Fresh Veggie Summer Rolls with Shiso and Thai Basil
In order to make summer rolls, though, you must have at least two essential ingredients: rice wrappers, and mung bean starch noodles ... You basically make like a burrito.

Buckwheat filled mushrooms
I love the crunchy buckwheat and I rather under-cook it just a little than let it go all mushy and porridge-like. Pared with rosemary (a little garlic and lemon zest too , if you wish) and tiny bit of cheese they are such a simple thing to enjoy.

Eggplant & Rapini Meatball Subs
This seems like an insane amount of work for what is basically a sandwich but it is worth it, I swear. The meatballs bake for roughly the same time it takes to fry the eggplant so everything is hot, crisp and delicious at the same time.

fennel
One was sliced super-thin and tossed with champagne vinegar, though cider vinegar is just as good, and drizzled with a real throat-catcher of an extra virgin olive oil. I wolfed the whole thing down, a hunk of bread chasing the dressing around the plate for lunch. Three more went in to a favourite dish of braised fennel not unlike this version, and the other two went into this rather incredible pie.

Strozzapreti with Broccoli Rabe
Chili flakes and sliced garlic join olive oil in a hot pan, followed by a big handful of broccoli rabe. The rabe cooks down, the pasta boils away, and when both are done, they marry in a big, deep bowl, with equal parts parmesan and pecorino romano.

Beetroot fritters
In the end (largely through my own lack of skill and/or patience), these turned out more like thick burger patties and less like the fritters they were supposed to be. I'm going to claim that it was intentional though - I reckon they'd be fantastic on a bun with a bit more salad.

Purple Potato & Micro Greens Salad
They are very seasonal and a little more work cleaning than regular spuds since they are small and knobbly but watching everyone’s face when you serve them is certainly worth the effort. They taste like a ‘new’ season baby potato, a little sweeter than regular spuds.
