Whole-Wheat Pita Bread / How to Sauté / 11 Lentil Recipes

Blog Post & Recipe: Whole-Wheat Pita Bread

This recipe, adapted from Deborah Madison’s Vegetarian Cooking for Everyone, yields an easy and pleasing dough to work with. Store leftover balls of dough (individually wrapped) in the freezer, then thaw and cook to order.

Blog Post & Recipes: Sear, Sauce, and Serve: Mastering High-Heat, High-Flavor Cooking

The visual might not be enough to get you in the restaurant (I’ve never been), but it is instructive on the basics of sautéing: start with a sturdy pan and high heat (no worries, you don’t need the dancing flames); add seafood, vegetables, or meat (or all of the above); sear and toss; and then finish with a splash of booze or a sauce. That’s the formula, but there are a couple of smaller but equally important steps.

Overlooked by many a supermarket shopper, protein-rich lentils are faster than other types of dried legumes to prepare, and they easily absorb your favorite flavors from other foods and seasonings. As a result, you can never really run out of ways to make them.

Hot Cappuccino Punch / Mulled Wine / Sweet Potato and Lentil Dahl

Blog Post & Recipe: Hot Cappuccino Punch

Combine all ingredients in a large saucepan. Cook over medium heat until mixture begins to boil. Remove from heat and serve immediately.

Blog Post & Recipe: Mulled Wine - How to Make the Best Recipe Ever

After searching many recipes, Jean-Christophe Novelli's was the one. Lovely vanilla, star anise, cinnamon, lemon grass, cardamom pods, bay leaves and cloves, what's not to like?

Blog Post & Recipe: Sweet Potato and Lentil Dahl

Dahl is something we have every couple of weeks , I find it a strangely soothing dish. Here the addition of some sweet potato makes it a filling meal with some pitta bread or chappati. I leave the seeds whole since I like the crunch but you could definitely grind the coriander.

Barbounofassoula (Stewed Borlotti Beans) / Skillet Eggplant & Lentils with Almond Parmesan / Perfect Pan-Roasted Chicken Thighs

Blog Post & Recipe: Fassolia Ηantres Giahni or Barbounofassoula (Stewed Borlotti Beans)

This is one of the dishes I enjoy as they are delicious, with a meatier texture than common beans and a good source of protein and fibre

Blog Post & Recipe: Skillet Eggplant and Lentils with Almond Parmesan

To make Almond Parmesan, process 1/4 cup nutritional yeast and 1/3 cup whole raw almonds in a blender or food processor until crumbly. Store in refrigerator.

Blog Post & Recipe: perfect pan-roasted chicken thighs

Despite it’s simple ingredient list- salt, pepper and a bit of vegetable oil, it’s really about technique and searing the skin to get really crispy results. Did I mention that it only takes 35 minutes?

8 Sources of Vegetarian Protein + Lentil Balls / Chaldean Meat Pies / Chipotle Caramelised Onions

Blog Post & Video & Recipe: 8 unusual sources of veggie protein + a lentil balls recipe

1. brussels sprouts ... 2. kale ... 3. edamame ... 4. sunflower seeds ... 5. tempeh ... 6. almonds ... 7. quinoa ... 8. seitan

lentil balls with tomato sauce recipe ... simple green salad

Don’t be alarmed by the appearance of these little lentil balls, they’re actually a lot more delicious than they look. The lentils, almond meal and egg combine to create a wonderfully satisfying ball texture.

Blog Post & Recipe: Chaldean Meat Pies

Those golden triangles you see are some irresistible meat pies. They are little scented pillows that enclose ground beef spiced with baharat, curry powder, onions and jalapeno for some spiciness. The dough is very soft and scented with fennel seeds, anise seeds, nigela seeds, sesame seeds and ground cardamom.

Blog Post & Recipe: Chipotle Caramelized Onions

One of the tricks that I have picked up over the years is using the widest pan that I have to increase the surface area of the onions touching the heat. Another trick is to add some water to the pan which allows you to cook the onions at a higher temperature, say medium instead of medium-low, as the water helps prevent the onions from burning. Incidentally, water also conducts heat better than air so it also helps bring the heat to more of the surface area of the onions.

5 Recipes from the Momofuku Cookbook / Corn, Buttermilk & Chive Popovers / How to Sprout Lentils + Gourmet Sprouted Lentil Salad

Blog Post & Recipes: David Chang’s Momofuku (Cooking the Books 5)

A few months ago, a few crazy food bloggers (myself and the Boy included) decided that the next Cooking the Books would be from the Momofuku cookbook.

Ramen Broth ... Momofuku Ramen (Cup Noodles) ... Roasted Rice Cakes ... Pork Belly Ssam (sam gyup sal ssam) with Mustard Seed Sauce

Blog Post & Recipe: corn, buttermilk and chive popovers

I turned to Google, which led me to a recipe for corn popovers from The New Basics by Julee Russo and Sheila Lukins. I adjusted them a bit; I swapped buttermilk for regular, as was my plan, and I found that the corn really had to be blended to become part of the batter (rather than kernels that fell out after tearing the popover open).

Blog Post & Recipe: How to Sprout Lentils & Gourmet Sprouted Lentil Salad

Go here to this post - and follow the directions for Sprouting Quinoa, simply replacing the Quinoa with Lentils! Be careful though - Lentils triple in size when you sprout them: If you're using a wide mouth (3 cup) Mason Jar I recommend starting with 1 cup of dried Lentils at the very most. You don't want to run out of room in your jar.

Blog Post & Recipe: The Nasty Bits: Fried Fish Bones

Fried fish bones taste like what you imagine of thin and delicate bones: crunchy at the thick parts and crispy at the thin parts, with a slightly fishy flavor. The trick is to leave some of the fish flesh on when you fillet the whole fish, so that the meat clinging to the bone becomes crispy and brown

Sweet Potato, Apple & Lentil Soup / Spanish Lentil & Butternut Pumpkin Stew with Roast Garlic / Sautéed Fermented Soybean Waste with Black Nightshade

Blog Post & Recipe: Sweet Potato, Apple and Lentil Soup

The combination of sweet potatoes and apples is a natural, and using tart apples helps to ensure that the soup isn’t cloyingly sweet. Lentils add a a subtle yet mysterious heartiness.

Blog Post & Recipe: Spanish Lentil and Squash Stew with Roasted Garlic

This is a lovely, hearty stew that is both savoury but still slightly sweet. Lentils fill the stew as its base, and the butternut squash and red peppers add colour and sweetness. A head of roasted garlic brings a mellow sweetness as well. The peppers are both boiled and pan-fried for a contrast in flavour and texture (but I feel like this step could be skipped if you are pressed for time).

Blog Post & Recipe: WHB #278: Tumis Oncom dan Leunca (Sautéed Fermented Soybean Waste with Black Nightshade)

Most Indonesian cooking books written in English referred oncom as fermented soybean waste.

Indeed it considered to be closely related to tempeh (fermented soybean). But instead of soybean, oncom is actually made from natural by-products of other foods. For example, soy bean tailings from bean curd making, peanut presscake from peanut oil making, cassava tailings from the starch extraction or coconut presscake remnants after the milk squeezed out. These wastes are then fermented using molds.

Tomato Soup / Chilaquiles / 3 Recipes with Hard & Soft Herbs

Blog Post & Recipe: Tomato Soup

This is a thick and creamy (yet creamless!) tomato soup. Made with canned tomatoes and the clever twist of white bread for heft, it’s an easy, bright, and flavorful dish.

Blog Post & Recipe: Chilaquiles

I think the best way to describe it is a casserole of stale/fried corn tortillas, a sauce of your choosing (red, verde, molé–whatever), and a whole bunch of whatever else you have handy (chicken, eggs, avocado, radish, cheese, crema, etc). This dish is meant to be relatively simple to prepare, a great way to make the most of leftovers/random odds and ends

Article & Recipes: Herbs are the next big zing

I think of herbs in two categories, hard and soft. “Hard” herbs are generally the tough ones that can grow through the winter. Think of myrtle, bay, rosemary and sage: these hardier leaves keep their flavour throughout prolonged cooking. They are the herbs I reach for at the start of a dish: they’ll give depth of flavour and a profound aroma by the time I’m finished.

“Soft” herbs such as thyme, dill, marjoram and parsley, need more gentle treatment. If you add them near the start of preparation they get lost: their delicate flavours don’t travel well. But stirred in at the end of cooking they can lift a dish, balance it, give it vibrancy and vigour.

Roasted Asparagus Soup / Cauliflower & Chickpea Curry / Lentils with Fennel, Kale & Sausage

Blog Post & Recipe: asparagus

it's super simple and a great way to use up extra vegetables.

Roasted Asparagus Soup

Recipe: Angela Hartnett's cauliflower and chickpea curry recipe

This vegetable has so many more uses than the classic cauliflower cheese and is used readily in Indian food. The secret is not to overcook it. Add it to the curry mix while it is still warm so it absorbs all the flavours.

Blog Post & Recipe: lentils with fennel, kale & sausage

This lentil dish is perfect for cold winter nights. It also contains fennel which has become one of my new favorite vegetables and is readily available all winter. If you wanted this to be a strictly vegetarian affair, just skip the sausage or trade in the meat for your favorite vegetarian sausage links and you’ll still have a fantastic meal.

Zucchini Fritters / Moong Dal & Red Lentils with Browned Onions / Braised Neck of Lamb with Apricots & Cinnamon

Blog Post & Recipe: zucchini fritters

This batter is beautifully light because of the soda water, but it's also forgiving. Having only one egg, I chucked in a couple of tablespoons of buttermilk last night and by god, it worked. They were even lighter.

Blog Post & Recipe: Dinner Tonight: Moong Dal and Red Lentils with Browned Onions

You could easily substitute all red lentils for this and it would still be pretty good: the real secret is in the fragrant topping, a pile of browned onions, chiles, and spices, bathed in screaming hot ghee and poured over the top of the dish. Once you stir them in, they perfume the humble lentil like you wouldn't believe.

Article & Recipe: Nigel Slater's braised neck of lamb with apricots and cinnamon, and mograbia with bay and cinnamon recipes

I value neck of lamb for its cheap price, sweet fat and almost indestructible nature. The fact that I can make a luxurious supper out of something people boil up for the dog makes me warm to it all the more. Tucked up in a pan with spices and onions, the untidy lumps of meat can cook for a few hours, the toughness and gristle breaking down to soft, spoonable meat and wobbly fat.

The process is simple. Layer fresh black olives with pure sea salt.

Blog Post & Recipe: Lentils with Chocolate. No, really.

Certainly not a common dish anywhere, lentils with chocolate can be found on both sides of the Atlantic in northern Spanish, especially Asturian, and Portuguese cuisine, as well as throughout Latin America. You use a medley of lentils, chickpeas, and borlotti beans, making the soup hearty and filling without being heavy. You add spinach, dill, and cilantro. Easy Roast Chicken / Pork Crackling / Fifteen Vegetarian Recipes

I once again made this rich and spicy Indian curry made up of four types of legumes and lots of warming spices. If you don't have black chickpeas on hand, you can substitute yellow chickpeas, but I will note the black chickpeas add a nice texture to the dish as they are a bit chewier than their yellow cousins.

Kabocha French Lentil Soup / Cabbage Stir Fry / Tomato & Garlic Soup

Blog Post & Recipe: Kabocha French Lentil Soup Recipe

The soup? It is anise and ginger-spiked, with a broth thickened by lots of roasted winter squash.

Blog Post & Recipe: Bandhakopir Tarkari -- a cabbage stir fry

After you have added all the cabbage add salt and Red Chili Powder to taste, mix and cover. Intermittently take off the cover and saute. Covering and sauteing helps in cooking the cabbage faster and also requires less oil I think.

Article & Recipe: Hearty tomato soup is a crowd-pleaser

The recipe is down and to the right of the article.

... whole heads of unpeeled garlic are [covered] with olive oil and roasted until tender and soft. Then the heads are halved and the sweet, yielding garlic scooped out and added to a simmering mixture of tomatoes, leeks and herbs.

When pureed, this potage is thick and hearty with only a subtle hint of garlic flavor.
