When buying sesame seeds, choose small packets and store in an airtight container. If not refrigerated, use the seeds within three months. Refrigerated, they last for six months and twice as long if kept in the freezer.

Fougasse is one of those breads that balances simplicity and sophistication. I especially like it because it’s so pretty in a bread basket, but the form isn’t for nothing. Its pretzelly spread out form means that it bakes in 15 minutes flat.
