Cook Perfect Christmas Cake / Pennsylvania Dutch Baked Corn Pudding / Turmeric Pickle

Blog Post & Recipe: How to cook perfect Christmas cake

A Christmas cake should be rich and spicy; bursting with boozy fruit but never, ever heavy.

Blog Post & Recipe: Pennsylvania Dutch Baked Corn Pudding

Baked corn pudding is generally made with eggs and milk and baked like a custard. My family always added a little cinnamon and vanilla, but still maintained a savory taste using salt and pepper.

Blog Post & Recipe: Fresh Turmeric Pickle

One way we eat it in my family is by simply marinating it in lime juice and salt like you see here. Clean, peel, slice, add some salt to taste & lime juice enough to coat all the slices, jar and refrigerate. If you let it sit for 2-3 days, it gets better from the juices. It is best eaten within a week as a relish.

Blog Post & Recipe: Using Your Grey Matter: Veal Brains alla Milanese

Thus, the dish you see before you is a play on the combination of eggplant parmigiana and veal or chicken milanese: a roasted eggplant-wrapped package of red sauce and mozzarella seats a pair of breaded and deep-fried brains in cross-section.

Blog Post & Recipe: Corn and Tomato Pie

With field tomatoes being at their peak right now it was difficult to pass up on a pie that used them along with the corn that I had started the search for. Add to that the use of mayonnaise, cheddar cheese and fresh summery basil and you had a winner that was impossible to resist! I tweaked the recipe a bit replacing the chives with green onions and adding some applewood smoked bacon for even more flavour.

Pan Roasted Okra with Garlic / Zucchini Noodles with Avocado Cream Sauce / Grilled Corn Summer Breakfast Hash

Blog Post & Recipe: Pan Roasted Okra with Garlic

Ingredients

3 cups fresh okra, rinsed, sliced horizontilly in 1 inch pieces
3 cloves fresh garlic, thinly sliced
1-2 tablespoons olive oil
kosher salt

Blog Post & Recipe: Zucchini Noodles with Avocado Cream Sauce [ via ]

Despite my lousy luck, one bright star emerged -- my creamy (without any cream) avocado drenched zucchini noodles (without any noodles) with a sprinkling of romano cheese and red pepper flakes. It's cool and spicy, smooth and rich and not at all what it seems.

Blog Post & Recipe: Grilled Corn Summer Breakfast Hash

It’s chock full of crispy potatoes and soft, sweet and juicy peppers and onions. Some zucchini is in there too because… it’s summer! Have you heard? And obviously the caramely kernels are the best part because who doesn’t like vegetables that taste like candy? I’ll top it with an egg because you deserve it.

5 Recipes from the Momofuku Cookbook / Corn, Buttermilk & Chive Popovers / How to Sprout Lentils + Gourmet Sprouted Lentil Salad

Blog Post & Recipes: David Chang’s Momofuku (Cooking the Books 5)

A few months ago, a few crazy food bloggers (myself and the Boy included) decided that the next Cooking the Books would be from the Momofuku cookbook.

Ramen Broth ... Momofuku Ramen (Cup Noodles) ... Roasted Rice Cakes ... Pork Belly Ssam (sam gyup sal ssam) with Mustard Seed Sauce

Blog Post & Recipe: corn, buttermilk and chive popovers

I turned to Google, which led me to a recipe for corn popovers from The New Basics by Julee Russo and Sheila Lukins. I adjusted them a bit; I swapped buttermilk for regular, as was my plan, and I found that the corn really had to be blended to become part of the batter (rather than kernels that fell out after tearing the popover open).

Blog Post & Recipe: How to Sprout Lentils & Gourmet Sprouted Lentil Salad

Go here to this post - and follow the directions for Sprouting Quinoa, simply replacing the Quinoa with Lentils! Be careful though - Lentils triple in size when you sprout them: If you're using a wide mouth (3 cup) Mason Jar I recommend starting with 1 cup of dried Lentils at the very most. You don't want to run out of room in your jar.

Potted Shrimp / Braised Eggplant & Tomatoes / Charred Corn Tacos with Zucchini-Radish Slaw

Blog Post & Recipe: How to cook perfect potted shrimps

Potted food, according to food historian Bee Wilson, is a descendant of the pie in which the heavy, air-excluding crust ("medieval cling film" as she wonderfully dubs it) has been replaced by a more elegant spiced butter.

Blog Post & Recipe: Recipe: Braised Eggplant and Tomatoes

I like this recipe a lot because it doesn't try and dress up the eggplant with too much oil or gobs of cheese. So often people will fry up their eggplant (which isn't half-bad, I'll be the first to admit) or douse it with loads of olive oil and cheese while baking in the oven. Especially in the hot summer months, it's nice to let eggplant stand on its own as it does here.

Blog Post & Recipe: charred corn tacos with zucchini-radish slaw

It’s this obsession that finally got me to unearth a dish I’ve been meaning to put my spin on for two years ... The dish is called esquites and from what I understand but have sadly not yet experienced yet in person, it is a street snack in Mexico. Corn is cooked in butter with onions, garlic, chiles, an herb called epazote and salt. It’s then seasoned with lime juice, chile powder and served with mayo in small cups.

Concept: potting!

Spicy Green Tomato & Apple Chutney / Ignore Expiration Dates / FOODday picks 12 favorite recipes of 2010

Blog Post & Recipe: A proper chutney

It’s finally dawning on me that our capacity for sweet preserves is fairly limited, so I knew this year’s project would have to be savory.

English-style Spicy Green Tomato & Apple Chutney

Article: Ignore Expiration Dates

... we should focus our efforts on what really matters to our health—not spoilage bacteria, which are fairly docile, but their malevolent counterparts: disease-causing pathogens ... which infect the food we eat not because it's old but as a result of unsanitary conditions at factories or elsewhere along the supply chain.

We have double coated the nuggets for a thicker and crunchier outside; do it once if you are lazy or do not need a thick and crunchy coat.

Blog Post & Recipe: Red Posole for New Year's Day

I’d never had red posole and was a little dubious that she was serving this instead of black-eyed peas. She assured me, however, that this is what her family ate in New Mexico, not to mention it was traditional New Year’s Day fare in Mexico as well.

Rice Pudding with Stewed Apples. Onion, Anchovy, Spinich Quiche. Corn Pudding in Acorn Squash.

Blog Post & Recipe: Right as Rain

I added a simple twist to my rice pudding by adding two crushed cardamom pods, something I like to add to rice when cooking it normally. [...] The slight hint of gingery spiciness from the cardamom not only kept the rice from becoming too sickly sweet, it also ...

Cardamom Rice Pudding with Stewed Apples

Blog Post & Recipe: Onion, Anchovy & Spinach Quiche

One of my most favourite pasta dishes is onion and anchovy spaghetti. It's so beautifully simple; onions, sweated down until almost a mush for 45 minutes, and then milk-soaked tinned anchovy fillets added until broken down and emulsified with a little of the milk to make a sauce [...] In a fit of experimentation, I thought that this would be quite fitting for a quiche ...

Blog Post & Recipe: Roasted Corn Pudding in Acorn Squash Recipe

(M., I'm not posting this because I expect you to cook it, but it just looks so very, very pretty.)

I've adapted today's recipe from the Acorn Squash filled with Corn Pudding in The Vegetarian Compass. It involved roasting, making a filling, filling the squash, and roasting some more. Blog Post & Recipe: Pepper Soup

Yes, another Roasted Bell Pepper recipe, but a “Chilled” one this time [...] The swirly worly in the soup is not cream, I have used some thick yogurt & water blended together to form the “cream” & also for some slight tang in this chilled soup.

Pepper (Capsicum) Soup

Blog Post & Recipe: Time to Wrap Things Up: Homemade Gyoza Wrappers (via Kitchen Musings)

Just like homemade pasta, the texture of homemade gyoza wrappers is a lot different. Storebought wrappers are almost papery in comparison. Homemade are a bit doughier. With homemade you can make them as thick or as thin as you like depending on your personal preferences. Although it is easier to grab a pack of premade wrappers when making your own gyoza, I highly recommend taking the time to make your own sometime.

Chicken Jus. Chipotle Chicken, Apricot & Brie Quesadillas. Elote Corn.

Blog Post & Recipe: The Importance of Jus: Two Chickens in One Meal

The jus is simply the liquid contained in the roasted meat. "The problem," [cookbook author James Peterson] admits, "that most often confronts professional chefs is that most roasts do not provide enough full-flavored jus to go around."

Blog Post & Recipe: Chipotle Chicken, Apricot and Brie Quesadillas

I remembered seeing a chicken, apricot and brie panini on good Life {eats} which sounded like a good combo. I immediately thought about doing a quesadilla version but I knew that I would need some heat so I added some chopped chipotles in adobo sauce. I followed that with some cilantro, and green onions and I was just about done.

Blog Post & Recipe: Mexican Corn on the Cob: A Light in August

Like almost all dishes, there are endless variations on elote, but most commonly it’s a cob of corn slathered in mayonnaise, cotija cheese (a semi-hard, crumbly cheese that resembles grated Parmesan), powdered chile peppers and lime juice. Sometimes, you can find it without mayonnaise and instead drenched in butter, margarine or crema. The corn can be prepared many ways, such as steamed, roasted or grilled.

Chimichurri. Curried Corn Soup. A Three-Fingered Pinch.

Blog Post: Cook's Talk: A Three-Fingered Pinch of Salt

The [...] "three-fingered pinch" is a better way to incrementally amp up the seasoning without either a) taking forever or b) accidentally over-salting the dish.

Article & Recipe: Curry powder adds kick to refreshing corn soup

Toasted pita bread with a sprinkling of Parmesan cheese goes perfect with the soup [...] Corn quickly turns to starch and the flavors fade, so find the freshest, just-picked corn possible.

Chilled Curried Corn Soup

Blog Post & Recipe: Chimichurri
