Philadelphia Pepper Pot Soup / Lemongrass Chai Tea / 3 Surf-Club Meals

Blog Post & Recipe: Philadelphia pepper pot: the soup that won the American Revolution?

But true, tripey pepper pot has dwindled in popularity, and is now merely a curio in a few Philadelphia restaurants. The famous City Tavern sells a West Indian version on its lunch menu which reportedly does neglects tripe altogether.

Blog Post & Recipe: Lemongrass Chai Tea

If you had asked me about 6 months back if I would use lemongrass in tea I would have probably thought it was some strange Thai fusion version of tea. I didn't know then, that I had been having lemon grass tea for years only I knew it as "Chai Patta"

Article & Recipes: Surf-club cuisine

An ''oarsome'' (thanks for the title, Noosa Surf Club) prawn salad makes an easy-breezy lunch, with its freshly cooked prawns, avocado, radish and leaves drizzled with creamy green goddess dressing. Then there's a towering surf-and-turf burger that tops juicy chorizo and beef burger meat with crumbed calamari rings, beetroot, lettuce and tomato that's just plain surftastic.

Lamb & Pine Nut Sausage Rolls / Beetroot, Citrus & Ginger Juice / Curried Prawns with Cucumbers

Blog Post & Recipe: lamb and pine nut sausage rolls

prep time: 25 minutes
cook time: 40mins + cooling time (10-15mins)
makes 40 sausage rolls

Blog Post & Recipe: Beetroot, Citrus & Ginger Juice

It's hard to describe perfection, but imagine an earthy-sweet jewel coloured drink redolent with the mild flavour of beetroot as base with a few citrus-y top notes and a hit of sinus-clearing ginger to round it off.

Blog Post & Recipe: Curried Shrimp with Cucumbers

The shrimp and cucumber, which is cooked just beyond the tender-crisp stage, keeps things nice and light to balance out the rich coconut sauce. And you've got two options for the sauce. You can use a whole can of coconut to get a nice and soupy curry, which would saturate and flavor the bed of rice, or cut back to make things a less saucy.

Vegan Party Pies / Sushi Burrito / Miso Pig's Head

Blog Post & Recipe: Vegan Party Pies: Aussie "meat" pies for the footy

I couldn't guarantee Geelong would win. I decided I would at least succeed in making vegan party pies.

Blog Post & Recipe: Sushi Burrito

This is really just a sushi hand roll, but the burrito part is to encourage you not to see DIY sushi as difficult or requiring rules to be followed. There is virtually NOTHING that can not/should not be dropped into the middle of these rolls.

Blog Post & Recipe: the miso pig’s head

It’s basically an adaptation of the classic Izakaya staple motsu nikomi, a hearty stew of braised pigs tripe and vegetables in a rich miso broth, a dish that really highlights the natural affinity between offal and miso – Our take on it, using all the different tastes and textures of a pigs head lifts it to another level.

Chicken, Leek & Fennel Pie with Cream Cheese Pastry / Roast Beetroot & Chickpea Salad / Pandan Lamingtons

Blog Post & Recipe: Chicken, Leek and Fennel Pie with Cream Cheese Pastry

Recipe adapted from Maggi Beer’s Chicken, Grape and Champagne Pie (from the cookbook Maggi’s Kitchen and online).

Blog Post & Recipe: Roasted Beet & Chickpea Salad

This is an easy salad and was delicious at room temperature or cold from the fridge. The fresh mint goes really nicely with the earthy flavor of the sweet beets.

Blog Post & Recipe: Pandan Lamingtons

I adapted a recipe for plain lamingtons by adding some pandan essence paste to the sponge cake. It was quite convenient that the recipe used a chocolate ganache rather than a cocoa icing for the coating, as I was able to switch it to white chocolate ganache which was a much better match for that lovely soft & fluffy green pandan cake.

Roasted Ruby Fruits / Savoy Cabbage Rolls with Golden Chanterelle & Brown Rice Filling & Cranberry Sauce / Meat-Free Barbecue Ideas

Blog Post & Recipe: Roasted Ruby Fruits (this blog has a weirdly huge header. Scroll down)

Like a lot of our [Australian] native fruits the Rosella is under utilised despite it's deliciousness ...

A bunch of lovely red rhubarb- I know there are green varieties, but I think the red is prettier
A punnet or two of strawberries
A handful of raspberries
A cup of Rosella petals

Blog Post & Recipe: Savoy cabbage rolls with golden chanterelle and brown rice filling and cranberry sauce

Together with brown rice I've used dried golden chanterelles, those beautiful mushrooms you would see at every market stall in Finland around August ... I've flavoured the filling with some of those beautiful herbs I got from the garden - thyme, rosemary and oregano, but you could use any dry or fresh herbs you have available.

Blog Post & Recipes: Meat-free barbecues

A meat-free barbecue will seem a gloomy prospect to many. After all, it is hard to muster much enthusiasm for the average veggie burger – so grey and miserable that it resembles nothing more than a slice of Wednesday ... The essential point is not to try to replicate meaty barbecue favourites such as burgers and sausages ... and instead attempt a different way of cooking altogether.

Fried Egg with Burnt Sage Butter, Chilli & Garlicky Yoghurt / Scones / Teriyaki Tofu Noodle Bowl

Blog Post & Recipe: Skye Gyngell’s fried egg with burnt sage butter, chilli and garlicky yoghurt

Gyngell gives this rather useless (and weirdly pornographic) advice about how to tell whether your eggs are fresh: ‘Very fresh eggs have bright, shiny yolks that sit proudly on top of bouncy, thick whites as you crack them into the pan.'

Article & Recipe: How to bake the perfect scone

For some tips on how to turn leaden rocks into luscious scones I turned to the organisation responsible for producing tens of thousands of them each year at the Sydney and Melbourne agricultural shows, The Country Women’s Association

Blog Post & Recipe: Teriyaki Tofu Noodle Bowl

Teriyaki sauce is really easy to make at home. Just whisk together sugar, mirin and sake (or vinegar), and let it boil to thicken. You can use this sauce as a marinade on vegetables, brush it over anything you are grilling, or toss it in some rice or noodles.

Espresso Machine Scrambled Eggs / Chicken Wing Marinade / Australia Day Cuisine

Blog Post & Recipe & Video: Espresso Machine Scrambled Eggs

I scrambled these eggs using my espresso machines steamwand.

Blog Post & Recipe: Something for the barbie: A killer chicken wing marinade

With nothing more than a stalk of lemongrass, a bulb of garlic, some fish sauce and sugar, this marinade punches and kicks the liveliness of Saigon in your mouth.
