and basil sprinkled over the top was the best.

Vegetarian Mushroom & Cannellini Bean Ragout / Pumpkin Chili with Cornbread Smudges / Fried Green Tomatoes

The ragout can be made up to 2 days in advance. Store, covered, in the refrigerator. Reheat before serving.

Recipe: pumpkin chili with cornbread smudges

The corn "smudges", as I've dubbed them, were an attempt to make cornbread flavored crackers... they tasted great with the chili, but be warned, they aren't crispy crackers.

Making Tortillas / Grilled Vegetables with Balsamic Vinaigrette / White Beans, Sweet Potato & Spinach Tacos

Blog Post & Recipes: Making Tortillas

It is important to note that you will save yourself a lot, a lot, a lot of heartbreak and broken tortillas by lining the top and bottom of your press or pin with plastic wrap, parchment paper or baggies. Especially when working with the stickier dough for flour tortillas, any time saved by skipping this step is just not worth it.

Blog Popst & Recipe: Meatless Monday: Grilled Vegetables with Balsamic Vinaigrette

I’ve started grilling mass quantities of vegetables every few days and keeping them in the fridge, so they’re always ready to go. Making an omelet? Why not throw in some grilled onions, peppers and mushrooms. Need a quick lunch? How about some grilled vegetables and tzatziki in a pita? Add them to fajitas or pasta. Or, warm up the vegetables, and add some crumbled goat cheese for a big grilled vegetable salad.

Blog Post & Recipe: White Beans, Sweet Potato, and Spinach Tacos - A Guest Post by Joanne Bruno of Eats Well with Others

You see, you cook this pound of beans. And then you have dinner halfway prepared for every night of the week! You can throw the beans in salads or pasta or soup! Or my new favorite, which is to grab whatever greens I got in my CSA this week (and we all know that we're all getting greens aplenty in our CSA's. Don't even try to pretend otherwise.), wilt them down and saute them. Mix in my bean-of-choice for the week along with a roasted root vegetable. Season with smoked paprika and chipotle chile powder. Throw into a tortilla shell. Call it a taco or burrito or tostada or whatever Mexican dish pops into your head at that moment. And voila.

Concept: Grilled vegetables kept in the fridge. Line "the top and bottom of your press or pin with plastic wrap, parchment paper or baggies" when making tortillas.

White Bean Hummus & Cooking Navy Beans / Cook Perfect Beans / Sweet Chilli Seafood Ramen

Blog Post & Recipe: white bean hummus

Last week I had a hummus craving, but was fresh out of chickpeas. I looked at the silky white beans in the fridge, with a thick slick of olive oil on top and thought "why not".

A Not So Simple Pot of Beans

Blog Post & Recipe: The Best Way: Perfect Beans, Every Time

My trusted method is actually a mash-up of two, the Baking Soda Soak and the Oven Method. Both have their proponents and their sceptics, but I think together they make the perfect bean; the baking soda scrapes time off the simmering process, and the oven mimics the slow, pressure-cooked texture of canned beans.

Blog Post & Recipe: On the slurping noises – Sweet chilli seafood ramen {8}

Add a handful of scallops and prawns. While they caramelise, chop a chilli pepper and a couple of spring onions. Throw them along with the seafood. Grate a fat piece of ginger, the zest of one lime and a few garlic cloves over the pan and give it a good shake. Deglaze with half a litre of water and bring to the boil.

Cod & White Bean Stew / Chicken Stock / Duck Charcuterie 5 Ways

Blog Post & Recipe: stew & snow

and it's versatile - throw in whatever combinations of vegetables, beans, grains and fish you have on hand.

Cod & White Bean Stew

Blog Post & Recipe: homemade chicken stock

Sometimes I do it with odds and ends from a chicken: wings, neck, gizzards, other random bits. But most often, and by far my favorite way to make stock – is to use 2 carcasses of roasted chickens

Article & Recipes & Video: Duck Charcuterie 5 Ways (and Recipes).

The tender "center cuts" (breast, tenderloin, etc.) are not the only parts worth eating; in fact they are often not even the best. In the case of duck, it's a great gateway cooking experience to full on nose-to-tail: all of the parts are delicious and easy to prepare, it just takes a little time. Watch this video to see ducks turned into sausage, pate, rillette, stock, prosciutto, and confit and check out the Ruhlman/Henderson/Keller influenced recipes.

The young spring shoots (that appear from April [in the UK]) can be eaten much like asparagus. Cut the first 20cm growth, remove any leaves and steam it as you would asparagus. As the seasons progress eat the leaves and the unopened flower buds as a broccoli substitute. These will merrily self-seed if left alone.

Water for Dough & Peasant Bread / Baked Apples / Chard & White Bean Stew

Article & Recipe: 52 Loaves

It’s true; I’d just read that bread must be made with spring water, for chlorine and other impurities found in municipal water inhibit yeast activity.

Building a Levain ... Peasant Bread (Pain de Campagne)

Recipe: Baked apples recipe

You could also add chopped pieces of your favourite dried fruits to the stuffing, from apricots to prunes, making this the tastiest way to use up all the bits and bobs at the back of the kitchen cupboard.

Blog Post & Recipe: chard and white bean stew

I know that unless you are a tomato and white bean junkie, as I am, the prospect of a bowl of sloshy stew built on their foundation doesn’t sound very appealing. But what transforms it, I’d argue, is the presentation. I like to place a thick slice of well-toasted, garlic-rubbed bread underneath, ladle the stew over it and finish it with a softly poached egg.

Chana Masala / Tabbouleh / Two Portuguese Dishes

Blog Post & Recipe: Spice up your life: Chana Masala

Ok, I know: chana masala does not necessarily require an entire day of stewing and futzing; unlike many curries, it is possible to build an acceptable depth of flavor in less than an hour. I, however, wanted to see what happened when it received the full treatment.

Blog Post & Recipe: Floyd’s Tabbouleh

Looking through [Keith] Floyd’s books there were lots of things I hadn’t tried and was intrigued by and more that I had made and enjoyed. Plenty of options then. In the end I settled on a simple tabbouleh not only because there are still plenty of good tomatoes around but also as it was the first Floyd recipe I ever made.

Freezing Meat. Roasting Spuds. 30 Tomato Recipes.

Blog Post: Wrap meat for freezing as airtight as you can

Food with freezer burn is still safe to eat, but the quality is often so poor you might not want to go to the trouble of cooking it. To keep this from happening, you need to limit the food's exposure to air to encourage the water molecules to stay where they belong.

Lard. Four beetroot recipes. Spinach and white bean pizza.

Blog Post & Recipe: Spinach, White Bean, and Taleggio Pizza

Taleggio is a nice, melty cheese that works well on pizza but adds a more pungent flavor, which we liked, since the pizza was meatless and sauceless.

Recipes: Four recipes using beets: a shooter, a salad, a soup and a burger

The names of the recipes are in the same font as the rest of the article, with no extra spacing to give them emphasis, so it's a little difficult to pick them out. But they're there.

Beet, Pear and Spinach Shooter ... Beet, Orange, Red Onion and Arugula Salad ... Hearty Beet Soup with Blue Cheese Crumble ... Beef and Beet Burgers on Pita

Article: Lard

Taken from Slate magazine's food issue.

I'm convinced that the redemption of lard is finally at hand because we live in a world where trendiness is next to godliness. And lard hits all the right notes, especially if you euphemize it as rendered pork fat—bacon butter ... The best lard is leaf lard, from the fat around the kidneys of a hog, preferably a heritage hog.
