Britta’s Glogg / Claypot Cari with Sweet Potato, Tofu & Winter Greens / Renkon no Sunomono (Marinated Lotus Root)

Blog Post & Recipe: Britta’s Glogg

Britta’s glogg couldn’t be simpler. Her family served it garnished with toasted almonds and raisins

Recipe: The new vegetarian: claypot cari with sweet potato, tofu and winter greens recipe

This Saigonese curry relies on a sweet, mild Indian curry powder; the most authentic is found in Vietnamese shops, labelled 'Indian curry powder'.

Blog Post & Recipe: Renkon no Sunomono (Marinated Lotus Root)

This is a simple dish to prepare. All you have to do is peel a piece of lotus root and slice it into thin slices. Then blanch the slices briefly in boiling water and toss them in a simple marinade made of rice wine vinegar, sugar, and salt.

Nigella's Sweet Potato Supper / Vietnamese-style Fish Soup / Mackerel with Harissa, Orange & Fennel

Blog Post & Recipe: Nigella's Sweet Potato Supper

Bright orange sweet potatoes roasted with asparagus, pancetta and cloves of garlic...what is not to love?

Blog Post & Recipe: A Vietnamese-style Fish Soup

It's simple, the flavours are clear and it's done cooking in minutes. The broth is excellent on its own but drop some crusty bread into it, let the bread suck up the broth and then bite into the bread

Blog Post & Recipe: Mackerel with Harissa, Orange & Fennel

I used the harissa with some really fresh mackerel fillets, orange and fennel so that I could finally finish off that bloody cous cous that's been lingering in my cupboard for months. A splash of rose water brought it all to life; though quite a summery dish, the fiery spice made it nice and warming.

Blog Post & Recipe: Fresh Veggie Summer Rolls with Shiso and Thai Basil

In order to make summer rolls, though, you must have at least two essential ingredients: rice wrappers, and mung bean starch noodles ... You basically make like a burrito.

Blog Post & Recipe: Buckwheat filled mushrooms

I love the crunchy buckwheat and I rather under-cook it just a little than let it go all mushy and porridge-like. Pared with rosemary (a little garlic and lemon zest too , if you wish) and tiny bit of cheese they are such a simple thing to enjoy.

Agedashi Tofu / Vietnamese Dipping Sauce (Nuoc Cham) / Uighur Naan

Blog Post & Recipe: Agedashi Tofu

A couple months ago I shared my non-traditional Agedashi Tofu. Instead of deep fried tofu served in the traditional dashi broth, it was served deep fried with homemade teriyaki sauce. Recently one of my readers asked me to share the traditional Agedashi Tofu recipe so here it goes.

Blog Post & Recipe: Vietnamese Dipping Sauce (Nuoc Cham)

One important element of Vietnamese cuisine is nuoc cham or a Vietnamese dipping sauce. Nuoc cham is a fish sauce based dipping sauce that deftly balances sweet, salty and sour aspects and it is really easy to make at home. The basic recipe includes fish sauce, water, sugar and lime juice and chilies and garlic are often added as well.

Blog Post & Recipe: Uighur Nan [via]

It's different from Indian Naan. It's a flatbread, cooked in a Tandoor oven, but it is pricked all over by an instrument called a durtlik before baking, both to keep the bread from puffing up, and as a decorative measure. It's also seasoned lightly with cumin and sea salt, although rosemary is very nice too. It's basically pizza dough without the oil, and it's made the same way.

Vietnamese Chicken Curry / Pommes Anna / Indonesian Fried Vermicelli

Recipe: What's in a Curry?

So what’s in a curry? It is, to put it simply, a blend of spices called a masala and may contain two or three spices, or a dozen or more; and it varies from region to region, household to household ...

This mild adaptation of an Indian curry has a Vietnamese twist added—sweet potatoes.

Vietnamese Chicken Curry (Ca Ri Ga)

Blog Post & Recipe: Pommes Anna (or one of the best potato dishes you’ll ever make)

It’s easy, requires almost no tending once it goes into the oven, and every time I make it, I cannot believe there are really only 3 ingredients. The magic of the recipe comes in the first two steps and in the use of a well seasoned cast iron pan.

Blog Post & Recipe: Indonesian Fried Vermicelli

Vermicelli noodle is quite bland by itself, it is the texture that we all love. When cooked right, it is always springy. When cooked wrong, it would be lumpy and broken. I got it wrong many, many times. I played them around in the wok for way longer than I should, causing the noodles to be soft, then broken, naturally. Toss them around really quickly and just get them off the heat. That’s the only wisdom I can share.

Pho Bo / Whole Wheat & Semolina Bread / Tempura

Article & Recipe: Vietnamese Beef and Noodle Soup: A tasty meal in a bowl

The base is a strong beef broth perfumed with star anise, peppercorns and ginger. Translucent rice noodles float in the bowl, topped by thin beef slices and sauteed sweet and crisp shallots.

Vietnamese Beef and Noodle Soup (Pho Bo)

Blog Post & Recipe: Pinch and eat / Pincez et mangez

Semolina flour, sometimes called just “semolina”, can be easily found at Italian markets and Middle Eastern markets. If not available, you can make the bread by using only whole wheat flour and all purpose four (2 cups of each).

Algerian Whole wheat and semolina bread (Khobz bal zraa’ wal smid)

Blog Post & Recipe: Tasty Tempura

Working with fresh, raw ingredients, you coat them in an incredibly light batter and fry them till just cooked. While some people use beer to lighten their batter, using a combination of plain flour and corn starch will work fine so long as the batter is kept close to ice cold.

If you still have a turkey carcase in the fridge ... you can ... use it to make a fantastic stock, the base for a pho ga. Traditionally, poultry pho is a simpler affair than the beef version

Article: The Crisper Whisperer: Big Bag of Salad

First things first: find yourself a one- or even two-gallon zip-top bag or a large glass bowl with a tight-fitting lid. I recommend the bag approach, because zip-top bags are freakishly good at keeping salad fresh.

It seems there are a few puddings (che) in Vietnamese cuisine which can be sered [sic] either warm or cold depending on the seasons.

Article & Recipe: Kabocha squash - a sweet epiphany

I've been a kabocha fan ever since - it lends itself to quick roasting, steaming, braising and pan-frying. Prepping it couldn't be easier because, unlike other winter squashes, you don't have to peel it. It has a very tasty deep green skin with celadon stripes that's better left on.

Vietnamese Rice Bowl / Wholemeal Bread / Quinoa

Blog Post & Recipe: Vietnamese Rice Bowl

I’ve always been intrigued by Vietnam as a country to visit but it was Anh of A Food Lover’s Journey who first got me interested in Vietnamese food.

Blog Post & Recipes: How to bake wholemeal bread

Unfortunately, wholemeal bread is, according to many experts, a tricky thing to get right, as the lower gluten content of the flour makes for dense results – the classic worthy loaf beloved of those who also, according to some wits, enjoy knitting their own yoghurt. I need to find a loaf that's quick enough to bake twice a week, yet tasty ...

Chicken wrapped in Bacon with Silverbeet, Orange & Pinenuts / Rice Porridge with Chicken and Lemon Grass / Black Bean and Summer Squash Enchiladas

Blog Post & Recipe: Chicken wrapped in Bacon with Silverbeet, Orange & Pinenuts

The salty flavours of the bacon and the bitterness of the greens are balance beautifully I feel with the sweet citric orange. It’s a great winter dish that can be served a crusty bread, polenta or mashed potatoes.

Blog Post & Recipe: Corinne Trang's Rice Porridge with Chicken and Lemon Grass (Chao xa ga)

Because I'd had a big pot of chicken stock hanging out in my fridge for a few days, I decided to make the Vietnamese version of congee, chao xa ga, which has a slightly more flavorful base (chicken broth boiled together with lemongrass and chili) than regular congee.

Blog Post & Recipe: Black Bean and Summer Squash Enchiladas

... we were out of corn, which I usually use in black bean enchiladas. Finally, I decided to create an enchilada recipe that would use the expiring produce du jour–the last of a big bag of patty pan squash–as a replacement for corn, and it was a big hit with the whole family.

Blog Post & Recipe: Vegetarian Phở (Vietnamese Noodle Soup)

In the interest of making vegetarian phở at home, I consulted my mother, who recalled her experience living in a Vietnamese Buddhist community that made meat-free phở broth with a medley of spices, ginger, and lots of carrots. This recipe is my interpretation.

Chickpea Soup with Spices / Sloppy Joes / Bánh Mì

Blog Post & Recipe: Aromatic chickpea soup with sumac, cumin & turmeric

- don't overcook your chickpeas: they really taste so much better when the soup has a somewhat "coarse" consistency - a bit of bite, really.

Blog Post & Recipe: Sloppy Joes

The trick to this recipe is to brown the meat well, on high heat. Don't crowd the pan, work in batches, and don't stir the meat until it is well browned on one side.

Blog Post & Recipe: Bánh mì

Bánh mì (literally sandwich on French bread) originated mid-century in Vietnam, then under French colonial rule. At first, it was a luxurious foreign import, a baguette lined with cured meats, butter and cornichons. But after France’s ignominious retreat post ‘54 it was transformed into a thoroughly local, immensely popular, cheap meal.

Blog Post & Recipe: Street Food of Hong Kong: Vegetable-n-Fish Soup

The authentic version adds with a lot of white pepper and sesame oil, but now I'd like to try another version that skips the two, but put into arugula to maintain a peppery taste in soup.

Recipe of White Fish Ball, Lettuce and Arugula Soup (for 2 persons)

Blog Post & Recipe: Phở Đuôi Bò (Vietnamese Noodle Soup with Oxtail). There's a follow-up post here.

Phở bò is a Vietnamese beef noodle soup; phở đuôi bò is one made with oxtail ... I like my phở broth silky with gelatin but not slick with grease, so I skim the fat pretty aggressively. To cut down on skimming efforts and to allow flavors to fully develop, I give myself a couple of days to build the broth.

Deep Fried Anchovies / Wine-Stewed Prunes / Vietnamese Lamb & Noodles

Blog Post & Recipe: Deep Fried Anchovies with Chilli & Preserved Lime Mayo

“You can cook them just like whitebait” the fishmonger advised. “Really?” I countered, “their heads look a bit big to eat.”

Vlog Post & Recipe: wine-stewed prunes & mascarpone

When at the end of a long day, I can sink into my couch holding a bowl of these prunes in my hands, I don't even think of shorter daylight hours ...

Blog Post & Recipe: Vietnamese Lamb and Noodles

The noodles were treated to the marinade the lamb had been sitting in [...] The marinade had created very succulent chops thanks to the lime, with the slight sweetness to it melding seemlessly, and beautifully, with the chilli and soy flavors bringing up the rear.

Beef Pho. Rendang. Puff Pastry.

Recipe: Recipe of the Day: Vietnamese Pho

This Vietnamese staple, pronounced ‘fuh’, is a concoction of fresh rice noodles soaked in hot flavorful broth, thin cuts of seasoned beef and a variety of garnishes.

Blog Post & Recipe: Indonesian Beef Stew - Rendang

There are different variations of Rendang: from the dry, black-brown type with stringy meat to the almost-soupy kind with, often, tough cubes. The Chinese makes theirs with pork! My favourite is made of beef, with thick gravy and tender meat with additional hard-boiled eggs to stretch the meal further.

Blog Post & Recipe: The Exquisite Joy of Puff Pastry

NUMBER ONE key to a good puff pastry is the butter. Go all out here and find the best unsalted butter you can get your hands on, no cost spared [...] The start to finish time is a bit long, 3 + hours, but most of that time is chill time in between folds [...] Pastries are as much science as art and you need to be as accurate as possible. So start weighing out ingredients and have less recipe missteps.

Blood

Recipe: Black Pudding

Ingredients

1 litre blood of wild boar
oxtails
300g fat wild boar, cubed
1.5 large onions, diced
300g oatmeal, soaked
1 tbsp paprika
1 tbsp butter

Recipes: Sangue di Maiale

Two regional Italian recipes for pork-blood pudding.

TIPS FOR WORKING WITH PORK BLOOD
1. Gather the blood as it drains from the slashed throat of the pig.
2. Stir continually while the blood drains. This is to avoid clots. Clots affect the texture of the finished product which you want as smooth as a dense pudding.
3. It is preferred to use the traditional method of pig slaughter to gather blood. If you can't and have obtained blood from a slaughter house then be sure to strain it, before cooking.

Boudin noir — blood sausage — is one of France’s oldest charcuterie preparations. It’s part of a sausage making tradition in France that has lasted well over 2000 years. “There is evidence of the activities of the lardarius, the Gaulish charcutier, in a number of bas-reliefs and inscriptions found at Narbone, Bordeaux and Cologne, and at Rheims, where a bas-relief shows two of these specialists at work…. All the items of charcuterie shown in the relief are easily identifiable: [blood sausages], strings of sausage, joints of pork, pig’s heads.” Although the raising and subsequent slaughter of the family pig was common in the French provinces up to the Second World War, today few families in the countryside raise their own pigs …
