Mrs Beeton’s Spiced Beef / Cook Perfect Yorkshire Puddings / Sweetbreads Sauté

Blog Post & Recipe: Mrs Beeton’s Spiced Beef

The outside cures becoming firm but leaving the inside very soft perfect for cold cuts and canapes.

Blog Post & Recipe: How to cook perfect yorkshire puddings

The single most important thing to remember about yorkshire puddings is that the fat must be smoking hot before you begin cooking – you need a good sizzle as batter hits dripping.

Blog Post & Recipe: The Nasty Bits: Sweetbreads

Sweetbreads, to clarify, are a culinary term that refers to two very different organs—the thymus glands and the pancreas, the latter which is often called the "stomach sweetbread," though of course, the stomach and the pancreas are different. [...] You can sauté or pan-fry the sweetbreads with whatever flavors you like. This time, I used mustard seed and turmeric, sautéed with plenty of onions and chili peppers, for a vaguely Indian preparation that tasted nice with fragrant basmati on the side.

Key Lime Pie / Nyonya Style Pumpkin & Prawn Curry / Barbacoa Beef Cheek Tacos

Blog Post & Recipe: Key Lime Pie

I like this recipe because of the lime zest in the graham cracker crust. The filling is sweet and the zest gives some bitterness to the crust and creates a very nice flavour.

Blog Post & Recipe: Nyonya Style Pumpkin and Shrimp Curry

Now, let us get back to today’s recipe. This curry turned out relatively mild as the red chilies found here are not that spicy and the sweet pumpkin did neutralize the heat a little.

Blog Post & Recipe: Cook the Book: Barbacoa Beef Cheek Tacos

For those who are unaccustomed to cheek meat, braising it for tacos does wonders to accessibility because, after all, there's really nothing all that scary about a taco (right?). But odd cuts aside, these beef cheek tacos are pretty incredible. They're marinated in a mole-esque blend of spices, chiles, coffee, and peanut butter with a deep yet mellow spiciness that permeates the cheeks beautifully.

Vegan Party Pies / Sushi Burrito / Miso Pig's Head

Blog Post & Recipe: Vegan Party Pies: Aussie "meat" pies for the footy

I couldn't guarantee Geelong would win. I decided I would at least succeed in making vegan party pies.

Blog Post & Recipe: Sushi Burrito

This is really just a sushi hand roll, but the burrito part is to encourage you not to see DIY sushi as difficult or requiring rules to be followed. There is virtually NOTHING that can not/should not be dropped into the middle of these rolls.

Blog Post & Recipe: the miso pig’s head

It’s basically an adaptation of the classic Izakaya staple motsu nikomi, a hearty stew of braised pigs tripe and vegetables in a rich miso broth, a dish that really highlights the natural affinity between offal and miso – Our take on it, using all the different tastes and textures of a pigs head lifts it to another level.

Veggie Pizza with Zucchini, Corn, Cilantro & Lime / Fried Sweetbreads with Carrot Salad / Grilled Fish with Basil

Blog Post & Recipe: Summer Veggie Pizza with Zucchini, Corn, Cilantro and Lime [ via ]

This pizza is all about zucchini and corn right off the cob and feta cheese and sprigs of cilantro and all kinds of summery goodness with a big splash of lime to finish it off.

Recipe: Sunday Supper: Fried Sweetbreads with Carrot Salad

Sweetbreads are the thymus or pancreas (neck and stomatch sweetbread, respectively) of a calf. They are subtly flavored and have a delicate texture, and are an excellent introduction to those who are a little wary of offal. Sweetbreads are a treat. This is a simple preparation that adds some crunch to the soft nuggets of sweetbreads.

Blog Post & Recipe: Simple Grilled Fish with Basil

Let me start by saying that I almost always cook bass-like fish whole. Why? They have huge heads for their size, and big, round rib cages. This means you get a paltry yield off them if you try to fillet the fish. Unless you are very good, your yield will be barely 30 percent of live weight. Contrast that with salmon, where you can get upwards of 60-70 percent.

4 Recipes from Sri Lanka / Veal Brains alla Milanese / Corn and Tomato Pie

Blog Post & Recipe: Recipes from Sri Lanka

Sri Lanka is a culinary paradise, showing off the delights of delicate spicing – and lashings of fresh coconut milk

Cardamom and yogurt cake recipe ... Quick Sri Lankan greens recipe ... Beetroot badum recipe ... Lobster curry recipe

Blog Post & Recipe: Using Your Grey Matter: Veal Brains alla Milanese

Thus, the dish you see before you is a play on the combination of eggplant parmigiana and veal or chicken milanese: a roasted eggplant-wrapped package of red sauce and mozzarella seats a pair of breaded and deep-fried brains in cross-section.

Blog Post & Recipe: Corn and Tomato Pie

With field tomatoes being at their peak right now it was difficult to pass up on a pie that used them along with the corn that I had started the search for. Add to that the use of mayonnaise, cheddar cheese and fresh summery basil and you had a winner that was impossible to resist! I tweaked the recipe a bit replacing the chives with green onions and adding some applewood smoked bacon for even more flavour.

Ginger Switchel / Prepare and Cook Beef Heart / Saffron Pistachio Kulfi

Blog Post & Recipe: Drink Recipe: Ginger Switchel

Dating back to the early American colonies and possibly the Caribbean before that, this vinegar and ginger drink became known as haymaker's punch in the 19th century, when it was served to quench farmers' thirst during the hay harvest.

Blog Post & Video: How To Prepare and Cook Beef Heart

To prepare the beef heart for cooking, cut away all the fat, any obviously squishy tissue, connective tissue, valves, papillary muscles and tendineae attached to the valve flaps; it should be obvious by sight what’s good to eat and what’s not. You want clean dense muscle only; you’ll have a lot of trim—don’t make yourself too crazy trying to get every last bit.

Grilled Beef Heart with Herbed Vinaigrette

Blog Post & Recipe: Saffron Pistachio Kulfi - An Indian Ice Cream

Kulfi is an Indian answer to ice cream. Unlike the western ice cream kulfi is a milk based ice cream which is not churned but is more creamy than usual fare. Traditionally the milk is reduced to half by heating the milk over a long period of time which gives it a nutty and distinct flavor. The traditional flavors are of saffron, pistachio and almonds but these days you will find fruit kulfi's as well.

Port-Braised Oxtail Cakes on Yellow Corn Polenta / Stir Fried Anchovies (Myulchi Bokkeum) / An A to Z of offal + 3 Offal Recipes

Blog Post & Recipe: Port-Braised Oxtail Cakes on Yellow Corn Polenta- It’s the Little Things

I turned a soggy pile of oxtail mush into a panko-fried cake and I put it on a round of polenta. Then I topped my savory “sundae,” but not with a cherry. Instead I used a port-poached plum.

Blog Post & Recipe: Stir Fried Anchovies (Myulchi Bokkeum)

This dish is a staple in most Koreans' refrigerator. It is easy to make, lasts for a while and can be eaten as a side dish with any meal. Also it is perfect for lunchboxes. Once you get over the weirdness of eating so many tiny fish in one bite it's really delicious.

Homemade Violet Crumble / The Eskimo Cook Book / How to Peel Ginger

Blog Post & Recipe: Let's Do the Hokey Pokey!

So if you are asking why bother with scratchmade honeycomb if you can get Crunchie or Violet Crumble, I would say, because you can use better chocolate, that's why.

Blog Post & Recipes: The Eskimo Cook Book

The Eskimo Cook Book is a collection of recipes brought together by children at the Shismaref Day School in 1952 and published as a booklet by the 'Alaska Crippled Children's Association'.

Cranberries ... Blueberries ... Lincod Eskimo Ice Cream ... Ahzeeach and Ahlowe'-kuk ... Buegwakuk ... Tomcod Liver and berries ... Ah-pick ... Willow Meats ... Eskimo Ice Cream ... Sue'wok (dried salmon eggs) and berries ... Eggs (duck or sea-gull) ... Conch ... [etc]

Blog Post & Video: How to Peel Ginger

All those little nooks and nubs make peeling ginger with a paring knife a veritable nightmare. Think of the waste! Intolerable. So Amanda dreamt up a trick that requires nothing more than a small spoon and Merrill has a hand at demonstration: you use the spoon's edge to quickly scrape away the root's surprisingly thin skin. It's so safe you could even enlist the wee folk for this task!

Sweet Potato Biscuits / Pumpkin, Chickpea and Lemongrass Curry / Goat Brain Fritters

Blog Post & Recipe: Sweet Potato Biscuits

The longest of the prep is making the sweet potato puree. I peeled and cubed mine, boiled until fork-tender, then pureed them in a food processor until smooth and velvety.

Blog Post & Recipe: Easy Pumpkin, Chickpea and Lemongrass Curry [via]

The beauty of this is you can throw in whatever you like in the curry; your favourite meat, veges or whatever you have sitting in the bottom of your fridge that isn’t sadly limp (for me, it was time to use up my dried chickpeas!).

Blog Post & Recipe: Bheja Fry - Goat Brain Fritters [via]

Preparing brains is much like preparing sweetbreads , which I've served many times in the French restaurants I've worked in. You rinse the brains in cold water for about an hour to eliminate excess blood, then poach in a court bouillon with a few tablespoons of vinegar for about 30 minutes. For bheja fry I used ginger garlic cumin and turmeric in the court bouillon as well as the standard onion, celery, and carrot.

Suquet de Peix / How to Clean a Gizzard & Corned Gizzards & Cabbage / Vegetable Tamarind Soup

Blog Post & Recipe: SUQUET DE PEIX, a Mediterranean flavours Ode

Check all the ingredients of the recipe and see how healthy this dish is! We've got Olive oil, ripe tomatoes, fresh rock fish, some fresh seafood, garlic and onion, nuts ...

Blog Post & Video: How to Clean a Gizzard and Corned Gizzards and Cabbage

One of the more unloved giblets, gizzards are dense nuggets of deep burgundy meat. That’s right, I said meat. Even though a gizzard is an internal organ, it is made of muscle, just like the breast or thigh meat

Blog Post & Recipe: vegetable tamarind soup, sayur asam

I think almost all South East Asian countries have their own version of tamarind-based soup, slightly spicy with loads of soft vegetables. Malaysians with their laksa soup, Filipinos with sinigang, Thais with tom yam. Sourish tamarind deserves much more credits than it already has. It is one of the ingredients that made our cuisine as exotic as it now is.

Our tamarind soup uses sliced tamarind (asam potong) and salam leaves with vegetables that can nicely soak up all the beautiful flavors from tamarind, bay leaves, lemongrass, palm sugar (gula merah) and chilies.

Green Risotto / Burger Wrapped In Grape Leaves / Crab Innards

Blog Post & Recipe: Mrs Kennedy's Green Risotto

It's a simple risotto flavoured with puréed spinach. The latter turns it a lovely, vivid green colour.

Recipe: Burger Wrapped In Grape Leaves

The grape leaves provide the tangy taste that enhances the meat flavor. It is up to you to use any meat of your choice, minced lamb or beef mixed with parsley and onions, salt, black pepper and allspice

Blog Post & Recipe: The Nasty Bits: Crab Innards

Like the crab meat itself, the taste of what is inside varies depending on the type of crab. On blue claws the innards taste somewhat like caviar; on Dungeness, they are more abundant and custardy in texture, with a sweetness that reminds me of sea urchin.

Carrot & Fennel Soup / A Guide to Spanish Cured Meats / Stewed Pork Intestine

Blog Post & Recipe: Carrot and Fennel Soup Recipe

... it's easy to make a meal of this by serving it topped with a poached egg

Article & Pictures: A Guide to Spanish Cured Meats

The Spanish charcuterie board is a thing of porky magnificence: from the omnipresent chorizo, to the sweet and soft butifarra, to that king of hams, the rare and pricey jamón ibérico de bellota ...

Blog Post & Recipe: Stewed Pork Intestine

After an initial soak in water and vinegar, parboil them, then simmer them in water flavored with aromatics. You can take the pan-Asian route and add ginger, soy sauce, rice wine, and star anise to your pot, or stick to some version of aromatics and herbs like this recipe.

Stuffed Sheep's Hearts / Apfelschmalz / Fennel & Anchovy Tart

Recipe: Stuffed sheep's hearts - Fyllt hjörtu

Chop up the prunes and stuff the hearts with them. Sew closed.

Blog Post & Recipe: Apfelschmalz - a typical German bread spread

Apfelschmalz (if you like to translate it: apple lard) is one of those typical and rustic bread spreads you will have for what is called 'Brotzeit', which is a snack with a rustic bread and often beer.

Recipe: Dan Lepard's fennel and anchovy tart recipe

The Italian 00 flour gives a more tender crust than regular bread flour. Strong white flour can be used instead, but you'll need a dash more water and you won't have that same mellow texture when you bite into it.

Welsh Rarebit Muffins / Substituting Agave for Sugar / Calf's Liver with Onions

Blog Post & Recipe: Nigella's Welsh Rarebit Muffins

Neither particularly healthy nor sweet, they are a great snack for on the road and would be delicious with breakfast eggs or a bowl of soup.

Blog Post: Tips for Substituting Agave in Baked Goods

Agave isn't a difficult ingredient to add to your pantry and won't crystallize (like honey), making it have a ridiculously long shelf life. Agave is easy enough to interchange in sauces, drinks or stir frying, but baking can be a bit more difficult.

Blog Post & Recipe: Calf's Liver with Onions

One of my favorite calf's liver recipes comes from The River Cottage Meatbook, in which the pan is deglazed with balsamic vinegar after the liver has been seared. A well-aged balsamic pairs nicely, but recently I've been using an aged fig vinegar, a sweeter and much fruitier alternative.

Vegan Popcorn Chicken / Red Posole / Sheep's Head

Blog Post & Recipe: Vegan Popcorn Chicken (they use soy)

We have double coated the nuggets for a thicker and crunchier outside; do it once if you are lazy or do not need a thick and crunchy coat.

Blog Post & Recipe: Red Posole for New Year's Day

I’d never had red posole and was a little dubious that she was serving this instead of black-eyed peas. She assured me, however, that this is what her family ate in New Mexico, not to mention it was traditional New Year’s Day fare in Mexico as well.

Puttanesca. Fried Pig's Tail. Cotechino with Red Lentil Stew.

Blog Post & Recipe: Desperate dinners - good food from the cupboard (via Limes & Lycopene)

Canned tomatoes, mashed anchovies, capers and pasta. These ingredients, staples from the kitchen cupboard, are the basis for one of the best desperate dinners: pasta puttanesca.

Blog Post & Recipe: The Nasty Bits: Crisp Fried Pig's Tail

I want to make the case that pigs' tails contain everything desirable in the pig, and in exactly the right proportions. Unlike oxtail, the tails of pigs come with the skin intact so that each segment is a perfect cross-section of skin, fat, tendon, and meat [...] a tail is a little porky universe unto itself ...

Blog Post & Recipe: Cotechino with Red Lentil Stew

Cotechino is a large thick sausage, lightly spiced and made from all sorts of bits of pork and a generous quality of it's fat. It's first boiled for a few hours and when sliced the combination of ingredients leads to a wonderfully gelatinous treat. To balance the richness of the dish, lentils are the favoured companion.

Wok cooking. Soft Tofu. Prairie Oysters.

Article & Recipe: Wok-king is cooking for people on the run

Some wok tips, with a recipe at the end: Ginger Chicken With Snow Peas, Red Pepper and Water Chestnuts.

Article: Delicacy of the Wild West Lives on for Those So Bold

Of all the country’s gastronomic competitions, from “Top Chef” to pies at the county fair, perhaps none compare to the challenge facing the harried chefs assembled here in a parking lot for the 18th annual International Comstock Mountain Oyster Fry. Classically dipped in cornmeal and then fried, or artfully concealed in scrambled eggs, bordelaise sauce or sushi, these oysters were not of the Chesapeake or bluepoint variety but, rather, a cornerstone of Western ranching culture involving testicles from gelded lambs and calves.

4 medium-sized onions

2-4 level tbsp salt
1 level teaspoonful black pepper (blanched)
1 level teaspoonful powdered herbs
