Braised Brisket / 4 Confits / Prawn & Lemon Zest Soup

Recipe: Braised Brisket

You can also do this in a slow cooker.

Blog Post & Recipes: Vegetable Confit

This process can be applied to many other foods. Just keep these two guidelines in mind:

- Fully cover the food with fat (duck fat, olive oil, grapeseed oil, bacon fat…)
- Cook at low heat for a long time (no higher than 250ºF, 2-10 hours)

Cherry Tomato Confit ... Garlic Confit ... Bonus recipes: pearl onion confit and leek confit

Blog Post & Recipe: Shrimp & lemon zest soup

This was way, WAY more than the sum of its parts, and it’s all due to the the lemon zest. While the parsley garnish was good, chopped tarragon or chervil would be even better. I’d also consider making a dedicated tomato and shrimp shell broth with a tiny pinch of saffron.

Roast Grapes / Sopa de Ajo {Garlic Soup} / Crispy Fried Tofu with Sweet Chile Sauce

Blog Post & Recipe: Roasted Grapes

Carefully toss grapes with olive oil, salt, pepper and thyme. Roast for 10 minutes

Blog Post & Recipe: Sopa de Ajo {Garlic Soup}

Place oil, onion, and garlic in a slow cooker. Cover and cook on LOW for ~6 hours or until garlic is golden and tender.

Blog Post & Recipe: Crispy Fried Tofu with Sweet Chille Sauce

The Tofu is beautifully crispy, thanks to that crunchy coating ,before melting into your mouth with its softness. And that sauce, for all its simplicity, is extremely addictive. Sweet with a mild heat to it and plays a perfect partner to these cubed beauties.

Recipe: Portobello Mushroom Escalopes

Serve with polenta, or potatoes, or cous cous, or even in a bun as a veggie burger.

Blog Post & Recipe: How To Soften Brown Sugar Without a Microwave

As you can see, the sugar softened to the point where I could mash it easily with a fork. (It took just a few minutes.)

Key Lime Pie / 2 Marinated Garlic Recipes / Spinach Strata

Recipe: Fresh Key Lime Pie

The key to making this pie delicious is the homemade crust and whipped cream.

Blog Post & Recipes: Marinated Garlic… two ways

As I strolled the aisles of my international food store the other day, I saw jars of marinated garlic. Inspiration struck! Here are the two versions I came up with… Herb & Spice Marinated Garlic and Japanese-style Soy-Miso Marinated Garlic. Enjoy!

Blog Post & Recipe: Spinach Strata

To me, spinach + olive oil + lemon is a trio made in heaven. At dinner, I love the leaves dressed simply - with a drizzle of olive oil and a squeeze of fresh lemon. But at breakfast, fresh spinach decorated throughout a rustic strata and combined with a bit of feta and oregano is the perfect way to start the day.

Roasted Garlic & Broad Bean Soup / An Interview with Nigel Slater + Summer Squash With Lemon & Mint / Stir-fried Starch Jelly Noodles

Blog Post & Recipe: Roasted Garlic & Broad Bean Soup & a Facelift

This is a simple soup made of broad beans, stock, milk, lemon zest and roasted garlic, nothing more apart from the garnish of paprika and olive oil. If you don’t have broad beans you can also use haricot beans.

Article & Recipe: Nigel Slater, the 'Tender' Cook [ via ]

My most surprising recent meal was at Trullo, a little restaurant that opened just down the road, where they had a strange thing on the menu I'd never had before: grilled ox heart. They cut it finely, grilled it quickly and served it with olive oil and some grated fresh horseradish

Summer Squash With Lemon and Mint

Blog Post & Recipe: Stir-fried Starch Jelly Noodles

Mung bean starch is a strange beast. I found it, at a whopping £3.99 at the Korean supermarket below Centrepoint, after reading Sunflower's post on making Sichuan liang fen (starch jelly) noodles. I had to have it; in her post, she says if you like rice noodles, you'll like these - I LOVE rice noodles.

Pan Roasted Okra with Garlic / Zucchini Noodles with Avocado Cream Sauce / Grilled Corn Summer Breakfast Hash

Blog Post & Recipe: Pan Roasted Okra with Garlic

Ingredients

3 cups fresh okra, rinsed, sliced horizontilly in 1 inch pieces
3 cloves fresh garlic, thinly sliced
1-2 tablespoons olive oil
kosher salt

Blog Post & Recipe: Zucchini Noodles with Avocado Cream Sauce [ via ]

Despite my lousy luck, one bright star emerged -- my creamy (without any cream) avocado drenched zucchini noodles (without any noodles) with a sprinkling of romano cheese and red pepper flakes. It's cool and spicy, smooth and rich and not at all what it seems.

Blog Post & Recipe: Grilled Corn Summer Breakfast Hash

It’s chock full of crispy potatoes and soft, sweet and juicy peppers and onions. Some zucchini is in there too because… it’s summer! Have you heard? And obviously the caramely kernels are the best part because who doesn’t like vegetables that taste like candy? I’ll top it with an egg because you deserve it.

Sweet Potato Whole Grain Waffles / Crispy Fried Garlic / Sabih

Blog Post & Recipe: Sweet Potato Whole Grain Waffles

Cook in a waffle iron at medium for about 5-7 minutes. These take longer to cook than other waffles we have made.

Blog Post & Recipe: Back to basics - crispy fried garlic 炸蒜米

Crispy fried garlic like crispy fried shallot is very common in S E Asia. Chopped garlic is deep fried till golden it is not bitter but has slightly sweet, caramelised and strong garlicy flavour and deliciously crunchy. Only two ingredients are needed, plenty of garlic and cooking oil.

Recipe: Yotam Ottolenghi's sabih recipe

Iraqi immigrants to Israel in the early 1950s brought with them the fascinating combination of fried aubergine and hard-boiled egg stuffed into fresh pitta (along with plenty of other big-flavoured ingredients). It sounds weird, but it's one of the most exciting street foods you could wish to come across.

Vietnamese Daikon & Carrot Pickles / Oregano Roasted Beets with Garlic Scapes / Turmeric Ginger Beer

Blog Post & Recipe: Vietnamese Daikon and Carrot Pickles

They're a little like bread and butter pickles, though crispier, not as sweet, and with a slight radish taste from the daikon.

Blog Post & Recipe: Oregano Roasted Beets with Garlic Scapes

Since beets are so sweet all on their own, they need little sprucing up. (Fun fact: Beet sugar makes up about 40% of the world’s sugar.) Here, I simply doctored them up with some garlic scapes and a few sprigs of fresh oregano.

Blog Post & Recipe: Turmeric Ginger Beer

But even when I got the carbonation just right in these recipes (which does take a little precision), brewed ginger beers did not have that fresh spicy kick that I love. In the end, I got the best results from the simplest method. Make a ginger-infused syrup and top with soda water and fresh lemon juice.

Roasted Spring Garlic / Devilled Kidneys / Spiced Coconut Spinach

Blog Post & Recipe: Roasted spring garlic

I remembered the beautiful heads of spring garlic I had purchased before I became sick. And I decided to roast them.

Recipe: Nigel Slater's classic devilled kidneys recipe

This quick way of preparing kidneys is good for breakfast or a light supper. It will also work with rice instead of toast, as a more substantial meal.

Blog Post & Recipe: Spiced Coconut Spinach Recipe

You toast a few spices, add a pile of shredded spinach to the skillet, and finish things off with a burst of lemon juice and some shredded coconut.

[This bbq sauce is] pretty undutch but at the same time it’s also a lot like our Dutch piccalilli, only in a sweeter jacket and with different vegetables. Very unlike anything I’ve ever tasted in combination with bbq chicken.

Blog Post & Recipes: Deliciously Upsided Down Dinners

I have an awesome new cookbook that I'll be raving about very soon and this Eggplant Manicotti caught my eye. The funny thing is... there is no real manicotti. The "pasta" is actually slices of eggplant with a very tasty filling.

Roasted Garlic / Savoury Brown Rice Balls with Olives & Herbs / 5 Mushroom Recipes

Blog Post & Recipe: Roasted Garlic (WFMW)

Instead of using raw garlic in the recipes, I just substitute roasted garlic. Seems simple, right? It is!

Blog Post & Recipe: SAVORY BROWN RICE BALLS WITH OLIVES + HERBS

Using brown rice and herbs seems a healthy and modern twist on classic, Italian "Arancini," a Sicilian dish meaning "little orange" which dates back to the 10th century.

Stuffed Leg of Lamb / Great South Bay Duck Ragù / Roasted Mushrooms with Garlic, Chile & Rosemary

Article & Recipe: The California Cook: Stuffed leg of lamb — it's worth the effort

I'm proposing a boned leg of lamb, stuffed with greens, feta and pine nuts. It may be a bit complicated to put together, but the payoff is immense.

Article & Recipe: Duck, Duck, Anchovy

Anchovies provide a hint of ocean air, and juniper berries a marshy hum. Red wine adds heft, and red-wine vinegar cuts the richness

Great South Bay Duck Ragù

Blog Post & Recipe: Roasted Mushrooms with Garlic, Chile and Rosemary

Sauteeing is great — it releases the viscous, gray juices of mushrooms and hopefully bleeds into something else in the pan. But roasted, they become almost chewy, almost crispy on the surface with a golden-brown crust on the tops. If you roast them for a short enough time at a high enough temperature, the mushroom will be still bursting with juice inside, but concentrated in taste and browned on the outside. It’s interesting.

Sweet Potato, Apple & Lentil Soup / Spanish Lentil & Butternut Pumpkin Stew with Roast Garlic / Sautéed Fermented Soybean Waste with Black Nightshade

Blog Post & Recipe: Sweet Potato, Apple and Lentil Soup

The combination of sweet potatoes and apples is a natural, and using tart apples helps to ensure that the soup isn’t cloyingly sweet. Lentils add a a subtle yet mysterious heartiness.

Blog Post & Recipe: Spanish Lentil and Squash Stew with Roasted Garlic

This is a lovely, hearty stew that is both savoury but still slightly sweet. Lentils fill the stew as its base, and the butternut squash and red peppers add colour and sweetness. A head of roasted garlic brings a mellow sweetness as well. The peppers are both boiled and pan-fried for a contrast in flavour and texture (but I feel like this step could be skipped if you are pressed for time).

Blog Post & Recipe: WHB #278: Tumis Oncom dan Leunca (Sautéed Fermented Soybean Waste with Black Nightshade)

Most Indonesian cooking books written in English referred oncom as fermented soybean waste.

Indeed it considered to be closely related to tempeh (fermented soybean). But instead of soybean, oncom is actually made from natural by-products of other foods. For example, soy bean tailings from bean curd making, peanut presscake from peanut oil making, cassava tailings from the starch extraction or coconut presscake remnants after the milk squeezed out. These wastes are then fermented using molds.

This Bagna Cauda, which hails from Italy's Piedmont region and translates as "hot bath," is the perfect accompaniment for spring vegetables -- and a marvelous alternative to heavy, creamy veggie dips.

The recipe is beautifully simple: 24 cloves of garlic, a couple of diced anchovies, and olive oil. Add a little salt and pepper, and that's it!

Easy Roast Chicken / Pork Crackling / Fifteen Vegetarian Recipes

Blog Post & Recipe: Thomas Keller's Easy Roast Chicken

Thomas Keller doesn’t believe in basting because it produces steam and steam is not what you want with this quick roasting method. I used roughly 1 tablespoon of salt on the outside and 1 teaspoon inside.

First of all, the scoring. There's no debate on this: everyone tells you to score the rind ... in vertical lines about a finger's width apart. This is to allow the heat to penetrate the fat, and, as it bubbles up through the cuts, to baste the top during cooking.
