4 Vegetable Soups / Spinach Sandwich / Radish & Basil Pesto

Blog Post & Recipes: More soups I've been making

Spicy Coconut Soup ... Radiant Bok Choy ... Lettuce & Potato Soup ... If I have a lot of greens leftover I make Jamie’s Ribollita.

Recipe: Spinach Sandwich

Apply butter on two slices of bread (on one side) and spread this spinach filling all over on one slice, place the other bread slice and toast till golden. Serve warm.

Blog Post & Recipe: Radish and Basil Pesto

This recipe was inspired by a similar one I saw on Clotilde Dusolier's "Chocolate and Zucchini" sometime last year. Hers called for using just the radish greens, and she also used a more traditional hard Italian cheese such as parmesan or romano, typical of a straight basil pesto. I've added some basil for a little more complexity, marcona almonds for their sweetness, feta cheese for its tang, and finely diced radishes for a little extra spice and crunch.

Article: 100 Greatest Cooking Tips (of all time!) [via]

Food Network Magazine asked top chefs across the country for their best advice.

Article & Recipes: The California Cook: Mighty, mighty bread crumbs

But what I'd never really realized was the true potential of bread crumbs, how instead of being bland character actors toiling in the background, they can actually become the stars of a dish, or at least a very impressive second lead.

Grilled romaine with radishes, hard-boiled eggs and toasted bread crumbs ... Spaghetti with arugula and garlic bread crumbs ... Swiss chard with golden raisins and lemon bread crumbs

Article & Recipes: Perfect pears

To test to see if a pear is ripe, all you need to do is press the neck of the pear and if it gives a little it is ripe. If it is hard as a rock it needs a bit of time. Pears are rich in fibre and vitamin C – most of this is in the skin, so make sure you are eating some pears in the raw and in their skins to get the maximum nutritional value from them.

Blog Post: Pho Secret Ingredients: Dried Earthworms (Sa Sung)

If you read Saveur magazine, you may have seen the northern pho (pho Bac) article that I wrote for the March 2011 issue. One of the ingredients that I mentioned in the story was sa sung (Sipunculans), dried peanut earthworms that add a unique savory sweetness to the broth

The only bit requiring any sort of patience is the actual rolling of the meat mixture into balls, which is really not that big a deal at all if 1. you have help or 2. you decide to make big meatballs instead of my tiny inch-in-diameter ones.

Storing Lettuce / Roasted Cauliflower with Anchovy Mayonnaise / Seasoning

Blog Post: How to Store Lettuce in the Fridge

I love the concept: washing and drying all the lettuce at once, then putting it nicely in the bottom fridge drawer lined with towels.

Blog Post & Recipe: Roasted Cauliflower with Anchovy Mayonnaise

It just doesn't stand up on it's own. However, roasting the florets intensifies the flavour, making them nutty, crispy and especially delicious when given a good dunking.

Blog Post: the absolute beginners guide to the art of seasoning

There are two main times to think about seasoning – the beginning and the end. For slow cooked dishes it’s a good idea to get some salt in early so it can spread through the whole dish over time. For most other things seasoning at the end is the best way to go.

Blog Post & Recipe: Grilled Butter Lettuce with Buttermilk-Chive Dressing

While the grilled Caesar we love is brushed with oil and garlic prior to grilling, this salad is just sprinkled with salt and then laid onto the grill, cut side down, until the greens have a nice char.

... So very sweet! So sweet that I thought that the sugar level was a typo but sure enough, every other recipe I found listed sugar amounts in cups. Ayee. This one only called for one but I reduced my batch to 3/4 of a cup ...

Carrot salad. Lettuce Cake. Brown rice in the Oven.

Recipe: Carrot salad with chilli, mint and coriander

The carrots are really just a vehicle for the dressing, aromatic herbs and punchy chilli. These are the flavours your wine needs to worry about.

Blog Post & Recipe: Spiced Lettuce Cake Bars

The cake bars are pretty good, and you wouldn’t know that they have lettuce in them unless someone directly told you or you didn’t get a great “shred” and a few big pieces slipped into the batter. They’re moist and soft, with a good balance of chewiness and tenderness.

Article: Brown rice often cooks better in oven

Q . What method can I use to prepare brown rice so that it will be tender and fluffy? When I cook it, it always comes out very sticky.

A . Tender and fluffy might be asking a little too much of brown rice. Each and every rice kernel in your pot is encased in a straitjacket of rice bran. There's simply not much room for expansion in there.

It's not fair to ask brown rice to be white rice. Let brown rice be itself -- a chewy, nutty, highly nutritious whole grain with a personality of its own -- and save yourself the disappointment.

That doesn't mean you need to settle for the sticky, glutinous rice you've been turning out. There is a relatively foolproof way of dealing with this recalcitrant grain ...

Lettuce.

Blog Post: Get into the Garden.

A Guardian blogger named Sarah Raven decides to return "to an older habit, where meat was a regular, delicious, but occasional visitor to the plate. Vegetables can take their place, not as a stand in, or supporting part, but as centre stage, where they belong."

She includes a recipe for lettuce hearts with hot butter dressing.
