Roast Tomato Soup with Mussels & Fennel / Vegetable Stock / Marinated & Broiled Sardines

Blog Post & Recipe: Simple Lessons in Roast Tomato Soup with Mussels & Fennel

So when a Sicilian cook's fishmonger was unable to supply her with all the fish she wanted for her brodu di pisci, or the family's budget didn't allow for an elaborate array of fresh fish, she had a trick. She'd use a combination of garlic, parsley, chilies, and salt pounded into a rough paste and then fried in local olive oil.

Blog Post & Recipe: How to Make Vegetable Stock

It helps to brown the veggies first, so the stock gets infused with some of the flavors from caramelization. Unlike chicken or beef stock, which needs time to extract all the goodness from the bones, with vegetable stock, you cook the stock for only an hour to an hour and half. Beyond that, the flavors begin to disintegrate.

Blog Post & Recipe: The Nasty Bits: How to Make Sardine Lovers out of Sardine Skeptics

If you can get sardines that are very fresh, the easiest thing to do is to grill or broil them so the skin chars a little. Sprinkle with salt, freshly ground pepper, and lemon or vinegar. If, however, you find that fresh sardines are still too fishy for your taste, consider a simple marinade. I use ginger to combat the fishiness, a little wine for depth, soy sauce, and a dash of salt and sugar.

Eggplant Parmesan Sliders / Mussel Conchiglie / How to Cook Perfect Welsh Rarebit

Blog Post & Recipe: Eggplant Parmesan Sliders

Top off the patties with homemade tomato sauce and a slice of fresh, melted mozzarella

Blog Post & Recipe: Mussel Conchiglie

Despite the cream, it tastes light and fresh but luxurious too. The shells are very good at scooping up the sauce and hiding mussels within them. Of course I had to put my own spin on it and add some lemon zest for some citrus flavour that I find essential with seafood.

Blog Post & Recipe: How to cook perfect welsh rarebit

Most rarebit recipes, with the exception of Nigel Slater's quick version, loosen the cheese with a liquid: milk or ale, in Jane Grigson's version; cider for Cheese Society; port for Mrs Beeton; or stout, which comes with the weighty recommendations of both Mark Hix and the Bareham / Hopkinson team.

Asparagus & Lemon Quinoa Risotto / Chai Iced Tea / Coconut Green Curry Mussels / Ox Tongue Fritters & Green Sauce

Blog Post & Recipe: Asparagus & Lemon Quinoa Risotto

My favorite, lazy way to make quinoa is to throw in some peas and soy sauce. But this time, I was curious how it would work as a risotto. The answer: quite well!

Blog Post & Recipe: Chai Iced Tea

It’s spicy, has a good amount of caffeine (due to the black tea), is milky and sweet, and most important, it’s cold. The sweetened condensed milk is major. If you don’t have a can in your cupboard, and don’t want to buy one, then milk and sugar are totally a workable substitute.

Blog Post & Recipe: coconut green curry mussels

We prep the ingredients (together!) with Andrew picking the mussels over to discard the open or cracked ones. Then he gives them a good rinse and peels a knob of ginger. I busy myself with the lemongrass, the garlic, lime juice, and cilantro. We drop a nob of butter in the pot, and let it melt and get foamy before we bloom the aromatics, stir in coconut milk and curry paste, and add the mussels.

Blog Post & Recipe: tongue and groovy: ox tongue fritters and green sauce (the post includes a link to Hugh Fearnley-Whittingstall's ox tongue, oxtail and pigs' cheek recipes)

First, buy a salted ox tongue from your butcher. It should look like the photo above. You might want to leave it to rinse in cold water for a while before you get properly started - or, if you've got a nice butcher, s/he might have done that for you. Then, cover the tongue with water (you'll need a BIG pan), bring it to the boil, bubble it away for a couple of hours with a few tasty bits and pieces, such as these ...

Sopa de Carne / Roasted Mango & Habanero Salsa / 7 Chinese & Filipino Recipes

Blog Post & Recipe: Sopa de Carne

While the beef and olives impart rich and bold flavors, the soup is broth-y and unexpectedly light. It doesn’t look or feel greasy.

Blog Post & Recipe: Roasted Mango and Habanero Salsa

Of course, there was a little thinking required about what to actually do with this salsa. (As if eating this intensely sweet concoction balanced with just the right amount of fire with a spoon out of the food processor wasn’t good enough.)

Sure enough, when the recipe arrived, we saw right away what makes it different: The cauliflower is cooked in cream and then pureed. McNee often adds a pinch of sugar, which brings out the natural essence of the vegetable. Then he bakes it at a low temperature so it gently rises and doesn't fall when it cooks.

"Tea can do many things for you," Gold added. "The tannins in tea can be used to balance sweetness or richness in other ingredients. Tea can add depth of flavor to a dish, complexity or brightness. It can be used to tease flavors out, to bridge between different disparate ingredients or highlight certain aspects of a dish."

Spicy Lamb Pie / 5 Recipes for St. David's Day / No-Knead Bread: a Convert's Story

Blog Post & Recipe: Spicy Lamb Pie.

I reckon this pie, if fennel substituted for carrots and fish for lamb, would work wonderfully as a dish to serve to my pescetarian friends. I’d have to cook the sauce first and then add the fish just before baking – what do you think?

I’ve revised it a little and put the flour into weights rather than volume. Steingarten uses spelt flour on the cutting board in the proofing basket, which I recommend for flavor and appearance; Lahey uses bran and no proofing basket. This is up to you.

Basic Granola / Baked Farro Pasta / Broiled Mussels

Blog Post & Recipe: Basic Granola Formula

... when it comes to oven-baked granola, I find that what one needs isn't really a recipe, but rather a formula.

Blog Post & Recipe: Baked Farro Pasta Recipe

It's a cold weather crowd-pleaser made of alternating layers of broken farro pasta, sliced potatoes, two cheeses, and mustardy shredded cabbage. The sort of thing you can prep a day or two ahead of time, then bake when convenient.

Blog Post & Recipe: broiled mussels

And so when they suggested that I steam mussels open in wine, slather them with butter compounded with parsley, garlic, smoked paprika and salt and broil them until the butter is bubbly and serve at a party, I immediately wanted to do just that.

Blog Post & recipe: Green Chilli Risotto

This is another rather unorthodox recipe from Sue Style

Blog Post & Recipe: Pumpkin Celeriac Soup

One of my favourite blogs, Cook Almost Anything, recently showed a wonderful recipe for Jap Pumpkin Soup with Curried Onions. I really can only begin to tell you what a clever idea I thought it was to have a fairly plain pumpkin soup (no offence Haalo!) punctuated with a wonderful relish of curried onions : the very onions and curry seasonings that would usually be blended with the pumpkin soup, kept separate to highlight all the elements ...

Aebleskivers. Moroccan Carrot Soup. Caramelized onions.

Aebleskivers are a type of pancake cooked in a special stove-top pan with half-spherical molds. The center is soft and fluffy, almost creamy.

Recipe: Mrs. Malmberg's ... Recipe: Grandmother's aebleskivers

Blog Post & Recipe: Florence Fabricant's Moroccan Carrot Soup with Mussels

The recipe comes from Florence Fabricant's Pairings column ... All you have to is whip up a simple soup (fry an onion and cumin in olive oil, add a bunch of peeled, chunked carrots, boil, puree, done). Then you purée that into a smooth soup, and add fresh lemon juice ...

Article & Recipe: Turning onions into pure gold

... just because there are no long lists of ingredients or complicated techniques does not mean caramelizing onions is without pitfalls. The main one -- and it's a dish-killer -- is that caramelizing can come awfully close to burning, and once you've scorched the onions there's no way to get rid of that bitter flavor but to dump them out, wipe the pan clean and start over.

To avoid this, cook the onions in the heaviest pot you have over the lowest heat possible for much of the time, stirring as often as you can. That should be at least every 15 to 20 minutes for most of the cooking, shortening to 5 to 10 minutes when you get down to the end stages.

Caramelized onions

N.b. I've divided the 'soup' tag into 'soup' and 'vegetable soup.' It was getting unwieldy.

Potatoes. Spaghetti. Who's Cooking?

Article: Who’s Cooking? (For Health, It Matters)

Home-cooked meals are typically more healthful than those prepared at restaurants. But just how much more healthful depends on who’s doing the cooking, where the recipe comes from, and even the dishes in which the food is served.

Studies show that the biggest influence on family eating habits is the person who buys and prepares the food. These “nutritional gatekeepers,” as researchers call them, influence more than 70 percent of the foods we eat, according to a 2006 report in The Journal of the American Dietetic Association ...
