Pork Chop with White Wine Sauce / Tostone Tostada with Stewed Chicken & Parsnip Hot Sauce / Norwegian Fish Pudding

Blog Post & Recipe: Pork Chop with White Wine Sauce

A creamy, white wine sauce is perfect with either chicken or pork – the white meats are delicate enough to let the nuances of white wine shine through.

Blog Post & Recipe: Tostone Tostada with Stewed Chicken and Parsnip Hot Sauce

This one is almost like a crostini or toastada but it uses a fried plantain as the vessel for the delicious stewed chicken and hot sauce. Oh and the secret ingredient in the hot sauce? Parsnip.

Blog Post & Recipe: Fish Pudding for Fearless Flyers

Exhausted from a day’s snowy recreation, Norwegians no doubt repaired to their homes for a hearty helping of fish pudding. Should you wish to make this signature Nordic dish part of your après-ski, this recipe, which appears in The Ann Arbor Cookbook
(1899), should leave you feeling stuffed to the gills.

Kintamani Fish Soup / Creamed Turnips with Their Greens / Jibaritos

Article & Recipe: Flavours of paradise

Questioned about Indonesian food and how it is perceived, she says it is the most misrepresented cuisine of south-east Asia. ''But I believe it is the most majestic,'' she says.

Kintamani fish soup

Blog Post & Recipe: Creamed Turnips with Their Greens

I love turnips. They’re a highlight of the fall vegetable yield, but often overlooked I think. Though they look a bit like a parsnip, they have an underlying bite that sweet little parsnips lack. Maybe they’re the crotchety grandpa of the root vegetable world. The greens, like mustard or beet greens, are pretty thick. They need a decent boil, and, in this case, a nice creamy sauce.

Blog Post & Recipe: jibaritos with guava paste

Months ago I learned what a jibarito was, when I came across it on a blog. I bookmarked the recipe for this grilled cheese sandwich that uses ripe plaintain in place of bread, but I could never make it--I was missing a key ingredient. And then a few weeks ago, my aunt walked into the kitchen with it: guava paste! ... Having had it now, I can tell you that any jelly would make a decent substitute for guava paste, and jibaritos are special.

Pumpkin Rice Noodles / Roasted Figs with Sage in Red Wine / Irish Ale Battered Fish & Chickpea Chips

Blog Post & Recipe: Pumpkin Rice Noodles

This pumpkin noodles with minced pork is one of my favorite noodle recipes. I love to order this at my favorite Taiwanese noodle house.

Blog Post & Recipe: Roasted Figs with Sage in Red Wine

To add to the earthy bite of roasted figs we snipped some fresh sage to the recipe. Wonderful, fragrant sage rounded off the roasted figs beautifully and the addition of some red wine really finished off the recipe perfectly.

Blog Post & Recipe: Irish Ale Battered Fish + Chickpea Chips

These chips are somewhat time-consuming upfront, but well worth the trouble. Totally delicious and marginally more healthy than potatoes because chickpeas are protein packed. In fact, you could make a meal out of the chickpea chips alone.

Bone Marrow Dumplings / 5 Quince Recipes / Roasted Blackfish with Olives and Sage

Article & Recipe: How to Cook the Rest of the Animal

From the section titled “Getting to the Marrow”

Marrow is more versatile than you might think. Apart from eating it straight from the bone, you can use it like you would any other fat, adding it to dumplings, hamburgers, and dessert. It is also an excellent fat for sautéing and frying.

How to choose ... How to prepare and cook ... Recipe: Bone Marrow Dumplings

Blog Post & Recipes: On the Savory Side: 5 Quince Recipes

Quince are too astringent and rather unpleasant to eat raw and their skins are quite tough and even waxy. But once you get beyond this, when cooked and baked, they're sheer bliss.

Fennel and Garlic-Crusted Pork Roast with Warm Quince and Apple Compote ... Rosemary Quince Glazed Chicken ... Slow-Roasted Leg of Lamb with Roasted Quince ... Spicy Quince and Apple Chutney ... Quince Skillet Tart with Savory Prosciutto Pastry

Blog Post & Recipe: Cook the Book: Roasted Blackfish with Olives and Sage

Instead of overpowering the delicate fish, the sage and olives do a wonderful job bringing out its oceanic sweetness with hints of brine and herbal green notes. The lemon lends that acid zip that every piece of fish benefits from and a sprinkling of hot chile at the end gives it a pleasantly warm top note.

Garlic-Roasted Butternut Pumpkin / Creamy Dilled Foil-Packet Fish / Sweet Potato With A Poached Egg & Tangy Arugula Sauc

Blog Post & Recipe: garlic roasted butternut squash [ via ]

Tip: roasted cauliflower is made the exact same way and is a great pairing with the squash. Decrease the cooking time to 25 to 30 minutes.

Blog Post & Recipe: Creamy Dilled Foil-Packet Fish

Main dish in 20 minutes! ... The concoction that gets smeared on these fish fillets plus baking them in foil packets makes them tender, creamy, and full of flavor. Plus it's low in starch, if you're into that kind of thing.

Blog Post & Recipe: Sweet Potato With A Poached Egg & Tangy Arugula Sauce

I also find myself wishing more restaurants made tasty and healthier veggie variations on the classic poached egg meal. So, I’m constantly racking my brain for creative ideas on how to put a tasty twist on it. I’ve made it with an artichoke heart as the base with a red pepper aioli, and I’ve made it with avocado, sauteed tomatoes and shallots and a Greek yogurt hollandaise sauce. My most recent preparation, and perhaps my new favorite, was inspired by a ton of leftover arugula in my refrigerator.

Gaji Bokkeum (Stir-fried Eggplants) / Battered Fish / Parsnip & Cocoa Nib Cake

Recipe: Gaji Bokkeum (Stir-fried Eggplants)

Here, the eggplants are stir fried with simple seasonings, and the gochujang (Korean red pepper paste) adds a nice kick to the tender eggplants.

Article & Recipe: How to cook perfect battered fish

I rapidly graduated to the haddock, when it dawned on me that, with fish and chips, the fish, if fresh and well-cooked, is largely irrelevant, a mere supporting actor to the star of the show, its crispy coating.

Blog Post & Recipe: Parsnip and cocoa nib cake

To further feed the cliche, creating cake of a parsnip inclination turns out to be as simple as taking your favourite banana bread or cake recipe and substituting an equal amount of mashed parsnip for the banana component.

Veggie Pizza with Zucchini, Corn, Cilantro & Lime / Fried Sweetbreads with Carrot Salad / Grilled Fish with Basil

Blog Post & Recipe: Summer Veggie Pizza with Zucchini, Corn, Cilantro and Lime [ via ]

This pizza is all about zucchini and corn right off the cob and feta cheese and sprigs of cilantro and all kinds of summery goodness with a big splash of lime to finish it off.

Recipe: Sunday Supper: Fried Sweetbreads with Carrot Salad

Sweetbreads are the thymus or pancreas (neck and stomatch sweetbread, respectively) of a calf. They are subtly flavored and have a delicate texture, and are an excellent introduction to those who are a little wary of offal. Sweetbreads are a treat. This is a simple preparation that adds some crunch to the soft nuggets of sweetbreads.

Blog Post & Recipe: Simple Grilled Fish with Basil

Let me start by saying that I almost always cook bass-like fish whole. Why? They have huge heads for their size, and big, round rib cages. This means you get a paltry yield off them if you try to fillet the fish. Unless you are very good, your yield will be barely 30 percent of live weight. Contrast that with salmon, where you can get upwards of 60-70 percent.

3 Egg Recipes / Chinese-style Steamed Fish / Dry-Braised Stuffed Okra

Article & Recipes: All they're cracked up to be

To store eggs, place them in the fridge for up to one month in their original carton. The pointed end should face downward.

Blog Post & Recipe: A healthy cooking technique made fragrant, delicious: Chinese-style Steamed Fish

Bamboo steamers have become the traditional and most popular tool for steaming foods. We certainly love ours. But there are ways to steam food if you don’t have one. One is to set a wire cake rack inside a deep, lidded skillet large enough to accommodate a glass pie plate or other vessel to hold the food you’re steaming. That method works well for this dish.

Article & Recipe: Dry-braised stuffed okra makes for a tender dish

I also wanted to stuff the vegetable, and experimented with a few combinations. Minced anchovy mixed with sweet and smoked paprikas turned out to be a Food & Wine staff favorite. It didn't take a lot of stuffing to fill the lengthwise slit in the okra, and the flavors were plenty intense. You can hold the stuffed okra for several hours before cooking. Brown them in a hot skillet lightly coated with oil, then reduce heat to low, cover and cook until tender.

Homemade XO Sauce / Homemade Verjuice / Lemon Fish

Blog Post & Recipe: Homemade XO Sauce [ via ]

Here is my homemade version that will set your tastebuds on fire.

Blog Post & Recipe: Homemade Fresh Verjuice

Verjuice is a green and sour juice made from unripe grapes. It is a fantastic alternative to lemon juice. Lemon is considered as the sole source of sour juices by many people, but it is not!

Blog Post & Recipe: Lemon Fish [Simple Home-Cook]

Long long time ago when I was working in Singapore, one of my roommates was a Teochiew lady from Penang. She liked to cook fish with plum sauce, very appetizing sweet and sour taste. Until now, I thought of her every time I cooked or ate something similar to that.

Homemade Violet Crumble / The Eskimo Cook Book / How to Peel Ginger

Blog Post & Recipe: Let's Do the Hokey Pokey!

So if you are asking why bother with scratchmade honeycomb if you can get Crunchie or Violet Crumble, I would say, because you can use better chocolate, that's why.

Blog Post & Recipes: The Eskimo Cook Book

The Eskimo Cook Book is a collection of recipes brought together by children at the Shismaref Day School in 1952 and published as a booklet by the 'Alaska Crippled Children's Association'.

Cranberries ... Blueberries ... Lincod Eskimo Ice Cream ... Ahzeeach and Ahlowe'-kuk ... Buegwakuk ... Tomcod Liver and berries ... Ah-pick ... Willow Meats ... Eskimo Ice Cream ... Sue'wok (dried salmon eggs) and berries ... Eggs (duck or sea-gull) ... Conch ... [etc]

Blog Post & Video: How to Peel Ginger

All those little nooks and nubs make peeling ginger with a paring knife a veritable nightmare. Think of the waste! Intolerable. So Amanda dreamt up a trick that requires nothing more than a small spoon and Merrill has a hand at demonstration: you use the spoon's edge to quickly scrape away the root's surprisingly thin skin. It's so safe you could even enlist the wee folk for this task!

Briam (Greek Ratatouille) / Fried Fish in Orly Batter / Prepare and Cook Shark

Blog Post & Recipe: Briam (Greek Ratatouille)

This is a recipe we make quite often in Greece and it is very easy. It is also very versatile and you can practically add and subtract anything you like from the list of ingredients.

Blog Post & Recipe: Fried fish in Orly batter

Apparently it was a favourite with American servicemen stationed at Keflavik airport and some of them still remember it fondly. I'd be the first to admit that this isn't a specifically Icelandic dish, but you can buy it in many diners and restaurants all over the country.

Blog Post: How to Prepare and Cook Shark

Only purchase shark meat from a reputable fishmonger or supermarket. Shark meat must be cleaned properly, even more so than fish, to have a palatable taste. Why? Sharks urinate through their skin and if not cleaned directly after catching, the taste will be nearly inedible.

Blog Post & Recipe: The Nasty Bits: Fried Fish Bones

Fried fish bones taste like what you imagine of thin and delicate bones: crunchy at the thick parts and crispy at the thin parts, with a slightly fishy flavor. The trick is to leave some of the fish flesh on when you fillet the whole fish, so that the meat clinging to the bone becomes crispy and brown

Suquet de Peix / How to Clean a Gizzard & Corned Gizzards & Cabbage / Vegetable Tamarind Soup

Blog Post & Recipe: SUQUET DE PEIX, a Mediterranean flavours Ode

Check all the ingredients of the recipe and see how healthy this dish is! We've got Olive oil, ripe tomatoes, fresh rock fish, some fresh seafood, garlic and onion, nuts ...

Blog Post & Video: How to Clean a Gizzard and Corned Gizzards and Cabbage

One of the more unloved giblets, gizzards are dense nuggets of deep burgundy meat. That’s right, I said meat. Even though a gizzard is an internal organ, it is made of muscle, just like the breast or thigh meat

Blog Post & Recipe: vegetable tamarind soup, sayur asam

I think almost all South East Asian countries have their own version of tamarind-based soup, slightly spicy with loads of soft vegetables. Malaysians with their laksa soup, Filipinos with sinigang, Thais with tom yam. Sourish tamarind deserves much more credits than it already has. It is one of the ingredients that made our cuisine as exotic as it now is.

Our tamarind soup uses sliced tamarind (asam potong) and salam leaves with vegetables that can nicely soak up all the beautiful flavors from tamarind, bay leaves, lemongrass, palm sugar (gula merah) and chilies.

Oyster Stew / Curry Fish Head / 3 Recipes for Roast Leg of Lamb

Blog Post & Recipe: Oyster Stew Recipe

It reminds me a lot of a really good cream of mushroom soup, but with oysters instead of mushrooms.

Blog Post & Recipe: Curry Fish Head

For sure, I am going to miss this dish when I return to the United States because some of the key ingredients such as bunga kantan is not available. Furthermore, it’s impossible to find very fresh fish head to prepare this dish…

Article & Recipe & Video: Celebrity Roast

The three lamb recipes I’m proposing for your holiday table look similar and indeed are similar to one another; after all, they’re all roasted lamb legs in a Mediterranean mode. But they’re quite distinct in terms of flavor and technique: one is made with a simple if exotic dry spice rub; one is slathered with yogurt and sweet seasonings; and the third is smeared with an herb paste not unlike classic pesto.

The chart on the following page provides ideas for cooking 1½ pounds of white fillet, whether whole or cut into individual portions. None of these recipes take more than half an hour from start to finish; thicker pieces of fish will cook in 15 minutes or less, thinner pieces in under 10. You can tell that any fillet is done when it’s opaque and a thin-bladed knife meets little resistance when you use it to poke the thickest part of the fish.

Cornish Pasties / Caramelised Apple Dutch Baby Pancakes / 5 Artichoke Recipes

It’s finally dawning on me that our capacity for sweet preserves is fairly limited, so I knew this year’s project would have to be savory.

Vanilla Bean German Pancakes with Walnut Baked Apples / Roast Chicken Provençal / Perut Ikan

Recipe: Vanilla Bean German Pancakes with Walnut Baked Apples

Maybe the effort put forth in this recipe is all for nothing -typical results could come from 1 tsp. of vanilla extract? I don't know.

Blog Post & Recipe: roast chicken provençal

Our first try is perhaps not quite Perfect, but certainly tasted excellent, on top of being simple to make, and filling the cool Sunday evening air with the resinous perfume of roasting rosemary, thyme, marjoram, fennel, and lavender. Chicken, lemon, garlic and herbs. How easy is that?

Blog Post & Recipe: Perut Ikan (Nyonya Stewed Fish Stomach with Vegetables)

All my family members love a great serving of perut ikan, or Nyonya stewed fish stomach (previously salted and preserved) with various vegetables and exotic herbs, including daun kadok (betel leaf) and bunga kantan (ginger flower). It’s a very tedious dish to make but the taste structure is so deep and complex.
