Most Scotch egg recipes call for breakfast-sausage meat. I wanted a punchier flavor, so I picked up some spicy Italian sausages and added more bite with garlic and horseradish. Before patting the sausage meat onto the eggs, I coated them with a little flour. This helps the sausage adhere to the slippery egg white while cooking.
