Cook Perfect Beef Wellington / Albóndigas Soup / 8 Braises

Blog Post & Recipe: How to cook perfect beef wellington

Simon and Lindsey observe in the preface to their beef wellington recipe that "the whole point of cooking meat in pastry is to keep in the juices ... but if the pastry is good and thin, buttery and rich, nothing is nicer than a meat-soaked crust".

Blog Post & Recipe: i just flipped that

Loaded with vegetables and a good amount of spice, I couldn’t wait for it to finish cooking. The meatballs are made with beef and pork, but the book says there are some variations depending on region. You could use chicken instead of beef, and some meatballs are wrapped around a pitted green olive.

Fried Carrots / Celeriac Gratin with Caramelised Onions / Oven-Braised Apple Cider Brisket

Blog Post & Recipe: Fried Carrots; the update

It caramelizes the sugars and turns them golden and sweet!

Fried Carrots

Blog Post & Recipe: Celeriac Gratin with Caramelised Onions

Peel and thinly slice the celeriac and potatoes ... and pop them straight into a bowl of cold water. Pat dry on a clean tea towel and then layer into a deep casserole dish, seasoning with salt and pepper and adding the garlic as you go.

Blog Post & Recipe: Recipe for oven-braised apple cider brisket

A few weeks ago, while driving home from the local apple orchard, I had a brisket epiphany. Why not, I thought, combine wine and cider in the braise? When I got home, the (wine) cupboard was bare, so I moved on to Plan B, a cider-and-herb combination with onion and garlic.

Braised Brisket / 4 Confits / Prawn & Lemon Zest Soup

Recipe: Braised Brisket

You can also do this in a slow cooker.

Blog Post & Recipes: Vegetable Confit

This process can be applied to many other foods. Just keep these two guidelines in mind:

- Fully cover the food with fat (duck fat, olive oil, grapeseed oil, bacon fat…)
- Cook at low heat for a long time (no higher than 250ºF, 2-10 hours)

Blog Post & Recipe: Shrimp & lemon zest soup

This was way, WAY more than the sum of its parts, and it’s all due to the the lemon zest. While the parsley garnish was good, chopped tarragon or chervil would be even better. I’d also consider making a dedicated tomato and shrimp shell broth with a tiny pinch of saffron.

Key Lime Pie / Nyonya Style Pumpkin & Prawn Curry / Barbacoa Beef Cheek Tacos

Blog Post & Recipe: Key Lime Pie

I like this recipe because of the lime zest in the graham cracker crust. The filling is sweet and the zest gives some bitterness to the crust and creates a very nice flavour.

Blog Post & Recipe: Nyonya Style Pumpkin and Shrimp Curry

Now, let us get back to today’s recipe. This curry turned out relatively mild as the red chilies found here are not that spicy and the sweet pumpkin did neutralize the heat a little.

Blog Post & Recipe: Cook the Book: Barbacoa Beef Cheek Tacos

For those who are unaccustomed to cheek meat, braising it for tacos does wonders to accessibility because, after all, there's really nothing all that scary about a taco (right?). But odd cuts aside, these beef cheek tacos are pretty incredible. They're marinated in a mole-esque blend of spices, chiles, coffee, and peanut butter with a deep yet mellow spiciness that permeates the cheeks beautifully.

How to Tell if Chicken is Done / Spaghetti Squash with Roasted Tomatoes / Braised Pork Sirloin

Blog Post: Chicken Still Pink After Cooking? Don't Panic

The USDA says that as long as all parts of the chicken have reached a minimum internal temperature of 165°, it is safe to eat. Color does not indicate doneness.

Recipes: Complete meatless meal: Spaghetti Squash with Roasted Tomatoes

Roast in the oven for 30 minutes. Stir in beans and parsley and continue roasting until beans are hot and tomatoes are shrivelled, about 10 minutes. Mound squash on platter and spoon tomato mixture on top.

Blog Post & Recipe: Choosing a Cut That's High on the Hog- Braised Pork Sirloin

Well, the loin is where we get the leanest and most tender pork cuts (all those baby back ribs I just mentioned also come from the loin, so don't get confused). But in general loin cuts are lean. They are what we call "high on the hog". But these cuts tend to dry out if overcooked, so braising is a good way to prevent that.

Braised Fennel / Adobong Puti (White Chicken Adobo) / Stir-Fried Liver & Onions

Blog Post & Recipe: Braised Fennel

After 25 minutes of low-and-slow braising, it's meltingly tender. Adding chopped fronds at the last minute helps bring out the fennel's unique licorice flavor.

Blog Post & Recipe: Adobong Puti (White Chicken Adobo) for Kulinarya Cooking Club

A more common version of adobo is cooked with vinegar and soy, this recipe eliminates the soy sauce, which makes it the “white” version of adobo. Adobo is essentially a stew, usually made with chicken and pork, where the meat is simmered over and the dish is finished by pan frying the meat before serving.

Blog Post & Recipe: The Nasty Bits: Stir-Fried Liver and Onions

I know that my aunt would have stir-fried the pieces of liver with plenty of chili oil, oyster sauce, and rice wine, and leave the centers still rosy. I know that she would have sauteed the onions until they were soft and sweet and brown. She would have eaten the liver with plenty of white rice, her one weakness. She loved rice. She couldn't go a day without it. She would have taken the sauce, made rich and muddy with bits of broken-up liver, and spooned it with relish over her bowl of rice.

Green Mango & Papaya Salad / Braised Beef & Burdock / Fesenjān With Chicken

Blog Post & Recipe: Green Mango and Papaya Salad | ยำมะม่วงมะละกอ

I don't think this Thai-inspired salad is that far off from what you might expect to find in Thailand. I simply mixed the shredded mango and papaya with basil and mint, added some freshly roasted cashews, and then drizzled the typical Thai salad dressing of fish sauce, lime juice, sugar, and chilis over top.

Blog Post & Recipe: Braised Beef and Burdock

In this braise, the iron rich burdock not only provides a texture contrast, it also adds an earthy flavor that goes well with the miso. The tomatoes and wine contribute sweetness and a fruity aroma and that balances out the earth-tones. Lastly, the collagen rich shank produces meltingly tender morsels of meat that adds richness and body to the stew.

Blog Post & Recipe: Fesenjān With Chicken

Fesenjān is one of those many great Iranian dishes that becoming so popular among my family. The deliciousness, nutty, fruity, sweet and slightly tangy flavor is tantalizing. One might think that this dish require times to prepare. It just the oposite, and though it sounds exotic, ingredient such as pomegranate molases, or pomegranate syrup are readily available in most grocery store. You can use any poultry for this dish, I suppose any meat will be delicious as well.

Pancetta-Wrapped Peaches on the BBQ / Tea Smoked Trout / Slow Braised Pork Hocks in Beer

Blog Post & Recipe: Pancetta-Wrapped Peaches on the Grill

Tip: keep the pancetta in the fridge until you are ready to assemble, it's easier to handle when it's still cold.

Blog Post & Recipe: Tea Smoked Trout

Since realising how easy it is to do some casual smoking at home with nothing more than a gas burner, a wok, and a steamer of some description, I’ve turned my hand to many different things. Smoking onions, garlic, capsicum, and soon plan to get a slab of beef brisket in there and made some home made pastrami.

Blog Post & Recipe: Slow Braised Pork Hocks in Beer [via]

Pork hocks are from the shoulder part of the pig. It is parallel to pork shanks with crosses cuts. It is well known for its tenderness and rich flavor. It is also flavorful and is loaded with irresistible aroma. Since this piece generally consists of much skin, tendons and ligaments, it requires long cooking through stewing or braising to be made palatable.

Store Certain Herbs / Braised Radishes / Homemade Ginger Beer & Dark 'n' Stormy Cocktail

Blog Post & Tip: How to Store Cilantro (and Other Herbs)

Some herbs take to freezing well (such as basil, mint, chives, and obviously cilantro), and then they are quite easy to use later (or much later!) in soups, stews, and other cooked dishes.

Blog Post & Recipe: Braised Radishes {recipe} – When a Side Dish Not a Side Dish

Then we realized that we could braise them in the same way that we’ve braised their much larger Asian cousins, the daikon radish, but with different seasonings and flavors. Lemon. Thyme. Butter.

Blog Post & Recipe: Homemade Ginger Beer and the Dark 'n' Stormy

Besides all the cool ideas and wavelengths that must bounce around in that shop, they apparently have delicious ginger beer. And they offer an informal recipe in the spread: take ginger, cut it up, add some lemon juice and sugar, toss in hot water and yeast, and give it 24 hours.

Braised Lamb Shanks with Yorkshire-Style Puddings / 3 Salads / Spetsofai (Stewed Sausages & Peppers)

Blog Post & Recipe: Braised lamb shanks with Yorkshire-style puddings [via] (and, see, another blogger is also making braised lamb shanks, and the NZ Herald has a recipe for lamb shanks and macaroni)

Instead of making the usual thick, sticky sauce, which can be a little heavy, I opted for a light, almost soupy, tangy tomato and stock sauce.

The roasted beetroot salad can be made more substantial by adding crumbled feta or goat’s cheese. All of these recipes make a great accompaniment to a Sunday roast.

ROASTED BEETROOTS, CARROTS & CAPSICUM ... ROAST FENNEL SALAD ... WARM MUSHROOM & ROCKET SALAD

Blog Post & Recipe: Spetsofai

In it’s complete simplicity, spetsofai is sausages and peppers. It traditionally hails from the Thessaly region of Greece and whilst it lends itself as a winter dish the produce it uses is more synonymous with summer. The traditional recipe is a little more spicy and uses loukaniko (the Greek word for sausage). I was making this for a friend of mine and her eight year old so anything considered spicy was off limits. I added a little oomph to the spetsofai by using some smoked paprika and a little red wine.

Fried fish bones taste like what you imagine of thin and delicate bones: crunchy at the thick parts and crispy at the thin parts, with a slightly fishy flavor. The trick is to leave some of the fish flesh on when you fillet the whole fish, so that the meat clinging to the bone becomes crispy and brown

Nettle Beer / Brisket with Rhubarb and Honey / The Song of Ice and Fire Food Blog

Blog Post & Recipe: Homebrew from the hedgerow

This simple brew is easy to make but rather treacherous. The flavour is pleasant, if unsophisticated, and a pint of the stuff has the same effect on one's equilibrium as downing a pint of champagne would have.

Nettle Beer

Blog Post & Recipe: brisket with rhubarb and honey

I came upon a brisket recipe with rhubarb and honey. I had never considered the combination before, but as soon as my eyes set upon it, it seemed like a no-brainer. The bright, tart rhubarb notes would perfectly highlight the slow-cooked, tender beef.

5 Ways to Eat Grilled Vegetables / Dairy-Free Pesto / Butter-Glazed Radishes

Blog Post: How to Eat Grilled Vegetables 5 Days In a Row

Here are five ways to cook once on Sunday, then eat grilled vegetables for the entire week — without getting bored at all.

Day 1: Grilled ... Day 2: Reheated ... Day 3: Pizza ... Day 4: Marinara ... Day 5: Blended

Blog Post & Recipe: A Dairy Free Pesto

I think it must have been Lucy who first put me onto the idea of using miso instead of parmesan. Genius. White miso has a soft enough flavour that it doesn’t dominate, while providing plenty of that umami deliciousness which you’d otherwise be getting from parmesan.

Blog Post & Recipe: Have your way

As braises go, this one is very quick. You’re not dealing with short ribs or brisket here. The radishes spend almost as much time soaking in a bowl of water beforehand - to loosen any trapped dirt - as they do cooking. They get only a brief simmer in butter and stock, and then you reduce the liquid to a glaze that coats them. You can use any kind or color of radish you want, but if you use red ones, there’s a nice side effect: they give some of their color to the cooking liquid, which goes rosy, and they themselves wind up the color of cotton candy.

Corned Beef, Cabbage & Kimchi Burrito / Chicken in a Bread Crust / 3 Braising Recipes

Blog Post & Recipe: Corned Beef, Cabbage and Kimchi Burrito

In addition to the corned beef, this burrito includes cabbage sauteed with bacon, kimchi, which is a spicy fermented cabbage, onion and cilantro relish, melted cheese and some avocado salsa verde (because it's green and it's St. Patrick's Day).

Blog Post & Recipe: Chicken in a Bread Crust

I was going to cook a bread-crusted chicken of my own, using a sourdough crust ... The skin of the chicken was less golden than with the salt crust, which I suspect is more porous, but plenty of juices had collected inside, and the chicken was just as moist and flavorful.

Article & Recipes: Slowly does it: delicious braise recipes

So what are the key things to watch? For most braises the meat is browned before the liquid is added. The caramelisation and 'toasting' produced by frying in fat are essential to the end flavour. But meat won't brown if it is wet or if you crowd the pan, so dry your meat then cook it in batches. Don't use too much fat or you'll end up with an oily dish. If anything burns – garlic or onion or the fat itself – throw it out before adding liquid.

Zucchini Fritters / Moong Dal & Red Lentils with Browned Onions / Braised Neck of Lamb with Apricots & Cinnamon

Blog Post & Recipe: zucchini fritters

This batter is beautifully light because of the soda water, but it's also forgiving. Having only one egg, I chucked in a couple of tablespoons of buttermilk last night and by god, it worked. They were even lighter.

Blog Post & Recipe: Dinner Tonight: Moong Dal and Red Lentils with Browned Onions

You could easily substitute all red lentils for this and it would still be pretty good: the real secret is in the fragrant topping, a pile of browned onions, chiles, and spices, bathed in screaming hot ghee and poured over the top of the dish. Once you stir them in, they perfume the humble lentil like you wouldn't believe.

Article & Recipe: Nigel Slater's braised neck of lamb with apricots and cinnamon, and mograbia with bay and cinnamon recipes

I value neck of lamb for its cheap price, sweet fat and almost indestructible nature. The fact that I can make a luxurious supper out of something people boil up for the dog makes me warm to it all the more. Tucked up in a pan with spices and onions, the untidy lumps of meat can cook for a few hours, the toughness and gristle breaking down to soft, spoonable meat and wobbly fat.

Jackfruit, available from Afro-Caribbean and Asian food shops and markets, has a rough outer skin and a white, fibrous interior. It is a great asset to non meat-eaters. Cooked until tender, it absorbs flavours, and has a texture not unlike chicken.

Blog Post & Recipe: Braised Fennel

The purpose of the liqueur is to intensify the licorice flavor of the fennel. If you don't have anise-flavored liqueur, or are avoiding cooking with alcohol, you can achieve a similar effect by adding a star anise pod to the stock when you are braising.

Turkey tamales are usually made with one of two salsas, either a tangy tomatillo or a rich mole ... I find that smoked turkey goes especially well with a zesty salsa verde, but nothing beats roasted turkey paired with the earthy bittersweet flavor of mole—it’s a classic combination.

I chatted with a chef friend about what to make for Christmas Eve dinner. He suggested seven-hour leg of lamb ...
