Coconut Cake From Emily Dickinson / Acorn Spaetzle / 3 Chickpea Recipes

Blog Post & Recipe: A Coconut Cake From Emily Dickinson: Reclusive Poet, Passionate Baker

This week, the Poet's House in New York City put on exhibit an original manuscript of a Dickinson cake recipe that contained coconut.

Blog Post & Recipe: Acorn Spaetzle

This is a pretty standard recipe for spaetzle, only I add some acorn flour to the mix to make them earthier, nuttier and generally more rustic; I think they go better with wild game that way. While there are a few online sources for acorn flour, you pretty much have to make it yourself — here are instructions on how to make acorn flour.

Blog Post & Recipe: Hugh Fearnley-Whittingstall's chickpea recipes

When you're cooking your own, soak them overnight in a generous amount of cold water. Next day, drain and put them in a large pan with fresh water (don't add salt at this stage, as it makes the skins tough) and bring to a simmer, skimming off any scum that rises to the top. Cook for about two hours, until they're very soft, then leave to cool in the cooking water

Blog Post & Recipe: Polpete od kvinoje / Quinoa cakes

They are actually vegetarian burgers, they hold up very well and bake nicely ... Quinoa is so versatile, you can use it both in savory and sweet dishes. These cakes are a hit, topped with some poached egg, or simply served wit a yogurt/cream or vegetable dip

Sri Lanka is a culinary paradise, showing off the delights of delicate spicing – and lashings of fresh coconut milk

Blog Post & Recipe: Using Your Grey Matter: Veal Brains alla Milanese

Thus, the dish you see before you is a play on the combination of eggplant parmigiana and veal or chicken milanese: a roasted eggplant-wrapped package of red sauce and mozzarella seats a pair of breaded and deep-fried brains in cross-section.

Blog Post & Recipe: Corn and Tomato Pie

With field tomatoes being at their peak right now it was difficult to pass up on a pie that used them along with the corn that I had started the search for. Add to that the use of mayonnaise, cheddar cheese and fresh summery basil and you had a winner that was impossible to resist! I tweaked the recipe a bit replacing the chives with green onions and adding some applewood smoked bacon for even more flavour.

4 Vegetable Soups / Spinach Sandwich / Radish & Basil Pesto

Blog Post & Recipes: More soups I've been making

Spicy Coconut Soup ... Radiant Bok Choy ... Lettuce & Potato Soup ... If I have a lot of greens leftover I make Jamie’s Ribollita.

Recipe: Spinach Sandwich

Apply butter on two slices of bread (on one side) and spread this spinach filling all over on one slice, place the other bread slice and toast till golden. Serve warm.

Blog Post & Recipe: Radish and Basil Pesto

This recipe was inspired by a similar one I saw on Clotilde Dusolier's "Chocolate and Zucchini" sometime last year. Hers called for using just the radish greens, and she also used a more traditional hard Italian cheese such as parmesan or romano, typical of a straight basil pesto. I've added some basil for a little more complexity, marcona almonds for their sweetness, feta cheese for its tang, and finely diced radishes for a little extra spice and crunch.

Nettle Pakoras / Watermelon & Fennel Salad / Caribbean Spinach & Coconut Milk Soup

Blog Post & Recipe: The Sting

My favourite way with nettles is to make Indian pakoras, all spicy, crispy, mysterious and green. They are a doddle to make and amazing to eat, even my 6 year old loves them.

Blog Post & Recipe: Watermelon and Fennel Salad [via]

I decided to try, pairing with fennel, whose anise notes I think go rather well with something sugary, and a little garlic & herbed goat cheese to help balance things out. A little fresh mint, olive oil, salt and pepper and I had myself a watermelon salad

Blog Post & Recipe: Caribbean Spinach & Coconut Milk Soup

Coming back to the recipe, as I started reading, first ingredient was spanish onion…well sweetish for me in a soup, second garlic…hmm…okay..followed by green chillies, coriander seeds & cumin (now we are talking)..then there was coconut milk, chicken stock and limes (I was already sold)..I must say it was the most amazing find of the day- a Caribbean spinach soup with coconut milk and known indian spices!!

Roasted Spring Garlic / Devilled Kidneys / Spiced Coconut Spinach

Blog Post & Recipe: Roasted spring garlic

I remembered the beautiful heads of spring garlic I had purchased before I became sick. And I decided to roast them.

Recipe: Nigel Slater's classic devilled kidneys recipe

This quick way of preparing kidneys is good for breakfast or a light supper. It will also work with rice instead of toast, as a more substantial meal.

Blog Post & Recipe: Spiced Coconut Spinach Recipe

You toast a few spices, add a pile of shredded spinach to the skillet, and finish things off with a burst of lemon juice and some shredded coconut.

Mushroom Udon Noodles / How to Wash Rice / Soto Medan

Blog Post & Recipe: Mushroom Udon Noodles

I love thick, chewy udon noodles and the two kinds of mushrooms add another layer of chew to the dish. They are lightly seasoned with ginger, garlic, soy and sesame.

Blog Post & Video: Video: Atsushi's Way to Wash Rice Perfectly

Grains of rice need to absorb just the right amount of moisture before cooking so they can steam properly (humidity is how heat travels in foods) -- so washing the rice is key.

Blog Post & Recipe: Soto Medan

The soup is simple coconut milk-based soup, cook with spice paste and serve with condiments. Spices used that gives it the vibrant yellowish hue is fresh turmeric root paste. Almost all of fresh and dried spices found and grown in our region is used in the soup. The condiments are shredded chicken meat, bean sprouts, glass noodles and perkedel (potato patties). The soup is served warm with all these, sprinkled with shallot flakes, chopped spring onions and Chinese celery and liberally dosed with kecap manis (sweet soy sauce).

Guacamole / 3 Vegetarian Recipes from Yotem Ottolenghi / 3 Recipes Inspired by Sri Lanka

Blog Post & Recipe: How To Make Guacamole

This is not just a guacamole recipe and preparation, it’s a broader lesson about aromatics and acid and using seasonal foods.

Article & Recipe: A Chef Who Is Vegetarian in Fame if Not in Fact

[Yotam Ottolenghi's] culinary philosophy might be summed up as “Cook food less.” “I keep an ingredient very close to what it looks like naturally,” he said. “I take a vegetable and blanch it, leave it nearly raw. Or grill it and leave the color and the flavor at the center to enjoy.”

Article & Recipes: Hugh Fearnley-Whittingstall's Sri Lankan recipes

I'm getting exotic with the local and the home-grown, spicing up my greens from the garden with Sri Lankan flavours, tossing them with homemade curry powder, finishing them with a dash of coconut milk and dishing them up with improvised sambals. It's not an exercise in authenticity by any means, but by goodness it's delicious.

Coconut Curry with Yam, Shiittake, and Tofu / Asian Dipping Sauce / Stock the Pantry

Blog Post & Recipe: Coconut Curry with Yam, Shiittake, and Tofu

Tofu doesn't have to be scary, or inedible.

Article & Recipes: Rediscovering Salsa, the Soul of Mexico in a Bowl

Salsa is a cornerstone of the Mexican kitchen, a contrast for a repetitive diet of corn, squash and beans. Just as French cooks understand that béarnaise sauce suits some dishes, hollandaise others, Mexican cooks know salsas have different qualities and functions.

Coconut and Beetroot Soup / Mushroom, Leek and Lemon Risotto / Goat & Spinach Curry

Blog Post & Recipe: A Dashing Coconut and Beetroot Soup

The recipe is adapted from a great book, Entertaining Vegetarians by Celia Brooks-Brown, who says that the combination of coconut and beets is typical to Southern India.

Blog Post & Recipe: Meatless Monday!: Mushroom, Leek and Lemon Risotto. And resolutions!

Think of adding each ladleful of vegetable stock to the risotto the same way you would add juice to a toddler’s sippy-cup.

Blog Post & Recipe: Goat & Spinach Curry

The finished result looks a bit like sludge, but is rich, gamey, and full of flavour. The meat was tender and fell off the bone. I added some cubed lamb neck fillet to bulk it out, but this isn't necessary if you have particularly meaty goat pieces.

Red lentil, lemongrass and coconut soup.

Recipe: Red lentil, lemongrass and coconut soup

If, like me, you need to feel the fire on a regular basis, this is a great little recipe to have in your armoury. It involves picking up some lemongrass next time you're in the supermarket/Asian shop, but these hardy sticks last for a good couple of weeks in your fridge, and can be frozen to no ill-effect as well.
