Stir Fried Glass Noodles. How to Salt. Vegetable Risotto.

Grew up in the combination of cultures, I've adopted many Chinese dishes into my own taste. I added some chilies to this one so that it tasted a bit spicy.

Cook's tips:

* You can substitute leeks for the celery.
* For single serves, spoon the mixture into large ramekins before topping with cheese.
* Sliced mushrooms can be used in the topping before adding the cheese.
* I keep dried mushrooms on hand; they can be quickly reconstituted and are an excellent standby.
