Roasted Cauliflower Risotto / Roasted Cauliflower with Cumin, Coriander & Almonds / Adobong Puti (White Adobo)

Blog Post & Recipe: Roasted Cauliflower Risotto

I saw this version of a risotto recipe from Pink Parsley a while back and was intrigued by the simple ingredients.

Blog Post & Recipe: Roasted Cauliflower with Cumin, Coriander and Almonds

This is something that is so simple once you make it a couple times, it's easy to whip together as a side dish for lunch or dinner or even just to snack on. Don't get me wrong - it's great when it's hot. But I kinda like it cold too

Blog Post & Recipe: 9 mornings: Adobong Puti/White Adobo

An adobo variation I really like is Adobong Puti/ White Adobo. It’s called that because it doesn’t use soy sauce. Instead you may opt to add fish sauce to give it that saltiness. I also like my adobo without the liquid/sauce, so I reduce the liquid until the meat is practically being fried in the rendered fat.

Basic Turkey Gravy / Butter and Soy Sauce / Sweet Potato Risotto

Blog Post & Recipe: How to: Make Turkey Gravy…Revisited

I figured it was worth publishing my recipe and troubleshooting tips again this year. This recipe does not involve adding wine or herbs, though those things can provide very satisfying results, too. Rather, this version is as basic as turkey gravy recipe can get.

Blog Post & Recipe: The Dynamic Duo: Butter and Soy Sauce

It's a one-two punch that works fantastically with so many ingredients: all manner of mushrooms, asparagus, broccoli, zucchini, shrimp, scallops, flounder fillets and more. First sauté the ingredient in butter, and when it's just cooked through, drizzle in soy sauce. Cook a little more and it's done.

Blog Post & Recipe: Meatless Monday: Sweet Potato Risotto

Most risottos take a fair amount of time and quite of bit of babysitting while you slowly add stock to the rice, gently coaxing it into creaminess. Not this one. Instead, you boil the rice for about 15 minutes, add it to the skillet with the sweet potatoes, onion and ginger, and use the wine and the mascarpone to instantly give you that signature, melt-in-your-mouth, creamy consistency that everyone expects from a risotto.

Concept: cook with butter and soy sauce.

Mushroom Risotto / Roast Pork Loin with Apples & Sage / Roasted Cauliflower Caponata

Blog Post & Recipe: A Miracle: The Best Mushroom Risotto Ever

What could I put in it to make it richer and fuller tasting? Anchovies.

Blog Post & Recipe: apple picking

there are many classic combinations but few are better than pork, apples & sage - this dish is a simple roast dinner and the apples become unbelievably tender and creamy.

Roast Pork Loin with Apples & Sage

Blog Post & Recipe: Roasted Cauliflower Caponata

Cauliflower shines in many preparations, from steaming to frying. But boiling tends to draw out all it's flavor and nutrients. It might be a reason why so many people dislike the vegetable in the first place. Roasting is the technique everyone should be doing because it turns the cauliflower tender and sweet. This version of the Sicilian favorite, caponata, is just perfect for it.

Beetroot, Peach & Radicchio Salad + Artichoke & Silverbeet Risotto / Panang Curry with Beef / China Chilo

Blog Post & Recipe: Passionate by design

Red salad (beetroot, peach and radicchio) ... Artichoke and silverbeet risotto

Blog Post & Recipe: Panang Curry with Beef | แกงพะแนงเนื้อ

I followed the general protocol for most Thai curries - heat the thicker part of the coconut milk over medium heat until it just starts to bubble and separate, add the curry paste, cook the meat, add more coconut milk and/or water, and adjust the seasonings.

Blog Post & Recipe: China Chilo

In The Spirit of Cookery: A Popular Treatise on the History, Science, Practical, Ethical and Medical Import of Culinary Art, (1895) by J.L.W. Thudicum, this was described as “a ragout of green peas and mutton, stewed with some onions, lettuce, butter and spices, to be served with rice boiled in broth and moistened with butter. This is a most excellent dish, and is most conveniently eaten with a dessertspoon.’

Stecca Sandwich Bread / Gorgonzola Risotto / Roasted Cabbage Raab

Blog Post & Recipe: Stecca Sandwich Bread

These big, thin, sturdy loaves called stecca or “stick” turned out to make for some of the best sandwich bread I’ve had!

Blog Post & Recipe: gorgonzola risotto

reduce heat to low and stir in cream and gorgonzola. stir and cook until thickened. remove from heat, add walnuts and season to taste with salt and pepper. divide between bowls and garnish with parmesan cheese.

Blog Post & Recipe: Roasted Cabbage Raab (or Cabbage Rabe)

I wanted something hot and crispy and salty. So I snatched the cabbage raab out of the fridge, gave it a rinse, a light coat of olive oil, salt, and pepper, and roasted it in the oven. About 12 minutes later, we had a delicious side dish.

Mushroom Risotto with Toasted Pistachios / Easy Roasted Red Peppers / Lamb Meatballs in a Mint Tomato Sauce

Blog Post & Recipe: Mushroom Risotto Recipe with Toasted Pistachios

For me, it can be all of these things, but on this particular day, this risotto was a vessel for a little vial (yes vial) of truffle oil. And what a delectable vessel this mushroom risotto recipe was.

Blog Post & Tips: 3 Easy Steps to Roasted Red Peppers

Roasting red peppers is a great way to concentrate flavors and bring out their natural sweetness. They make a wonderful addition to salads, sandwiches and even pasta dishes. I’m personally a huge fan of spreading a bit of goat cheese on slices of crusty bread and top with a small cluster of slivered peppers and fresh basil.

Step #1: Select Your Preferred Roasting Method ... Step #2: Let the Peppers Steam ... Step #3: Remove Core & Peel

Blog Post & Recipe: Lamb Meatballs in a Mint Tomato Sauce

I seasoned the lamb meatballs with a few exotic Mediterranean spices including cumin, coriander and cinnamon in addition to the mint and other meatball basics. I purposely made the meatballs fairly large and I fried the meatballs in oil until golden brown on the outside and then added them to the tomato sauce to finish cooking, thereby staying nice and moist and juicy.

Salmon & Pea Risotto / Fried Oysters with a Chipotle-Lime Dipping Sauce / 4 Fennel Recipes

Blog Post & Recipe: Salmon & Pea Risotto

I used fresh this time but flaked smoked salmon (the kind that looks like a whole chunk of fish, not lox) works equally well.

Blog Post & Recipe: Fried oysters with a chipotle-lime dipping sauce

There are many ways to make fried oysters. I keep mine relatively simple, though I do like to coat them in a combination of both crushed saltines and cornmeal, which I think gives them an excellent texture and flavor.

Article & Recipes: Fabulous fennel: the versatile veg

Fennel bulbs are incredibly versatile. You can eat them raw, boiled, roasted or braised. They taste good undercooked, or overcooked, with vegetables, meat or fish – or just on their own.

Baby Octopus & Fennel Risotto / Roasted Fennel & Kabocha Vegetable Salad in Balsamic Mustard Vinaigrette / Ancho Scalloped Potatoes

Blog Post & Recipe: Baby Octopus & Fennel Risotto

To cook the octopus I use my BBQ with an open flame which prevents the octopus from ‘stewing” and gets nice char grill but you can fry it on a very high heat.

Blog Post & Recipe: Roasted fennel and kabocha vegetable salad in balsamic mustard vinaigrette recipe

On the morning of, I simply cut, roast, and dress up the vegetables. They retain their texture and becomes tastier as they marinate in the dressing. I serve this salad at room temperature ... The best part that I can substitute the vegetables with whatever is in seasonal.

Article & Recipe: Anchos, or dried poblanos, provide instant flavor

The terminology can get confusing, but anchos are just dried poblanos. The simplest way to use dried anchos is to place them in a bowl and pour boiling water over them, wait 15 minutes or so for them to soften, then slit them to remove the seeds and stem. You can then blend the softened chile with just about anything: water, stock, olive oil, yogurt or a combo of all of those, to produce a brown paste or salsa.

Article & Recipe: Jackfruit curry

Jackfruit, available from Afro-Caribbean and Asian food shops and markets, has a rough outer skin and a white, fibrous interior. It is a great asset to non meat-eaters. Cooked until tender, it absorbs flavours, and has a texture not unlike chicken.

Blog Post & Recipe: Braised Fennel

The purpose of the liqueur is to intensify the licorice flavor of the fennel. If you don't have anise-flavored liqueur, or are avoiding cooking with alcohol, you can achieve a similar effect by adding a star anise pod to the stock when you are braising.

Green Risotto / Burger Wrapped In Grape Leaves / Crab Innards

Blog Post & Recipe: Mrs Kennedy's Green Risotto

It's a simple risotto flavoured with puréed spinach. The latter turns it a lovely, vivid green colour.

Recipe: Burger Wrapped In Grape Leaves

The grape leaves provide the tangy taste that enhances the meat flavor. It is up to you to use any meat of your choice, minced lamb or beef mixed with parsley and onions, salt, black pepper and allspice

Blog Post & Recipe: The Nasty Bits: Crab Innards

Like the crab meat itself, the taste of what is inside varies depending on the type of crab. On blue claws the innards taste somewhat like caviar; on Dungeness, they are more abundant and custardy in texture, with a sweetness that reminds me of sea urchin.

Sweet Potato Ginger Risotto / Yaki Udon / Wakame Seaweed Salad

Blog Post & Recipe: Sweet Potato Ginger Risotto

This sweet potato ginger risotto uses dashi (Japanese sea stock) instead of broth. Fresh ginger adds warmth and cubes of sweet potato had creamy flavor, color, and all kinds of great vitamins and antioxidants.

Blog Post & Recipe: yaki udon

When you are too lazy to cook something fancy then you know that this Japanese stir-fry noodle is something you are going to cook as you can simply throw (any left-over) whatever in your fridge in a wok and there you have it.

Blog Post & Recipe: Utagawa Kuniyoshi - Wakame Seaweed Salad

I have been a long-time glutton for the bright green seaweed salads sold at most take-away sushi shops. This version uses reconstituted wakame seaweed, deep green, salty and earthy. The smallest slick of sesame oil cuts through the rice wine vinegar and fresh lemon juice.

Here's the good news: they can taste remarkable if you cook them properly. Caramelized and golden, they become sweet and addictive (spoiler: we're not going to be boiling them). As is true with most things, true enough to make it a principle of cooking, brown is flavor.

Butternut Squash Baked Risotto / 5 Hash Recipes / 6 Polenta Recipes

Blog Post & Recipe: Dinner Tonight: Butternut Squash Baked Risotto
