Roast Tomato Soup with Mussels & Fennel / Vegetable Stock / Marinated & Broiled Sardines

Blog Post & Recipe: Simple Lessons in Roast Tomato Soup with Mussels & Fennel

So when a Sicilian cook's fishmonger was unable to supply her with all the fish she wanted for her brodu di pisci, or the family's budget didn't allow for an elaborate array of fresh fish, she had a trick. She'd use a combination of garlic, parsley, chilies, and salt pounded into a rough paste and then fried in local olive oil.

Blog Post & Recipe: How to Make Vegetable Stock

It helps to brown the veggies first, so the stock gets infused with some of the flavors from caramelization. Unlike chicken or beef stock, which needs time to extract all the goodness from the bones, with vegetable stock, you cook the stock for only an hour to an hour and half. Beyond that, the flavors begin to disintegrate.

Blog Post & Recipe: The Nasty Bits: How to Make Sardine Lovers out of Sardine Skeptics

If you can get sardines that are very fresh, the easiest thing to do is to grill or broil them so the skin chars a little. Sprinkle with salt, freshly ground pepper, and lemon or vinegar. If, however, you find that fresh sardines are still too fishy for your taste, consider a simple marinade. I use ginger to combat the fishiness, a little wine for depth, soy sauce, and a dash of salt and sugar.

Pumpkin Sardine Patties / Cook Perfect Porridge / One-Pot Meal Miso Soup

Blog Post & Recipe: Pumpkin Sardine Patties

I decided that these patties, rich in Omega-3, shall soon be as usual as the ones I made with dried shrimps.

Blog Post & Recipe: How to cook perfect porridge

The important thing is that porridge should be creamy in texture (lots of stirring required), but with enough chewy bite to keep it interesting.

This soup is very versatile and makes a lot, so plan on leftovers (you may need to add extra broth the next day as the noodles suck up all the liquid overnight). You can use whatever vegetables

Browned Sardines / Roasted Cauliflower / Spanish Chilindron Stew

Blog Post & Recipe: Turning a humble can of sardines into an epicurean delight

I heat up the fish with a little butter then add sliced onions and minced garlic during the last 30 seconds (with no stirring so as not to break up the fish) so that the onion slices are still lightly crisp when the sardines are served.

Blog Post & Recipe: Roasted Cauliflower

Cut cauliflower cooks faster and there’s a lot more surface that gets browned (it’s what I do when I forget to start the whole cauliflower in time). But cooking it whole is easier, and it looks so cool while it’s roasting and does make a tantalizing presentation at the table.

Blog Post & Recipe: Spanish Chilindron Stew

It is rich, woodsy, and bright, a perfect combination of the “red food” many of us crave (spaghetti sauce, chili, etc – think about the colors in your favorite foods and you’ll find many of them are reddish) with the slightly austere, piney flavors that mark European wild game cooking ... As for what meat to use ... There is no reason you cannot toss in whatever you like.

Just don't think you can throw those mushrooms on the grill as is. They need to be spruced up. Oil, and vinegar, and spices, oh my. The rest of the vegetables are really not hard. Brush them with a little olive oil, and add salt and pepper. You're basically going for a nice char-grilled exterior.

Crispy Chicken Skin Tacos with Habanero Salsa / Pasta con le Sarde / Eggs Drumkilbo

Blog Post & Recipe: Crispy Chicken Skin Tacos with Habanero Salsa

I ask you, do you like bacon? Because if you do, think of fried chicken skin as "chicken bacon". They're just tasty fried, fatty, salty bits.

Blog Post & Recipe: Pasta con le Sarde: Sicily on a plate

A strikingly simple plate of spaghetti, fennel, onions, and sardines garnished with golden raisins (sultanas) and pine nuts, but its layers of flavor and texture speak of Sicily’s multifarious heritage.

Blog Post & Recipe: Eggs Drumkilbo

Eggs Drumkilbo was a favourite of the late Queen Elizabeth, the Queen Mother (Gawd bless 'er), and has recently been described by the food critic, Giles Coren, as "so awful it's almost good". It's a splendid old thing, with Lord knows how many flavours going on in there; completely over-the-top and utterly unfashionable. It was served at previous royal weddings. Here's how you make it

Great fan of Nick's artistry, and the fantastic variety of Martinis offered by Allesandro at Duke's, but restricting yourselves to the offerings of one manufacturer of gin, namely the multinational Pernod Ricard casts a long shadow of the assertion perfect.

Sardines and Spaghetti. Leek and Zucchini Soup. Noodle Soup.

Blog Post & Recipe: Dinner Tonight: Venetian Spaghetti with Sardines

Not that there are any clams to be found—just the ultrahealthy and ultracheap sardine, onions, and a little milk which almost melt to combine as a gently flavored and slightly thick sauce. It coats the pasta beautifully.

Blog Post & Recipe: cream of leek & zucchini soup

... the flavor was perfect, the creaminess lent it a satisfying richness, and the zucchini made me feel like I was eating something reasonably healthy. A small cup was the perfect amount for a light lunch.

What it is: a tasty, fast, cheap, infinitely variable broth-and-noodle combination. Its preparation is slowed down only by waiting for the water to boil.

A key ingredient is ketchup; if you can’t bear that thought, you can use tomato paste instead. There’s also sriracha, the Southeast Asian hot sauce; and soy sauce; vinegar; and sesame oil, all of which add character. The noodles I use are fresh egg pasta, but just about any kind of noodle can be used ...
