Basic Granola / Baked Farro Pasta / Broiled Mussels

Blog Post & Recipe: Basic Granola Formula

... when it comes to oven-baked granola, I find that what one needs isn't really a recipe, but rather a formula.

Blog Post & Recipe: Baked Farro Pasta Recipe

It's a cold weather crowd-pleaser made of alternating layers of broken farro pasta, sliced potatoes, two cheeses, and mustardy shredded cabbage. The sort of thing you can prep a day or two ahead of time, then bake when convenient.

Blog Post & Recipe: broiled mussels

And so when they suggested that I steam mussels open in wine, slather them with butter compounded with parsley, garlic, smoked paprika and salt and broil them until the butter is bubbly and serve at a party, I immediately wanted to do just that.

Article & Recipe: Kabocha squash - a sweet epiphany

I've been a kabocha fan ever since - it lends itself to quick roasting, steaming, braising and pan-frying. Prepping it couldn't be easier because, unlike other winter squashes, you don't have to peel it. It has a very tasty deep green skin with celadon stripes that's better left on.

Oils for Frying / Heat for Meat / Skillet Carrots with Onions & Thyme

Article: Is It Time for an Oil Change in the Kitchen?

What's the best oil for everyday frying?

Article: The Kitchen Thinker: The science of meat stew

'Two hours at 200°C' just does not work for most cuts. Similarly, being told to 'simmer' a casserole on the hob is unhelpful because you will end up boiling the meat. The truth is that most stews need to be cooked for far longer and at much lower temperatures than many books tell us.

Blog Post & Recipe: She got out a skillet

Skillet Carrots with Onions and Thyme

You warm a nice amount of oil in a large skillet, and then you soften sliced onions in it. Then you add sliced garlic, and a few minutes later, you add a lot of sliced carrots and some sprigs of fresh thyme and maybe a little more oil, and then you cover the pan with a lid ...

Sausage Rolls / Chicken with Pearl Barley Risotto / Creamed Onion with Bacon & Chives

Blog Post & Recipe: How to make perfect sausage rolls

Are sausage rolls the best party food ever, and what's the best meat to make them with; does anything rival the classic pork and herb?

Blog Post & recipe: Chicken with Pearl Barley Risotto

Using Italian farro risottos as an inspiration, in this dish the barley is not just an afterthought or bulking ingredient but the star in a savory vegetable porridge. I used chicken thighs but chunks of shoulder of lamb or beef work well.

Blog Post & Recipe: creamed onions with bacon and chives

Sure, it may sound like creamed onions = cream + onions but this is more. It’s smoky salty drippings and nutmeg and thickened cream and sherry and chives and bits of browned bacon and is worth every one of the minutes I spent peeling those onions.

For most of the job, Davis used a common boning knife, but she used a mallet and cleaver to cut the breast halves apart. A chef’s knife or even the boning knife could have done the job, she said, as long as you don’t try to cut down the very center of the breast bone, the strongest part.
