Mayonnaise in 60 Seconds / Silverbeet Stems with Sesame-Yogurt Sauce & Black Sesame Seeds / Ham Cooked in Hay with Beer

Blog Post & Video & Recipe: Mayonnaise in 60 seconds (video recipe)

ALL INGREDIENTS MUST BE AT ROOM TEMPERATURE; YOU NEED AN IMMERSION BLENDER/HAND-HELD BLENDER FOR THIS METHOD

Blog Post & Recipe: Stem that waste

So here is a recipe for chard stems, braised and served with a tahini-yogurt sauce and black sesame seeds. It’s a very simple dish. And if you have the greens, you can cook them and serve the two together. Amounts are really irrelevant here; you can do this with pounds of chard stems if you have them. Just make more sauce as needed.

Blog Post & Recipe: Cooking with hay

[Elena] Molokhovets [author of Russian cookbooks] was using hay to stew cabbage by spreading it on the oven floor ‘as soon as the rye loaves are moved from the oven’ (to judge the right temperature), to boil jars of preserves wrapped in straw to prevent them from knocking, to store eggs and fruit, to test the readiness of cakes etc etc. The possibilities of using hay was truly limitless – a 19th century equivalent to our microwave (not that I own one of course!)!

Blog Post & Recipe: A Healthy Start

Quinoa, Squash & Leek Pilaf with Runny Eggs

Article & Recipes: For Whole-Grain Pancakes, Try a Little Tenderness

In bread, it’s difficult to use whole grains exclusively because you usually want the glutens in white flour for stretchiness and toughness. But in pancakes, you’re looking for tenderness.

After an hour and a half on the stove, the meat should fall away with just a tug from the carving fork. This is an unapologetically old-fashioned dish, and the best accompaniments are those of a gentle nature: a cosseting sauce, some floury steamed potatoes and a dab of mild mustard.

Trail Mix / Cure a Ham / Build a Mud Oven

Forum Post & Recipe: Perfect Trail Mix

The perfect trail mix requires:
* a good balance between crunchy (nuts, cereal or grain-based ingredients) and chewy (chocolate, yogurt, dried fruit) ingredients.
* A good balance between salty and sweet.

Blog Post & Recipe: How to Cure a Ham

Making the brine was simple, though I changed the basic recipe by adding some cloves and molasses and substituting turbinado sugar for the brown. I stuck my ham into the liquid, sealed the container, stuck it in the fridge and then waited.

Compared to masonry ovens, which can cost hundreds or thousands of dollars and usually require cement in their construction ... a cob oven can be made from very simple, locally available materials. (Although it must be said that masonry ovens undoubtedly have a longer lifetime!)

Ham Stock / Lamb Braised in Milk with Fennel / What Freezes Well?

Blog Post & Recipes: How to Make Ham Stock and Recipe Ideas Using Ham Stock

Making stock starts with saving scraps. I have containers in my freezer where I save ham, chicken, turkey, or beef scraps and bones until I have enough to make stock.

Blog Post & Recipe: Lamb Braised in Milk with Fennel

Lamb braised in milk. Huh? Okay, yes, I know it sounds weird (at least it did to me at first) but hear me out. It's just a spin on a traditional Italian recipe of pork braised in milk, in which the milk reduces down to a rich and creamy white sauce.

Blog Post: What Sorts of Recipes and Meals Freeze Well?

A few foods that freeze well, and that would make great meals for a new parent, are most soups, stews, chili, curry, meaty braises, and lasagna. You can also make dumplings or ravioli and then freeze them. Also, you can make your own version of mix and match bagged meals. Also try this thread for some ideas ...

Broccomole. Pancetta vs. Bacon. Curry Powder.

Blog Post & Recipe: Holy Broccomole

But the one vegetable that I have not seen in dips is broccoli ... I recommend your [sic] try broccomole for something quick and different but it not a comestible to linger in your fridge too long. It is excellent on good bread or a corn thin and no doubt would benefit from a slice of tomato on top.

Article: Pancetta vs. bacon: Each brings its unique character to a recipe

Dear Lynne: Could you tell me if I can substitute bacon for pancetta in a recipe? Isn't pancetta just the Italian name for bacon?

Lindsey

Dear Lindsey: The short answer is yes.

In a pinch, you can substitute bacon for pancetta as long as you understand what that change is going to do to your dish. Both pancetta and bacon are cured pork made from the same cut -- the pork belly ... That said, they taste different ...

Blog Post: Good Question: How Do I Cook With Curry Powder?

Dear Kitchn, Do you have any suggestions on cooking with curry? I bought three different kinds of curry powered from Penzey's. I'm really into the warm spice flavors and would like to incorporate them into some easy weeknight meals.

I tried this Curried-Squash and Red-Lentil Soup recipe yesterday. I was expecting layers of flavors: rich squash, earthy beans and curry warmth. Instead, the soup just had this one flat spice note. Not very appealing. Can you give me more advice on cooking with curry?

Blog Post: When to feel guilty about not making stocks

There are 3 types of cooks in this world:

1) Those who use store bought stocks without a smidgen of remorse ...

2) Those who have made their own stock at least once in their life and realize that the store bought stuff is not up to snuff. But let's face it -- who has the time to make their own on regular basis ...

3) Those who think that the stock is the foundation of cuisine ...

Today, I'd like to address the second group.

Make sure the oil to pan fry the fish is really hot. The best way to check if the oil is at the right temperature is to put the back end of a wooden spoon into the oil and if bubbles form around it the oil is just right.
