Release it from its Japanese straitjacket and a world of unusual and delicious combinations await. As might be obvious, it works with a variety of fish, particularly the oily kind, whether fresh or smoked ... Or make an instant pickled salad by putting it with tiny cauliflower florets and diced cucumber, dressing it with its pickling juices and a little soy - perfect with grilled mackerel.

It's excellent with pork, whether as a pickle to eat alongside roasted belly or to add to the gravy ...

Did you know that we [online magazine Apartment Therapy] have just launched our fifth Small Cool contest? We're looking for the smallest, coolest, homes we can find. This is an inspiring contest, and we love the chance to peek into people's spaces. What we're most interested in, of course, here at The Kitchn, are people's little kitchens.
