Pumpkin and Sausage Lasagna / Zest a Lemon / Chipotle Pumpkin Soup

Blog Post & Recipe: Layers of Fall: Pumpkin and Sausage Lasagna

The sage, spicy sausage, and wine mingle nicely with the savory side of pumpkin, softened with milk and fresh ricotta. A bechamel version would be lovely, too

Blog Post: Cooking Basics: How to Zest a Lemon

Use a gentle rocking motion, taking off just the top layer of skin. Rotate the lemon between each stroke so you get new surface area every time until you’ve gone all the way around the lemon.

Blog Post: Chipotle Pumpkin Soup

While we already have several pumpkin soup recipes on the site, we were missing one with more of a Southwestern feel. I'm delighted with how this soup turned out. It's smokey and spicy from the chipotle chiles, cumin and oregano.

Beignets. Shanghai Soup Dumplings. Zucchinis.

Recipe: bite size beignets...

Beignet is a fried yeast dough that come in square or ball shape. It is similar to a doughnut, but a bit lighter in texture.

Blog Post & Recipe: Shanghai Soup Dumpling, plus a new look

I’m not going to lie and say I can’t wait to make this again ‘coz it does take a lot of time to prepare, but the dough is fantastic – tasty and slightly chewy – it sure hell beats any store bought one.

Blog Post & Recipe: In defense of the humble zucchini

What a revelation it was to me when I arrived in France and saw beautiful small courgettes with their tender skin and full flavor. Seriously, if you pick your zucchini when it's half the size, logically you'll have half the weight to deal with. And it will have twice as much flavor.

Freezing Meat. Roasting Spuds. 30 Tomato Recipes.

Blog Post: Wrap meat for freezing as airtight as you can

Food with freezer burn is still safe to eat, but the quality is often so poor you might not want to go to the trouble of cooking it. To keep this from happening, you need to limit the food's exposure to air to encourage the water molecules to stay where they belong.

One of the most frequent questions I've answered concerning my book and blog is about the source of my inspiration. "Everywhere" as an answer is the slightly boring, *yawn*, yet it hits the nail on the head ...

[...] soft and flaky, slightly sweet pastry, made from long fermented yeast dough, lots of powdered sugar and greasy fingers from the used lard ... ENSAIMADAS!!!

Extreme Rice. Zucchini Pie. Lasagna Tart.

Blog Post & Video: Extreme Rice

EXTREME RICE! BECAUSE PART OF BEING EXTREME IS SHOUTING ALL THE TIME! AND CRUSHING RICE PLANTS WITH YOUR BARE HANDS!

Blog Post & Recipe: Kourkouto aka Greek Zucchini Pie

The author of the original recipe was a Greek chef Dina Nikolaou. Her recipe was picked up and adapted by Peter of the Kalofagas [...] I made some changes, leaving out the Kasseri cheese and upping the amount of feta cheese. I also added some dried oregano to the dish, a herb I always associate with my visits to Greece.

Blog Post & Recipe: Lasagna Tart Recipe

As it turns out, I was looking a noodle-free lasagna baked in a pie crust - layers of zucchini, ricotta, and tomato sauce. And lots of cheese. I've been meaning to do my own version ever since. When I finally got around to putting this idea in motion, I switched things up a bit. For starters, I did a tart version instead of pie.

Molasses. Rhubarb. Vegetable Lasagna.

Recipe: Raise-the-roof sweet potato vegetable lasagna

Approved by firemen.

If you're starting this from scratch, begin by baking two sweet potatoes and start layering the lasagna once they're done. If you sauce dry noodles generously when layering the lasagna, it's not necessary to boil the pasta. Use a sauce with little or no added oil
