Philadelphia Pepper Pot Soup / Lemongrass Chai Tea / 3 Surf-Club Meals

Blog Post & Recipe: Philadelphia pepper pot: the soup that won the American Revolution?

But true, tripey pepper pot has dwindled in popularity, and is now merely a curio in a few Philadelphia restaurants. The famous City Tavern sells a West Indian version on its lunch menu which reportedly does neglects tripe altogether.

Blog Post & Recipe: Lemongrass Chai Tea

If you had asked me about 6 months back if I would use lemongrass in tea I would have probably thought it was some strange Thai fusion version of tea. I didn't know then, that I had been having lemon grass tea for years only I knew it as "Chai Patta"

Article & Recipes: Surf-club cuisine

An ''oarsome'' (thanks for the title, Noosa Surf Club) prawn salad makes an easy-breezy lunch, with its freshly cooked prawns, avocado, radish and leaves drizzled with creamy green goddess dressing. Then there's a towering surf-and-turf burger that tops juicy chorizo and beef burger meat with crumbed calamari rings, beetroot, lettuce and tomato that's just plain surftastic.

Soy & Star Anise Oxtail / Horchata / Beetroot Salad with Crispy Leeks & Bacon

Blog Post & Recipe: Soy & Star Anise Oxtail

The oxtail needs cooking slow and low to ensure the is meat that can be sucked off the bone perfect with the spicy sticky sauce but definitely have some napkins handy .

Blog Post & Recipe: Bringing Mexico Home: Horchata

Variations include almonds, lime zest, or even pecans and popcorn. Momofuku Milk Bar serves a Horchata Soft Serve Ice Cream with Cinnamon. And adding a dash of Tequila can improve its already soothing qualities.

Blog Post & Recipe: Beet Salad with Crispy Leeks and Bacon

I decided to take a different route when recreating this dish at home. Instead of chicken skin, I used bacon, and instead of frying it stovetop, I used it to help make the leeks extra crispy in the oven. After a few minutes roasting together, the leeks begin to caramelize in the bacon fat, and the result is a rather rich smoky dressing for your beets.

Green Papaya Salad (Som Tam) / Agedashi Tofu / Mussaman beef curry

Blog Post & Recipe: Green Papaya Salad (Som Tam)

Som Tam is the epitome of the perfect blends of hot, sour, salty, and sweet—the iconic tastes of Thai cuisine.

Blog Post & Recipe: just back from japan

It’s a tender, silky tofu with a crisp fried coating in a small pool of dashi-based broth. There would be grated ginger, daikon radish, and bonito flakes served on top.

Recipe: agedashi tofu

Blog Post & Recipe: Mussaman beef curry

The preparation began with a method I’ve never come across before: an initial two hour cooking of the meat with just coconut milk, cinnamon bark and black cardamom, the last of which lent a smoky, almost funky aroma. The fattiness of the coconut milk kept the meat moist, while the liquid reduced and took on a nutty flavour and hue. With about 45 minutes to go, cubed potatoes, fish sauce, tamarind, palm sugar and a curry paste were added.

Stir Fried Dried Cuttlefish (Ojinguh Chae Bokkeum) / Daikon Sweet Pickles / Somtam

Recipe: Stir Fried Dried Cuttlefish (Ojinguh Chae Bokkeum)

A staple side dish in most Korean kitchens and lunchboxes. Takes less than 5 minutes to make and will stay good for a long time. Adjust the amount of red chili paste and sugar depending on how spicy and sweet you like it.

Blog Post & Recipe: Takuwan-Japanese Daikon Sweet Pickles

Making the takuwan yellow comes from the artisan method or old fashioned method of making takuwan in Japan, this longer method can be seen on Takuan/Japanese Pickled Daikon: Basic Recipe by the Shizuoka Gourmet. Mrs. Miyake's recipe is sweet and takes a lot less time.

Blog Post & Recipe: Pok, pok, pok… Somtam!

Somtam comes in many variations depending on the region and personal preferences. In Isaan, or northeastern Thailand, where somtam is often called tam bak hung, plaa raa (fermented fish sauce)—no problem for me in small doses but often an acquired taste for many others—is often added in a papaya salad. The central Thai version often sees the addition of items such as salted egg, grilled pork collar or plaa haeng (ikan bilis, or dried anchovies).

Just don't think you can throw those mushrooms on the grill as is. They need to be spruced up. Oil, and vinegar, and spices, oh my. The rest of the vegetables are really not hard. Brush them with a little olive oil, and add salt and pepper. You're basically going for a nice char-grilled exterior.

Blog Post & Recipe: Fennel, Cucumber, Seafood Salad

I’m having a fennel month and not because I have a glut in my garden either. I did have some that grew into five foot high triffids and I didn’t do anything with it so for my penance for not looking after and harvesting my fennel I have to buy it at $2.50 a bulb.

Garam Masala Roasted Halibut in a Tomato Curry Sauce / Oven Roasted Vegetable Curry / Gravadlax, Beetroot & Walnut Salad

Blog Post & Recipe: Garam Masala Roasted Halibut in a Tomato Curry Sauce

In this dish the fish, I chose halibut, is coated in a simple "curry powder" consisting of garam masala and turmeric and roasted in the oven. The roasted halibut is then served on a very simple and yet tasty tomato curry sauce.

Recipe: Oven Roasted Vegetable Curry

I remembered the recipe because I thought it such a good idea to roast the vegetables to concentrate the flavours then add the sauce, so I took it further and continued to cook the sauce and finish the dish in the oven. So easy, so good.

Blog Post& Recipe: Gravadlax

A bunch of multicoloured beetroot was roasted so that its flavour intensified ... Toasted walnuts were given an extra oomph with the use of walnut oil in the dressing and curls of gravadlax draped on top

Korean Oxtail Soup / Rabbit Stew with Mushrooms / 7 Golden Rules of Freezing & Frozen Pea Salad with Bacon

Blog Post & Recipe: Korean Oxtail Soup (Tom Gang)

This soup is usually served unseasoned, with the diner adding salt at the table. I simply added some green onions for some freshness and crunch.

Blog Post & Recipe: Rabbit Stew with Mushrooms

There is an optional step to making this stew taken from classic French cooking (Antonin Careme) that transforms a good dish into a great one. Mash the rabbit or chicken’s liver, mix it with crème fraiche or sour cream, then push it through a fine sieve. The result is a pink slurry that will thicken and enrich your sauce.

Cauliflower with Tomatoes / Raspberry Lenten Buns / Nigel Slater Roasts Chicken

Blog Post & Recipe: Gobi Tamatar/Cauliflower with Tomatoes

As ill famed as this flower might be, I don’t think it stinks; I think it is one fantastic thing that absorbs a lot of flavors.

Blog Post & Recipe: Decadent Lenten Buns

It's Shrove Tuesday here in Estonia today, which means that people eat copious amounts of vastlakuklid aka Lenten buns aka semlor today ... this year I decided to be a bit more adventurous, so I flirted with chocolate Lenten buns and marzipan-raspberry buns.

Blog Post & Recipe: Crackling Pork Belly Roast

The belly is brined with juniper berries, cloves, peppercorns, and bay leaves, presumably to thoroughly season instead of prevent the meat from drying out. Short of dipping the belly in a drum of napalm, you’d be hard-pressed to overcook something that is half lard.

Blog Post & Recipe: Fish Sauce (Recipe: Thai beef salad)

Asian fish sauce, called nuoc mam in Vietnam, and nam pla in Thailand, is the water, or juice, in the flesh of fish, extracted in the process of prolonged salting and fermentation. Most often, the fish used are anchovies, as they are plentiful in the waters off the coast of Thailand.

Rhubarb cobbler. Fennel Salad. Chicken Potpie.

Article & recipe: Potpie is a simple treasure

Potpie is one of the most economical and easy dishes you can make ... two things determine the success of your potpie: having enough rich sauce to not just bind, but smother the solid ingredients, and a crisp crust to contrast with the silken sauce.

Chicken Potpie with Drop Biscuits

Blog Post & Recipe: Recipe: Lemony Shaved Fennel Salad with Bresaola

A few kitchen tools that make assembling this salad easy are a vegetable peeler for the cheese (you get nice thin, curly shards of cheese) and a mandoline for shaving the fennel. But if all you have is one good knife, you'll still make a great salad ... Bresaola is a ... lean air-cured beef ... Most gourmet shops that carry cured meats will have it. If not, substitute whatever you can find in the cured meat department (salami, prosciutto, etc.)

Blog Post & Recipe: rhubarb cobbler

Rhubarb Cobbler
Adapted from Claudia Fleming via New York Magazine

The biscuit topping includes the curious ingredient of hard-boiled egg yolks. I’ve been trying for days to find the reason behind it’s inclusion (as I am sure someone will ask) but without my cookbooks still boxed up, my access to technique information is limited. I know that some people grind up a hard boiled yolk in their sables, to make them sandier and would argue that this makes the biscuits a little richer and cakier.
