Philadelphia Pepper Pot Soup / Lemongrass Chai Tea / 3 Surf-Club Meals

Blog Post & Recipe: Philadelphia pepper pot: the soup that won the American Revolution?

But true, tripey pepper pot has dwindled in popularity, and is now merely a curio in a few Philadelphia restaurants. The famous City Tavern sells a West Indian version on its lunch menu which reportedly does neglects tripe altogether.

Blog Post & Recipe: Lemongrass Chai Tea

If you had asked me about 6 months back if I would use lemongrass in tea I would have probably thought it was some strange Thai fusion version of tea. I didn't know then, that I had been having lemon grass tea for years only I knew it as "Chai Patta"

Article & Recipes: Surf-club cuisine

An ''oarsome'' (thanks for the title, Noosa Surf Club) prawn salad makes an easy-breezy lunch, with its freshly cooked prawns, avocado, radish and leaves drizzled with creamy green goddess dressing. Then there's a towering surf-and-turf burger that tops juicy chorizo and beef burger meat with crumbed calamari rings, beetroot, lettuce and tomato that's just plain surftastic.

Braised Brisket / 4 Confits / Prawn & Lemon Zest Soup

Recipe: Braised Brisket

You can also do this in a slow cooker.

Blog Post & Recipes: Vegetable Confit

This process can be applied to many other foods. Just keep these two guidelines in mind:

- Fully cover the food with fat (duck fat, olive oil, grapeseed oil, bacon fat…)
- Cook at low heat for a long time (no higher than 250ºF, 2-10 hours)

Blog Post & Recipe: Shrimp & lemon zest soup

This was way, WAY more than the sum of its parts, and it’s all due to the the lemon zest. While the parsley garnish was good, chopped tarragon or chervil would be even better. I’d also consider making a dedicated tomato and shrimp shell broth with a tiny pinch of saffron.

It’s a simple stew consisting of mung beans, a small green bean native to India and popular in the Philippines for sweet and savory dishes.

Blog Post & Recipe: “Blue Grouse with Roasted Apples and Pears”

There are several kinds of grouse: sage grouse (which tastes a lot like what it eats, sage), spruce grouse, sooty grouse, ruffed grouse, sharp-tail grouse, and the blue grouse, also known as the dusky grouse.

Pickled Prawns / Pesto Frittata Bites / Freeze Chicken Stock in Ice Cube Trays

Blog Post & Recipe: Pickled Shrimp

Essentially, then, this recipe boils down to one simple step: "Throw all the ingredients in a jar and chill overnight." Easy, peasy!

Blog Post & Recipe: Pesto Frittata Bites

I was asked to bring an egg dish, which usually means a frittata. But when you go to brunch at the home of the hostess with the mostess plus, you best bring something real nice. So I went all fancy on you: I tucked my frittata recipe into mini-muffin cups.

Blog Post & Recipe: Weekend Project: Freeze Chicken Stock in Ice Cube Trays

When ready, crack the ice cubes into a large bowl, and then transfer to a zip-lock bags. Each ice cube equals about one ounce of liquid. If they seem to stick together, carefully toss the bags on the counter — they should easily break back into individual cubes.

Lamb & Pine Nut Sausage Rolls / Beetroot, Citrus & Ginger Juice / Curried Prawns with Cucumbers

Blog Post & Recipe: lamb and pine nut sausage rolls

prep time: 25 minutes
cook time: 40mins + cooling time (10-15mins)
makes 40 sausage rolls

Blog Post & Recipe: Beetroot, Citrus & Ginger Juice

It's hard to describe perfection, but imagine an earthy-sweet jewel coloured drink redolent with the mild flavour of beetroot as base with a few citrus-y top notes and a hit of sinus-clearing ginger to round it off.

Blog Post & Recipe: Curried Shrimp with Cucumbers

The shrimp and cucumber, which is cooked just beyond the tender-crisp stage, keeps things nice and light to balance out the rich coconut sauce. And you've got two options for the sauce. You can use a whole can of coconut to get a nice and soupy curry, which would saturate and flavor the bed of rice, or cut back to make things a less saucy.

Zucchini & Tomato Flatbread Pizza / Chickpeas with Sage / Stir Fried Chinese Chives

Blog Post & Recipe: Farmer’s Market Flatbread Pizza

I shredded the zucchini, sauteed it with olive oil, and spread it on a toasted flatbread. It got kind of, almost, creamy? Obviously it was a little weird. But totally good.

Blog Post & Recipe: Chickpeas with sage

Using sage from the patio, walnuts from the freezer, leftover chickpeas and butter, I made this instead. It is crunchy, its delicious, it has the subtle fragrance of roasted butter (what the French call beurre noisette). Did you ever try fried sage leaves? You will eat these crispy and dainty gems like popcorn.

Blog Post & Recipe: Stir Fried Chinese Chives | ผัดดอกกุ้ยช่าย

This stir fry of Chinese chives and shrimp is a perfect example. It's made from only four ingredients and literally takes five minutes to cook, but it tastes fantastic. The flavor comes from the Chinese chives, also known as garlic chives because of their very present garlic flavor. To retain as much of this flavor as possible, these chives are stir fried quickly over super high heat for only a minute or two.

Blog Post & Recipes: Deliciously Upsided Down Dinners

I have an awesome new cookbook that I'll be raving about very soon and this Eggplant Manicotti caught my eye. The funny thing is... there is no real manicotti. The "pasta" is actually slices of eggplant with a very tasty filling.

Caldo de Camarón (Dried Prawn Soup) / How to Prepare Black Fungus & Wood Ear Mushrooms / Green Tea Infused Sunroot Soup

That fresh squeezed lime juice is what makes all of the flavors in the soup, truly shine.

Blog Post: How to prepare black fungus and wood ears mushrooms

See where the red arrow points? If you feel around with your fingers in that part, you’ll know how much different the texture is from the rest of the fungus. That tough hard part should be cut off.

Blog Post & Recipe: Green Tea Infused Sunroot Soup ('Sunroot' is Jerusalem Artichoke)

We used green tea instead of broth in this soup. The flavors from the tea really works good together with the sunroot. Tea infusion is a fun way to experiment with new flavors in your standard soups.

Ancient Roman Olive Paste / Perfect Hollandaise Sauce / Gambas Al Ajillo

Blog Post & Recipe: Classical Cooking

Cato’s recipe for this olive paste is included in “The Classical Cookbook,” a book of recipes from ancient Greece and Rome

Blog Post & Recipe: How to make perfect hollandaise sauce

The trick, according to food science god Harold McGee, is "heat the egg yolks enough to obtain the desired thickness, but not so much that the yolk proteins coagulate into little solid curds and the sauce separates".

Blog Post & Recipe: Gambas Al Ajillo

But while present, the aroma of garlic wasn’t overpowering. That’s because the garlic wasn’t grated, the bits were more like pungent punctuation marks rather than a blanket of overwhelming stink. This allowed room for the sweet, briny flavor of the shrimp to come through, which was complimented by the earthy sweetness of the peppers.

White Bean Hummus & Cooking Navy Beans / Cook Perfect Beans / Sweet Chilli Seafood Ramen

Blog Post & Recipe: white bean hummus

Last week I had a hummus craving, but was fresh out of chickpeas. I looked at the silky white beans in the fridge, with a thick slick of olive oil on top and thought "why not".

A Not So Simple Pot of Beans

Blog Post & Recipe: The Best Way: Perfect Beans, Every Time

My trusted method is actually a mash-up of two, the Baking Soda Soak and the Oven Method. Both have their proponents and their sceptics, but I think together they make the perfect bean; the baking soda scrapes time off the simmering process, and the oven mimics the slow, pressure-cooked texture of canned beans.

Blog Post & Recipe: On the slurping noises – Sweet chilli seafood ramen {8}

Add a handful of scallops and prawns. While they caramelise, chop a chilli pepper and a couple of spring onions. Throw them along with the seafood. Grate a fat piece of ginger, the zest of one lime and a few garlic cloves over the pan and give it a good shake. Deglaze with half a litre of water and bring to the boil.

Curried Butternut Soup / Turkey Chili / Prawn Phở

Blog Post & Recipe: Curried Butternut Soup

Every October I make batches of this gorgeous and golden soul warming soup. The secret is- use ripe flavorful squash. Choose a squash with firm golden-tan skin. The squash should make a hollow ring when thumped.

Blog Post: Move on by, purists: Turkey chili satisfies

Purists would argue that using turkey in chili is heresy. They'd also rally against beans. Real chili is about beef, they say, and lots of it. But we want a packed-with-flavor meal that doesn't pack our arteries, thank you very much. If that means straying from tradition, so be it.

Blog Post: Bazille's Prawn Phở

Phở is a beef and rice noodle soup from North Vietnam. ... The soup is customised by the customer with a variety of garnishes and in Vietnam a species of peanut worm, sá sùng, is added to sweeten the broth as well as a pheromone extract from the giant water bug to lend a spicy note. Phonetically the word Phở is thought to have originated from the French word feu meaning fire.
