Puré de Frijol y Plátano Maduro (Bean and Ripe Plantain Puree) / Chicken Turnovers / Magic Sauce

Recipe: Puré de Frijol y Plátano Maduro (Bean and Ripe Plantain Puree)

This Bean and Ripe Plantain Puree is a traditional Colombian side dish. I know it doesn’t look good in the picture, but it is delicious and easy to make and goes perfectly with grilled beef, pork or chicken.

Blog Post & Recipe: Chicken turnovers (a.k.a. chicken pie)

Lay a puff pastry sheet flat. Place about two to three tablespoonfuls of the filling at the center of the sheet. Fold one edge over the filling. Lightly brush the very edge with egg. Fold over the opposite edge, overlapping over the egg-brushed edge to completely enfold the filling. Flip over so that the seam is underneath.

Blog Post & Recipe: Magic Sauce Recipe

I call this magic sauce. In part, because it makes everything it touches shimmer with deliciousness. It's magic like that. Technically, it's a riff on a chimichurri sauce - one that veered off the rails in a big way. Much tweaking has rendered it a distant second cousin. If that. In fact, the hallmark of that sauce, parsley, I skip entirely.

I stuffed these guys with pulled pork, queso blanco, and banana, the ultimate habanero flavor complement.

Blog PosT & Recipe: Grilled asparagus with grilled halloumi

But now on to the dish I am sharing with you today; a beautiful little salad with asparagus and grilled haloumi. It’s brilliant in flavor and the mustard dressing fits perfectly

Blog Post & Recipe: Raw veggie spring rolls

Place several spinach leaves down as the base, then place a large fingerful amount of vegetable salad on top. Fold the top and bottom edges over the salad, then pull one of the remaining sides over the filling, then roll into a cigar shaped log.

Braised Mushrooms with Dashi / Fried Penne / Harissa

Blog Post & Recipe: Braised Mushrooms with Dashi

Whenever I get some fresh shiitake mushrooms at the market, I always make this Japanese-style braised mushrooms with dashi and mirin.

Blog Post & Recipe: Fried Penne

I also wanted something kind of spicy so I threw in cumin, coriander, cinnamon and cayenne. The resulting crispy snack was like crunching into the most satisfying chips.

Blog Post & Recipe: Harissa

So what did I use the Harissa for? I tossed it through some stir fried vegetables. I used it in a vegan lasagna instead of a tomato base and I used it as a sauce over grilled fish.

Blog Post & Recipe: inspiration everywhere

A few weeks ago when I was in Adelaide for work, a taxi driver told me the secret to amazing scrambelled eggs. Just stir through a heap of feta when you start to cook the eggs so it melts though as they cook. [...] When I quizzed [my hairdresser] Graeme about his signature dish he said that his latest favourite thing was parsnip and cauliflower mash simmered in chicken stock and finished with lashings of sour cream.

Green Chilli Risotto. Pumpkin Celeriac Soup. 100 Easiest, Fastest Recipes.

Blog Post & recipe: Green Chilli Risotto

This is another rather unorthodox recipe from Sue Style

Blog Post & Recipe: Pumpkin Celeriac Soup

One of my favourite blogs, Cook Almost Anything, recently showed a wonderful recipe for Jap Pumpkin Soup with Curried Onions. I really can only begin to tell you what a clever idea I thought it was to have a fairly plain pumpkin soup (no offence Haalo!) punctuated with a wonderful relish of curried onions : the very onions and curry seasonings that would usually be blended with the pumpkin soup, kept separate to highlight all the elements ...

Masala Omelette. Madeleines. Side Dishes.

Blog Post & Recipe: Masala Omelette - a perfect hangover cure

I had a quick google around and found Nigella's recipe, which is what I based mine on. I think she uses way too much of the spices - 1 tsp each of coriander and cumin would be mightily overwhelming. This was delicious; delicately spiced, a little bit of heat from the chilli, and best of all, it cured me.

Blog Post & Recipe: Madeleines w/ Chocolate Dipping Sauce

A well-made madeleine has the ability to pause time, and allow one the chance to reflect and savor the simple beauty in life ... I rarely find a madeleine that has time-pausing goodness ... Time paused. For quite a long time. Everything I had been searching for and intimately longing for in a madeleine had now been found.

Reading this dewy-eyed stuff, I'm reminded that Proust was far more tough-minded than people give him credit for. A piece of trivia: his narrator's madeleine only had its effect after he had dipped it in tea and sucked up some wet crumbs in a spoonful of liquid. The legend that follows the book around lets you think that he took a bite of a biscuit alone, but no, he makes it clear that the connection of tea with crumb was absolutely necessary.

And once I had recognized the taste of the crumb of madeleine soaked in her decoction of lime-flowers which my aunt used to give me ... immediately the old grey house upon the street, where her room was, rose up like the scenery of a theatre to attach itself to the little pavilion, opening on to the garden, which had been built out behind it for my parents ...; and with the house the town, from morning to night and in all weathers, the Square where I was sent before luncheon, the streets along which I used to run errands, the country roads we took when it was fine. And just as the Japanese amuse themselves by filling a porcelain bowl with water and steeping in it little crumbs of paper which until then are without character or form, but, the moment they become wet, stretch themselves and bend, take on colour and distinctive shape, become flowers or houses or people, permanent and recognisable, so in that moment all the flowers in our garden and in M. Swann's park, and the water-lilies on the Vivonne and the good folk of the village and their little dwellings and the parish church and the whole of Combray and of its surroundings, taking their proper shapes and growing solid, sprang into being, town and gardens alike, from my cup of tea.

It also seems to me that (according to the legend) the whole madeleine business is thought to be fairly relaxed, sweet, genteel, but within the landscape of the narrator's mind it has the force of two planets smacking together, and the memory that comes out of it is often an ugly one -- people are imprisoned, bullied, humiliated, patronised, driven frantic, and abandoned. The book's most celebrated character, aside from the madeleine, is an elderly aristocratic snob who employs attractive young male prostitutes to whip him in brothels.

Carrots

Recipe: Glazed Carrots

Recipe: Carrot Oatmeal Cookies Recipe

If you somehow combined a coconut macaroon with a bit of carrot cake, you might end up with a cookie like this one.

Blog Post & Recipe: Carrot Soup Recipe

I typically seek out "early" carrots with the bushy green tops still on. The leaves should be fresh and not wilted, and the carrots should have vibrant color. If they feel rubbery, pass on them. I pass on bagged carrots or the big, woody ones - the early carrots often have a much sweeter flavor.

Yum! I just made this for lunch for my son (12mths) and I. I'm not usually a soup person but this is really tasty and super easy to make. If I can make it, anyone can. I used onion as we had no leek.

Recipe: Carrot halwa

1kg carrots, grated
100g ghee plus 1 tbsp extra
200g sugar
7 cardamom pods, crushed and seeds reserved
10 natural almonds, slivered, plus extra to garnish
10 pistachio nuts, slivered, plus extra to garnish
4 tbsp milk powder
1 tbsp ghee
2 tbsp cream

Recipe: Jamie Oliver -- carrots

My favourite ways of cooking carrots all serve 4 people – for each recipe you will need 500g/1lb 2oz of carrots, either left whole if they are baby ones, or sliced into small erratic pieces – nothing too perfect.

Some Irish Recipes

Recipe: Soda Bread

Recipe: Boxty (Potato Griddle Cakes) Recipe

Recipe: Colcannon

A mashed potato side dish, Colcannon was traditionally served, with coins hidden inside, at Halloween. Ours has cream, instead.

Recipe: Barmbrack

An authentic recipe for the classic Irish fruit bread.

Recipe: Drisheen

2 pt Milk
1 pt Water
2 pt Sheep's blood
1/4 lb Breadcrumbs
1 lb Mutton suet
2 ts Salt

Recipe: Dublin Coddle

It consists of layers of roughly sliced pork sausages and rashers (thinly sliced, somewhat fatty back bacon) with sliced potatoes, and onions. Traditionally, it can also include optional barley.

Recipe: Champ

Colcannon is made in much the same way as champ, but with the addition of cabbage. In parts of the country white cabbage is always used. In any case, shred and chop a small cabbage (discard the stump) and cook until tender. Beat into the potato mixture and serve as above.

Testing that fish is done: This is easy provided the fish is cooked while the skin is on. Push the skin gently with your fingertips: if the flakes can be felt just beginning to slip apart under the skin, the fish is done. For skinless fillets, look for opaque on the outside, but still slightly translucent in the centre.
