I say it is one of the easiest things in the world, far easier than boiling an egg accurately ...

True ricotta – which means twice-cooked in Italian – is made from the rich whey left over from cheese-making (the ricotta-making process in turn creates more curds – the ricotta – and more whey, which is now exceedingly watery). Those of us without access to large volumes of rich whey can make a good approximation from whole milk cooked together with some kind of souring agent – vinegar, yogurt, buttermilk or lemon.
