Beetroot Cake / Braised Duck with Mashed Potatoes & Gravy / 10 Ideas for Eggplant

Blog Post & Recipe: Beetroot Cake Recipe

I was a little concerned about the extra baking powder combined with self raising flour. However the cake is quite dense and needs the extra raising agent.

Blog Post & Recipe: Braised duck with mashed potatoes and gravy

After the very fruity duck breast fillet with pineapple, orange and ginger sauce, this second dish is French inspired as it uses the trifecta of vegetables that many French dishes start with — onion, celery and carrot. The duck is seared in a pan but finishes braising inside the oven. The pan juices are used to make the gravy.

Beetroot Tzatziki / Caramelised Cauliflower with Oranges, Olives & Saffroned Cous Cous / Catalan Tomato Bread

Blog Post & Recipe: Beet Tzatziki

4 small beets roasted until tender, 2ish cups of greek yogurt, one clove of garlic grated, juice of a lemon, salt and pepper, blend until delicious.

Blog Post & Recipe: Caramelized Cauliflower with Oranges, Olives and Saffroned Cous Cous

Last time cauliflower made an appearance on the blog, I cooked it like a steak for a bunch of vegans. Well the leftover cauliflower florets from that dinner were sitting in a bowl in my fridge last week and inspiration struck again. Here's what I did.

Blog Post & Recipe: Pan con tomate – Catalan tomato bread

Grill the slices of bread until golden, and rub each slice with the garlic pieces, which will wear down to nubbins as you go. Cut a tomato in half and rub it on a garlicky slice of bread, pushing as you go to make sure the juices and seeds are pressed into the piece of bread. Discard the pulp. Pour a generous slug of olive oil over each slice of tomato bread, and sprinkle with a little salt.

Spicy Rice Cake (Dukbokki) / Roast Eggplant & Red Capsicum Dip / Green Capsicum in Vinegar & Garlic Sauce (Sirkeli Biber)

Recipe: Spicy rice cake (Dukbokki)

Dukbokki is one of the most popular street foods in Korea. It's very easy to make and a great quick dish for a meal, snack, or girl's night.

Blog Post & Recipe: Roasted Eggplant and Red Pepper Dip

You slice up the veggies... Give them a good coating of high quality extra virgin olive oil... Toss the vegetables together with salt, pepper, and lots of garlic... Roast the veggies at 400 degrees for 45 minutes... And then puree the roasted vegetables with tomato paste... and then you are done!

Blog Post & Recipe: Green Peppers in Vinegar and Garlic Sauce (Sirkeli Biber)

Inspired by the exuberance of fresh peppers I am giving a simple recipe for a very popular and delicious salad/appetizer/meze, you name it. The ingredients for the sauce are garlic, olive oil, and vinegar, and how much you will add of each depends completely on your preference. If you cannot handle garlic or vinegar well, you can go light on them. I like this salad medium garlicy, yet very vinegary, whereas my cousin's version is quite garlicy and to so much vinegary. The point is you have to decide on the amount of garlic and vinegar.

4 Mexican-Armenian Recipes / Unagi Kabayaki / Roasted Capsicum with Capers & Mozzarella

Article & Recipes: Marrying Mexican and Armenian cuisine

Armenians, just like Mexicans, love the comingling of sweet and sour and spicy and mild; they love strong flavors like lamb and garlic.

Stuffed grape leaves ... Pilaf with topping ... Carne asada ... Jocoque dip

Blog Post & Recipe: Unagi Kabayaki [via]

If you like Japanese food, and have had unagi kobayaki--broiled eel--at Japanese restaurants, you will be surprised at how easy it is to make at home. When I was making this dish, I thought of my nephew Tyler. He really likes unagi. I thought, 'How can Ty make this at his house in Oregon?' Simple. Just like my grandfather did--in a pan on top of the stove.

Blog Post & Recipe: roasted peppers with capers and mozzarella

I will turn on the oven for one thing, and that is to roast my peppers for the better part of an hour. I prefer this over blistering them on the stove, which makes them easy to peel but not supple and sweetly cooked as they get in the oven. After peeling their skin and cutting them into strips, I let them sit overnight in some salt, pepper, garlic and red wine vinegar which punched up their flavor a bit.

Article & Recipes: Falafel: Bay Area fills void for filling street food

It's a fairly basic recipe - made predominately from chickpeas, parsley, garlic, onion, jalapeno peppers and sesame seeds - but a quick lesson on falafel-making revealed that it's more about the technique.

Amba's Hummus ... Chickpea Falafel ... Tameyia (Egyptian Falafel) ... Yogurt Raita ... Olive-Orange Relish with Thyme

Blog Post & Recipe: Socca to me!

The recipes are all basically chickpea flour and water, with a little olive oil and salt thrown in for good measure. As is so often the case, the whole is greater than the sum of its parts and it can be made at home ... Traditionally socca is cooked in a giant cast iron skillet over a hot fire. At home, your oven will work just fine. You make a simple batter, let it rest, and add it to smoking hot pans to cook for less than 10 minutes. After removing from the oven you give it a very generous sprinkling of black pepper and then tear into it.

Beet & Coconut Curry / Brandade / Butter & Brioche

Blog Post & Recipe: Roasted Beet and Coconut Curry

Blog Post & Recipe: Word of Mouth: Brandade

Originating from the south-central French regions of Languedoc and Provence, brandade is a simple, yet hearty spread made of salt cod, olive oil, and milk. Sometimes garlic or potatoes are added.

Blog Post & Recipe: A Butter Tip-Sheet + A Recipe for Brioche

The recipe is linked to the last paragraph.

The acid in butter is less talked about than the fat, but it's no less important in terms of taste and the way it works with dough. In fact, a butter rich in lactic acids will have a very different taste from 'regular' butter, a taste which comes from 'culturing' or fermenting the cream before it is churned into butter.

Bean and Zucchini Hummus. Spinach Soup. Spaghetti All'arrabbiata.

Blog Post & recipe: Pinto Bean and Zucchini Hummus

Zucchini lends a western Mediterranean flair to this spicy but rich and earthy hummus made from pinto beans instead of chickpeas, with yogurt along to add a ... tang.

Blog Post & Recipe: Spinach Soup with Potato & Fried Garlic

... a simple spinach soup, with all in a bowl & one dominant flavor of fried garlic ... Unlike the popular pureed & creamy spinach soup, this one has the leaves just wilted. The color of the soup will depend on the amount of tomato you use & also the turmeric. More tomato also adds a slight tang, so if you want yours slightly sharp, feel free to use more tomato in it.

Blog Post & Recipe: Spaghetti All'arrabbiata

All'arrabbiata means "angry style", and that's all you really need to know about this recipe. It's a tomato sauce with a kick. Broccomole. Pancetta vs. Bacon. Curry Powder.

Blog Post & Recipe: Holy Broccomole

But the one vegetable that I have not seen in dips is broccoli ... I recommend your [sic] try broccomole for something quick and different but it not a comestible to linger in your fridge too long. It is excellent on good bread or a corn thin and no doubt would benefit from a slice of tomato on top.

Article: Pancetta vs. bacon: Each brings its unique character to a recipe

Dear Lynne: Could you tell me if I can substitute bacon for pancetta in a recipe? Isn't pancetta just the Italian name for bacon?

Lindsey

In a pinch, you can substitute bacon for pancetta as long as you understand what that change is going to do to your dish. Both pancetta and bacon are cured pork made from the same cut -- the pork belly ... That said, they taste different ...

Blog Post: Good Question: How Do I Cook With Curry Powder?

Dear Kitchn, Do you have any suggestions on cooking with curry? I bought three different kinds of curry powered from Penzey's. I'm really into the warm spice flavors and would like to incorporate them into some easy weeknight meals.

I tried this Curried-Squash and Red-Lentil Soup recipe yesterday. I was expecting layers of flavors: rich squash, earthy beans and curry warmth. Instead, the soup just had this one flat spice note. Not very appealing. Can you give me more advice on cooking with curry?

Tchicha bel Khoubiz. Mapo tofu. Hummus.

Blog Post & Recipe: Tchicha bel Khoubiz

If there is anything that keeps me from preparing North African inspired cuisine regularly, it’s the time consuming aspect. ... It was a sort of jackpot then that I discovered Tchicha bel Khoubiz , or Bulghur with Greens.

Article & Recipe: Mapo tofu as it was meant to be

Look to the sidebar on the left for the link to the recipe.

Fermented broad-bean sauce, chili-sesame oil, and Sichuan peppercorns are available in most Asian markets [in the US at least]. For the peppercorns, look for bags that contain mostly reddish-brown outer husks with only a few shiny black interior pods and stems. It is important to use silken tofu in block form.

Blog Post & Recipe: Classic Hummus

I’ve tried to buy prepared Hummus in the grocery store ... but they all have a decidedly acidic taste, the result of the citric acid added to ensure that it remains preserved. And it always, always falls short.

Making hummus at home is the only way to go, and it’s surprisingly easy as long as you can find tahini, a specialty sesame paste sold in jars.

Save Bacon Fat. Roasted Tomatoes. Guacamole

Blog Post: Tip: Save Your Bacon Fat

See a theme? Essentially, use a spoonful of bacon fat anywhere you'd use a pat of butter or a glug of olive oil.

It’s a slow roasting process at 200-225° for about 8 hours. Yeah, I said 8 hours, but DON’T FREAK OUT. You don’t have to babysit them or anything.

Blog Post & Recipe: Perfect Guacamole

The name is derived from two Aztec Nahuatl words - ahuacatl (avocado) and molli (sauce). The trick to perfect guacamole is using good, ripe avocados. Check for ripeness by gently pressing the outside of the avocado. If there is no give, the avocado is not ripe yet and will not taste good. If there is a little give, the avocado is ripe. If there is a lot of give, the avocado may be past ripe and not good.

Caramelized Onions. Köfte Meatballs. Argentine Empanadas.

Blog Post & recipe: Dinner Tonight: Köfte Meatballs with Haydari

It's a simplified version of this recipe.

This recipe comes from the Australian food magazine Gourmet Traveler, as part of a larger Turkish mezze-style spread. I nabbed the köfte and haydari recipes, which is a sauce similar to Greek tzatziki but with the intriguing addition of walnuts. The resulting meatballs—a mix of beef and lamb redolent of cumin, coriander, and garlic—were quick and wonderful.

Blog Post & Recipe: Argentine Empanadas

The recipe is pretty straightforward and simple. I omitted raisins in the filling because I never really liked them and most of the best empanadas I had didn’t have them either (although it is indeed, authentic). I also omitted the bell pepper because I didn’t have one.
