Norwegian Red Fruit Pudding / Labneh Balls / Sausage, Kale, & Bean Soup

Blog Post & Recipe: Rødgrøt med Fløte, Norwegian Red Fruit Pudding

A pudding made of stewed red fruit, thickened with a little cornstarch and crowned with billowy whipped cream.

Blog Post & Recipe: Labneh balls

Besides being used fresh, labneh is also dried then formed into balls, sometimes covered with herbs or spices and stored in olive oil glass jars. The cheese can then be kept for over a year.

Blog Post & Recipe: Sausage, Kale, and Bean Soup (Crock Pot)

Soup like this is the best because you can use whatever you want. Canned beans, leftover rice, frozen peas, wilty vegetables, whatever. It’s up to you. No meat? More meat? It’s all cool with me.

Red Wine & Garlic Braised Beef Shanks / Linguine with Fried Eggs & Rosemary / Kale, Sausage & Flageolets

Blog Post & Recipe: Red Wine and Garlic Braised Beef Shanks

Beef shanks are from the leg of the cow and have a big bone right in the middle. Get the meatiest ones with the biggest bones. Don’t worry. They are cheap.

Blog Post & Recipe: linguine with fried eggs & rosemary

This dish tastes fancy and indulgent, yet light at the same time. It comes together in a snap – the most time consuming part was waiting for the pasta to cook.

Blog Post & Recipe: Kale, Sausage and Flageolets

Or posh bean stew, if you will. [...] You might be surprised by the addition of cream, however it adds a touch of class to this definitely rustic dish – and makes delicious juices for you to mop up with your bread.

Jugged Hare / Fennel & Pear Soup / Black Pudding Profiteroles

Blog Post & Recipe: Jugged Hare

The recipe kicks off asking for a mixture of flour, mace, cloves and allspice to roll the chunks of rabbit in before frying.

Blog Post & Recipe: Good warm, even better cold - Fennel and Pear Soup

I was standing with a fennel bulb in my hand when I saw a very ripe pear on the table and somehow my mind connected with the two and there was one - the vision of a fennel and pear soup.

Blog Post & Recipe: Black Pudding Profiteroles

Remember the Chorizo Choux Puffs? When I published the recipe on my Estonian site, then one of the readers, Ilse, suggested using our Christmas favourite, finely chopped black pudding instead of chorizo. I liked the sound of that, so nicked the idea, adding a spoonful of roasted onion flakes for an extra depth of flavour.

Hot Dogs with Kimchi Relish / Marinated Avocado / Baked Lamb Shanks

Blog Post & Recipe: Hot Dogs with Kimchi Relish

In this recipe, my most favorite American street food gets a makeover for the Korean palate. Jean-Georges created a kimchi relish that's made sweet with honey and sour with rice vinegar.

Blog Post & Recipe: Marinated Avocado

Lately I have made an effort to bring lunch to work more often, and the idea of marinating avocado in sandwich has been on my mind. Cumin, coriander, lime juice, cayenne pepper, garlic. Inspirations: guacamole, can't you tell?

Blog Post & Recipe: Incredible Baked Lamb Shanks

These were some of the softest shanks that ever came out of my oven. Wrapping the meat and all the aromatics in foil (and see to it that it’s tightly sealed please!) creates a little steam bath that keeps the meat moist and flavorful, and renders it sinuously pliant. The lamb ends up soft and sticky, drenched in intensely flavored buttery juices.

Toad-in-the-Hole / Korean Kimchi Stew / Mushroom & Beetroot Frittata

Blog Post & Recipe: Classic English Toad-in-the-Hole

I first posted a recipe for Toad in the Hole back in 2003. I wasn't quite satisfied with that recipe, and based on feedback from readers and a bit more experimentation, recently updated the recipe.

Blog Post & Recipe: Korean Kimchi Stew

I first came across Soondoobu Jiggae (or, soft tofu stew to me and you) at Koba, on Charlotte Place. A bubbling stew in a hot stone pot, it as packed with little clams, silky soft tofu and the punchy heat of kimchi. Further exploration with my chopsticks revealed a perfectly poached egg in the broth.

Blog Post & Recipe: Mushroom and beetroot frittata

Frittatas are easy-peasy, weeknight food. Something you can make in one pan, cram full of vegetables and top with whatever is in the fridge. Nutritionally this particular frittata combines antioxidant rich beetroot, with B vitamin and antioxidant containing mushrooms, plus protein packed eggs. I topped the frittata with a dairy free kind of pesto, made from coriander, miso, garlic and walnuts.

Ginataang Hipon (Shrimp in Coconut Milk) / John Allison's Toad in the Hole / Quinoa cakes

Blog Post & Recie: G is for Gata and How to Make Ginataang Hipon (Shrimp in Coconut Milk)

Half a cup of coconut milk for a pound of shrimp. Roughly.
Use cream instead of milk, when you can.
Devein shrimp but keep heads and shells on.

Article & Recipe & Drawings: Recipe Comix: Toad in the Hole

Here, Allison's intrepid school-age detectives Lottie and Mildred whip up a version of toad in the hole that will turn us all into excellent housewives, even if we previously thought ourselves thwarted by age or gender

Blog Post & Recipe: Polpete od kvinoje / Quinoa cakes

They are actually vegetarian burgers, they hold up very well and bake nicely ... Quinoa is so versatile, you can use it both in savory and sweet dishes. These cakes are a hit, topped with some poached egg, or simply served wit a yogurt/cream or vegetable dip

Tomato Sushi / Slow Cooked Sausage and Beans / Curry Laksa (Nyonya Laksa)

Blog Post & Recipe: Tomato Sushi - Yes, That's Vegetarian - Recipe

Tomatoes taste incredible with nori. I need to explore this flavor combination more. The umami in each seems to reinforce the other in a way that I find really compelling.

Blog Post & Recipe: Slow Cooked Sausage and Beans

It is best to use dried beans in casseroles or slow cooks, the tinned beans just turn to mush. When using dried beans in a slow cook dish like this , you do need to cook them before adding them to the slow cooker/casserole.

Blog Post & Recipe: Snapshots from Malaysia: How to Make Curry Laksa (Nyonya Laksa)

Like many Malaysian dishes, it starts with a blended spice paste of turmeric, galangal, lemongrass, and shrimp paste, and cooks down that blend to concentrate flavors; shrimp or chicken broth turns that thick paste to a broth, and the coconut milk is added toward the end.

Braised Lamb Shanks with Yorkshire-Style Puddings / 3 Salads / Spetsofai (Stewed Sausages & Peppers)

Blog Post & Recipe: Braised lamb shanks with Yorkshire-style puddings [via] (and, see, another blogger is also making braised lamb shanks, and the NZ Herald has a recipe for lamb shanks and macaroni)

Instead of making the usual thick, sticky sauce, which can be a little heavy, I opted for a light, almost soupy, tangy tomato and stock sauce.

Recipes & Video: Veg out

The roasted beetroot salad can be made more substantial by adding crumbled feta or goat’s cheese. All of these recipes make a great accompaniment to a Sunday roast.

ROASTED BEETROOTS, CARROTS & CAPSICUM ... ROAST FENNEL SALAD ... WARM MUSHROOM & ROCKET SALAD

Blog Post & Recipe: Spetsofai

In it’s complete simplicity, spetsofai is sausages and peppers. It traditionally hails from the Thessaly region of Greece and whilst it lends itself as a winter dish the produce it uses is more synonymous with summer. The traditional recipe is a little more spicy and uses loukaniko (the Greek word for sausage). I was making this for a friend of mine and her eight year old so anything considered spicy was off limits. I added a little oomph to the spetsofai by using some smoked paprika and a little red wine.

Moroccan Style Ossobuco / Tomato Soup with Tripe and Sausage / Freezing Food

Blog Post & Recipe: Ossobuco Tagine (Moroccan Style Ossobuco)

For the recipe, I started out with my ossobuco recipe and then I added some dried apricots and prunes along with a blend of warm spices.

Blog Post & Recipe: Tomato soup with tripe and sausage (a.k.a. leftover soup: recycled)

You can do this trick with any leftover meat and vegetable soup with a clear broth. The tripe can be substituted with just about any kind of meat. The only thing to remember is not to add any raw ingredient to the leftover soup then simmer until the raw ingredient is done because that would turn everything in the leftover soup into an indiscernible goo.

Blog Post: Freezers give waste the cold shoulder

Taste-wise, you have to choose and use frozen veg carefully. Frozen peas are the most popular frozen vegetable in the UK as they taste good and hold their shape and texture. Other frozen veg which (in my opinion) pass the taste test are broad beans, sweetcorn and leaf spinach (reheat it very gently) ... The big no-nos for freezing are salad, egg-based dished, such as mayonnaise (tends to separate on thawing) and whole eggs (they will burst as the liquid content expands).

Roasted Asparagus Soup / Cauliflower & Chickpea Curry / Lentils with Fennel, Kale & Sausage

Blog Post & Recipe: asparagus

it's super simple and a great way to use up extra vegetables.

Roasted Asparagus Soup

Recipe: Angela Hartnett's cauliflower and chickpea curry recipe

This vegetable has so many more uses than the classic cauliflower cheese and is used readily in Indian food. The secret is not to overcook it. Add it to the curry mix while it is still warm so it absorbs all the flavours.

Blog Post & Recipe: lentils with fennel, kale & sausage

This lentil dish is perfect for cold winter nights. It also contains fennel which has become one of my new favorite vegetables and is readily available all winter. If you wanted this to be a strictly vegetarian affair, just skip the sausage or trade in the meat for your favorite vegetarian sausage links and you’ll still have a fantastic meal.

Pan Fried Ginger Pork / Baked Spaghetti Royale / Spicy Mango-Pineapple Hot Dogs

Blog Post & Recipe: Pan Fried Ginger Pork

One of my favourite Japanese Pork recipe is the very accessible Pan Fried Ginger Pork. Extremely simple and quick to make, this dish goes beautifully with steaming hot white rice.

Blog Post & Recipe: Baked Spaghetti Royale – How to Win Friends and Influence People

Made with chorizo, bell peppers, a secret herb and an ultra creamy bechamel sauce, it’s no wonder The Blog Monster’s words that night enticed so many to come to my birthday party.

Recipe: Spicy Mango-Pineapple Hot Dogs

I've never been to Hawaii but I am already making a list of Hawaiian hot dog joints to visit when I finally get there. A common theme on the menu are fruit topped hot dogs which intrigued me.

Chana Masala / Tabbouleh / Two Portuguese Dishes

Blog Post & Recipe: Spice up your life: Chana Masala

Ok, I know: chana masala does not necessarily require an entire day of stewing and futzing; unlike many curries, it is possible to build an acceptable depth of flavor in less than an hour. I, however, wanted to see what happened when it received the full treatment.

Blog Post & Recipe: Floyd’s Tabbouleh

Looking through [Keith] Floyd’s books there were lots of things I hadn’t tried and was intrigued by and more that I had made and enjoyed. Plenty of options then. In the end I settled on a simple tabbouleh not only because there are still plenty of good tomatoes around but also as it was the first Floyd recipe I ever made.

Article & Recipes: The New Portuguese Table: Exciting Flavors from Europe’s Western Coast

It was while sitting around the dinner table of my friend José Vilela, eating falling-off-the-bone partridge escabeche with a spice profile that unmoored the dish from its traditions, that I felt an internal crowbar-pop that finally freed me.

Puttanesca. Fried Pig's Tail. Cotechino with Red Lentil Stew.

Blog Post & Recipe: Desperate dinners - good food from the cupboard (via Limes & Lycopene)

Canned tomatoes, mashed anchovies, capers and pasta. These ingredients, staples from the kitchen cupboard, are the basis for one of the best desperate dinners: pasta puttanesca.

Blog Post & Recipe: The Nasty Bits: Crisp Fried Pig's Tail

I want to make the case that pigs' tails contain everything desirable in the pig, and in exactly the right proportions. Unlike oxtail, the tails of pigs come with the skin intact so that each segment is a perfect cross-section of skin, fat, tendon, and meat [...] a tail is a little porky universe unto itself ...

Blog Post & Recipe: Cotechino with Red Lentil Stew

Cotechino is a large thick sausage, lightly spiced and made from all sorts of bits of pork and a generous quality of it's fat. It's first boiled for a few hours and when sliced the combination of ingredients leads to a wonderfully gelatinous treat. To balance the richness of the dish, lentils are the favoured companion.

Pies are also a good way of using up ingredients in this case languishing frozen scallops and salmon neither of which standout enough to be principal but contributing delicious texture in a pie.

Blog Post & Recipe: Pasta with Tuna and Capers in White Wine Sauce

Here's a little secret: olive oil-packed canned tuna, chili pepper flakes, and pasta is a master combination [...] Regarding tuna packed in water, I've tried it and believe me, it doesn't work (dry, tastes bad). You need to use tuna packed in olive oil.

Micro melons. Shopping a farmers market. Sausages and Green Lentils with Tomato Salsa

Article: 13 strategies for shopping a farmers market

10 Bring cash, "especially ones and $5 bills," Lycan said. "The farmers really appreciate that."

Blog Post & Recipe: Jamie's Sausages and Green Lentils with Tomato Salsa

As someone who lives with a great cook of a husband, I tend to fear making just so-so meals. I'm working on both my skills and my fears, and this recipe is one that has helped me build confidence ... It's a Jamie Oliver recipe ... We recommend mixing this up as desired with various types of sausage (turkey, veggie, whatever you like) and adding a bit more garlic, cinnamon and/or red chillies to taste.

Article: 'Micro melons' 20 times smaller than regular size

No recipe here, just a novelty melon.

The rare Pepquino melon measures just an over inch (3cm) from tip-to-tip but has the identical external pattern and distinctive shape of traditional watermelons ... While it resembles its larger cousins, it has a fresh crisp taste similar to a cucumber and juicy light green flesh.

It can be eaten as a snack or appetiser, like olives, in a summer salad, stir fried or made into a sorbet and teamed with dark chocolate.

Grilled Fava Beans. Anchovies. Mushroom, Sausage, Goat Cheese, and Chive Grilled Pizzas.

Blog Post & Recipe: Grilled Fava Beans

The key is getting the grill (or pan) the right temperature - too hot and the pods char before the beans have time to steam in their pods.

Blog Post & Recipe: Mushroom, Sausage, Goat Cheese, and Chive Grilled Pizzas

This is a cross between crispy flatbread and chewy pizza with extra flavor from the char of the grill. If you don’t have access to a grill, bake the dough in the oven as you would any other pizza ... The mushrooms and sausage can be roasted up to three days ahead and warmed through before adding to the grilled dough.

Article & Recipe: And don't hold the anchovies

Look to the left for a link to "Roast leg of lamb with anchovies."

If one needs proof that anchovies are not natively malodorous, it's best to try Spanish or Italian brands in a jar (everyone agrees on the superior quality of the Spanish brand Ortiz). Anchovies also come salt-packed, requiring a brief soak in water. Even more impressive are the fresh fish ...

Chicken Stew. Pasta with Tomatoes and Sausage.

Blog Post & Recipe: Chicken Stew with Onions, Tomatoes, and Dijon

"Stews are your best ally for stress-free dinner parties," says Clotilde Dusoulier, of her Mustard Chicken Stew in her Chocolate & Zucchini cookbook, and I couldn't agree more. They cook happily away while you enjoy the company of your guests, and avoid the stress of food that has to be perfectly timed.

Recipe: Pasta with Caramelized Tomatoes and Sausage

What to buy: Sweet Italian sausage, sometimes called mild Italian sausage, is flavored with fennel and garlic and can be found in most supermarkets. We call for the cooked variety, but if you can’t find it feel free to substitute fresh and simply cook it before using. If you want more heat, replace the mild Italian sausage with hot Italian sausage.

Game plan: If tomatoes are not in their prime and you’re dying to make this pasta, toss the chopped tomatoes with a pinch of salt and set them in a fine mesh strainer over a bowl for at least 10 minutes to boost their flavor.
