Blog Post & Recipe: Fresh Veggie Summer Rolls with Shiso and Thai Basil

In order to make summer rolls, though, you must have at least two essential ingredients: rice wrappers, and mung bean starch noodles ... You basically make like a burrito.

Blog Post & Recipe: Buckwheat filled mushrooms

I love the crunchy buckwheat and I rather under-cook it just a little than let it go all mushy and porridge-like. Pared with rosemary (a little garlic and lemon zest too , if you wish) and tiny bit of cheese they are such a simple thing to enjoy.

Asparagus & Lemon Quinoa Risotto / Chai Iced Tea / Coconut Green Curry Mussels / Ox Tongue Fritters & Green Sauce

Blog Post & Recipe: Asparagus & Lemon Quinoa Risotto

My favorite, lazy way to make quinoa is to throw in some peas and soy sauce. But this time, I was curious how it would work as a risotto. The answer: quite well!

Blog Post & Recipe: Chai Iced Tea

It’s spicy, has a good amount of caffeine (due to the black tea), is milky and sweet, and most important, it’s cold. The sweetened condensed milk is major. If you don’t have a can in your cupboard, and don’t want to buy one, then milk and sugar are totally a workable substitute.

Blog Post & Recipe: coconut green curry mussels

We prep the ingredients (together!) with Andrew picking the mussels over to discard the open or cracked ones. Then he gives them a good rinse and peels a knob of ginger. I busy myself with the lemongrass, the garlic, lime juice, and cilantro. We drop a nob of butter in the pot, and let it melt and get foamy before we bloom the aromatics, stir in coconut milk and curry paste, and add the mussels.

Blog Post & Recipe: tongue and groovy: ox tongue fritters and green sauce (the post includes a link to Hugh Fearnley-Whittingstall's ox tongue, oxtail and pigs' cheek recipes)

First, buy a salted ox tongue from your butcher. It should look like the photo above. You might want to leave it to rinse in cold water for a while before you get properly started - or, if you've got a nice butcher, s/he might have done that for you. Then, cover the tongue with water (you'll need a BIG pan), bring it to the boil, bubble it away for a couple of hours with a few tasty bits and pieces, such as these ...

Portabello Mushroom & Basil Pesto Panini / Roasted Sweet Potato Salad / Escabeche & Savory Granola

Blog Post & Recipe: Portabello Mushroom and Basil Pesto Panini [via]

I decided to have a vegetarian dinner for my family last night and picked up some big beautiful portabello mushrooms for our paninis. I also added fresh basil pesto, mozzarella, tomatoes and sweet vidalia onions to them.

Blog Post & Recipe: Roasted Sweet Potato Salad

And it definitely takes the right kind of potato salad to make me realize that it’s ok to eat something warm on a hot day. I simply have no patience for chill time when there are sweet potatoes, black beans, red peppers, cilantro, and lime involved.

Blog Post & Recipe: Escabeche + Savory Granola (+ Las Manas Tamales)

So, you can imagine our delight when a plate of pickled asparagus, beets and carrots topped with a mess of puffed millet, seeds and spices arrived at our table. After our first bites, we both nodded in agreement. This is so good ...

The vegetables were sharp, intensely flavored and very vinegary. The granola is toasted, salty, sweet, and umami.

Concept: use that grill as a sandwich press. (Or has this already occurred to you, M?)

Mutton Marinated in Yoghurt & Vinegar / Persian Pomegranate Soup / 9 Asparagus Recipes

Recipe: Mutton Marinated in Yogurt and Vinegar

I used mutton chops for this but you can use shoulder which is generally the best cut.

Blog Post & Recipe: persian pomegranate soup

The pomegranates give it a sour, earthy flavour and the lamb adds intensity and richness. This type of Iranian stew is thick and hearty with chunky ingredients. I highly recommend it.

Article & Recipes: Top tips: Mark Hix cooks with asparagus

Deep-fried turkey egg with asparagus ... Strozzapreti with cuttlefish and asparagus ... Cured pork loin with sweet and sour shaved raw asparagus ... Chicken and asparagus broth

Article & Recipe: The eggs have it

Frittatas are easy to make, delicious and nutritious, so they tick all the boxes for the beginner cook ... Once you know how to make them you can vary the fillings to suit your budget and tastebuds; they are a great way to use up leftovers and make a not-so-cheap ingredient go further.

Potato and Bacon Frittata

Article & recipes: Broiled, Sautéed, Roasted, Poached

The chart on the following page provides ideas for cooking 1½ pounds of white fillet, whether whole or cut into individual portions. None of these recipes take more than half an hour from start to finish; thicker pieces of fish will cook in 15 minutes or less, thinner pieces in under 10. You can tell that any fillet is done when it’s opaque and a thin-bladed knife meets little resistance when you use it to poke the thickest part of the fish.

Roasted Asparagus Soup / Cauliflower & Chickpea Curry / Lentils with Fennel, Kale & Sausage

Blog Post & Recipe: asparagus

it's super simple and a great way to use up extra vegetables.

Roasted Asparagus Soup

Recipe: Angela Hartnett's cauliflower and chickpea curry recipe

This vegetable has so many more uses than the classic cauliflower cheese and is used readily in Indian food. The secret is not to overcook it. Add it to the curry mix while it is still warm so it absorbs all the flavours.

Blog Post & Recipe: lentils with fennel, kale & sausage

This lentil dish is perfect for cold winter nights. It also contains fennel which has become one of my new favorite vegetables and is readily available all winter. If you wanted this to be a strictly vegetarian affair, just skip the sausage or trade in the meat for your favorite vegetarian sausage links and you’ll still have a fantastic meal.

Blog Post & Recipe: A proper chutney

It’s finally dawning on me that our capacity for sweet preserves is fairly limited, so I knew this year’s project would have to be savory.

English-style Spicy Green Tomato & Apple Chutney

Article: Ignore Expiration Dates

... we should focus our efforts on what really matters to our health—not spoilage bacteria, which are fairly docile, but their malevolent counterparts: disease-causing pathogens ... which infect the food we eat not because it's old but as a result of unsanitary conditions at factories or elsewhere along the supply chain.

Hollandaise sauce is a notorious curdler. One minute you have a silky sauce, the next scrambled eggs.

Blog Post & Recipe: My Chop Challenge

What is chop? Basically chopped kale (or whatever dark green you have), cooked a long, long time with a bit of meat, hot peppers and palm oil. The result is unbelievably rich and tender and savory and tasty ... DO NOT attempt this recipe without palm oil on hand.

Video: How to make the perfect martini

Readers have posted comments under the video.

Great fan of Nick's artistry, and the fantastic variety of Martinis offered by Allesandro at Duke's, but restricting yourselves to the offerings of one manufacturer of gin, namely the multinational Pernod Ricard casts a long shadow of the assertion perfect.

Article & Recipes: Good oil's here on a grand scale

Poached pumpkin. Mixed Grains. Asparagus.

Recipe: Afghan sweet poached pumpkin

This way of cooking pumpkin, based on a recipe from Afghanistan, is very moist, with the sweetness of the cooking liquid nicely balanced by the tangy yoghurt.

Not only is this a good winter accompaniment for lamb, it is a harmonious partner for a simple rice pilaf.

Blog Post: Quick Tip: Try Mixing Grains!

Because the two grains cooked at different speeds, quinoa melted into the longer-cooking rice and gave a creaminess to the whole dish ... I'll start by using the average amount of liquid required between all the grains and then approximating cooking time based on the grain that will take the longest to cook. This will definitely be a "taste and adjust as needed" kind of experiment!

Have you ever cooked mixed grains? Which combinations do you recommend?

This is the creamed spinach you’ll find in steakhouses. It’s just so darn good I can’t see straight.

Article & Video: How to cook asparagus

Whichever way you choose to cook asparagus - boiled, griddled (a combination of the two), steamed or oven roasted – don’t overdo it. Cook for just a few minutes, or 12-25 minutes if oven roasting at 180C/gas6.

The best spears are those that have only been a couple of hours out of the ground. They have an unbeatable, intense grassy flavour. look for vibrant green stems with a slight lustre. The tips should be intact and the stems smooth. Wrinkled and bendy stems are a sign of ageing.

When you break and trim asparagus, don't throw away the trimmings and ends - they make a great stock for soups and risottos.

Macaroni cheese. Trout.

Recipe: Macaroni cheese with asparagus.

Article/Recipe: Benefit of the Trout.
Includes recipes for salad of trout, and trout with almonds and cherry tomatoes.

When I came to prepare the fish they were still stiff (a sign of a truly fresh fish). A classic dish of pan-fried trout with a squeeze of lemon and some buttery browned almonds seemed ideal. My copper pan outperformed the usual non-stick pans; it was faster and the fish was crisper.
